A wonderful and very French summer tart, even though all of that French mustard sounds suspicious, it changes taste when it is cooked. It serves a lot of people as a snack, or as a first course

1 pie crust
4 ounces French mustard
4 ounces swiss cheese, grated
6 sliced tomatoes
1 teaspoon herbes de provence
1 teaspoon basil
1/2 teaspoon oregano
2 teaspoons olive oil

Steps:

  • Preheat oven to 375°.
  • Grease tart pan or pie pan and put in crust.
  • Spread bottom of crust with mustard, sprinkle with half the cheese, cover with tomato slices.
  • Sprinkle on the rest of the cheese.
  • Sprinkle with herbs and drizzle on olive oil.
  • Bake at 375° for about 30 minutes.
  • Serve warm or at room temperature.

1/3 cup creamy dijon-style mustard
1/2 teaspoon dry mustard
1/2 cup peeled seeded and chopped tomato

Steps:

  • In small bowl stir together Dijon-style mustard blend and dry mustard until well combined.
  • Gently stir in tomatoes.
  • Cover and refrigerate up to 24 hours.
  • Note: To peel tomatoes easily: using kitchen tongs or a fork, gently lower tomato into boiling water for 30 seconds or until skins split.
  • Dip in cold water or rinse under a running faucet.
  • Remove skin.

Uncooked Tomato-Mustard Sauce image

A simple sauce that is often served with bollito misto, the mixed boiled meat dish of central Italy, this is a great homemade replacement for ketchup. Nice with grilled meats.

Yield makes about 1/2 cup

Number Of Ingredients 7

1 medium onion, minced
1 tablespoon minced garlic
1 tablespoon white or wine vinegar
Salt to taste
1 teaspoon sugar
3 tablespoons tomato paste
1 tablespoon Dijon or other strong mustard

Steps:

  • Combine the first 5 ingredients in a bowl and let sit for an hour.
  • Add the tomato paste and mustard, then taste and add more salt, pepper, and vinegar if necessary. Serve immediately or cover and refrigerate; this will keep its flavor for several days.

Lyon, France is considered the gastronomic capitol of the world. I moved there with the intent to learn this cuisine, and this tart is not only a family favorite but a very typical Lyonnaise dish. There are a lot of tomatoes in the summer time, so this dish became a staple. Enjoy! Great as a next day treat, and wonderful for picnic lunches.

1 recipe unsweetened pastry for a 9-inch single crust pie
½ cup grainy brown mustard
3 large ripe tomatoes, thinly sliced
6 slices Swiss cheese, about 1/4-inch thick
1 tablespoon olive oil, or as needed
2 tablespoons herbes de Provence

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Fit the pie crust into a 9-inch pie dish. With a fork, poke holes into the bottom of the crust.
  • Spread the mustard over the bottom of the pie crust in an even layer. Cover the mustard with the Swiss cheese in a layer. Arrange slices of tomato, overlapping in a spiral from the edge to the center, covering up the cheese. Drizzle olive oil over the tomatoes, and sprinkle the tart with the herbes de Provence.
  • Bake in the preheated oven until the crust has browned, the cheese has melted, and the tomatoes are curled at the edges, about 20 minutes.

Steps:

  • Cover mustard seeds with warm water and refrigerate over night.
  • Drain and rinse seeds. Place mustard seeds, tomatoes, vinegar, dry mustard, oil, salt and sugar in food processor.
  • Process until almost smooth and thickened. Store in a tightly sealed container in the refrigerator for up to a month or freeze.
