6 buttermilk biscuits (from KFC or a box mix)
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
2 eggs
3/4 cup milk
icing
1 tablespoon butter
1 tablespoon milk
powdered sugar

Steps:

  • Break the biscuits down into crumbs, you can leave a few chunks in there, but nothing bigger than about the size of a quarter.
  • Add the brown sugar and cinnamon and mix.
  • Combine the eggs, vanilla and milk in another bowl. Add to dry ingredients and stir until completely mixed. This will make a thick batter, but if don't want your bread pudding to be as dense as the stuff at KFC, add a little more milk.
  • Press the batter into a greased 8x8 pan and bake at 350°F for 15-18 minutes.
  • Let cool slightly.
  • For icing, heat the butter and milk together until the butter is melted. Add enough powdered sugar until you have a thin consistency to drizzle over the bread pudding.

This is a recipe for a Thanksgiving side dish that I got from the Food Network in a show that featured Giada DeLaurentis preparing her family's traditional Thanksgiving dishes. Although she often uses a different bread each year (for flavor variety), this is her family's favorite version, using challah bread. If you can't find challah bread, Giada recommends using a loaf of brioche or sourdough bread.

1 lb brioche bread or 1 lb sourdough bread
2 tablespoons butter
1 lb butternut squash, peeled & cut into 3/4-inch pieces
4 parsnips, peeled & cut into 3/4-inch pieces
3 teaspoons kosher salt, divided
2 teaspoons pepper, divided
2 tablespoons olive oil
3 tablespoons brown sugar
2 tablespoons ground cinnamon
1 tablespoon fresh thyme leave, chopped
3 cups heavy cream
8 eggs
3/4 cup brandy

Steps:

  • Preheat oven to 400°F, Lightly butter a 9x13-inch glass baking dish; set aside.
  • Tear or cut bread into 1-inch pieces. Place bread pieces in a large mixing bowl; set aside.
  • In a large skillet, melt the butter over medium-high heat. Add the butternut squash and parsnips. Add 1 teaspoon salt and 1 teaspoon pepper. Cook, stirring occasionally, for 5 minutes or until slightly softened. Set aside to cool.
  • Drizzle the olive oil over the bread pieces, and toss gently. Add the brown sugar, cinnamon, 2 teaspoons salt, 1 teaspoon pepper, and chopped thyme leaves. Toss the ingredients together until the bread pieces are well coated.
  • In another bowl whisk together the heavy cream, eggs, and brandy. Pour the cream mixture over the bread mixture. Add the cooled vegetables, and toss gently until the bread is well coated with the custard mixture (but the bread still reamins in chunks).
  • Spoon the mixture into the buttered baking pan. Bake for 40 to 45 minutes, or until the bread pudding is puffed and golden.

Stale baguettes and country breads give me a welcome excuse to make savory Italian bread puddings, called stratas. You can add different vegetables in season, such as sautéed mushrooms or greens to the mix.

1/2 pound stale bread, sliced about 1/2 inch thick (see note below)
1 large garlic clove, cut in half, green shoots removed
2 ounces Gruyère cheese, grated (1/2 cup)
1 ounce Parmesan cheese, grated (1/4 cup)
1 pound firm, ripe tomatoes, sliced
Salt and freshly ground pepper
2 teaspoons fresh thyme leaves
2 teaspoons chopped fresh rosemary
4 large eggs
1/2 teaspoon salt
2 cups low-fat milk

Steps:

  • Preheat the oven to 350ºF. Oil or butter a 2-quart baking dish or gratin. If the bread is soft, toast it lightly and rub all the slices, front and back, with the cut clove of garlic. If it's stale, just rub with garlic Mince what garlic remains. Combine the two cheeses in a small bowl.
  • Layer half of the bread slices in the baking dish. Top with half the tomato slices. Sprinkle the tomato slices with salt, pepper, and half the thyme, rosemary, and remaining garlic. Top with half the cheese. Repeat the layers.
  • Beat together the eggs and milk. Add 1/2 teaspoon salt and a few twists of the pepper mill, and pour over the bread and tomato layers. Place in the oven and bake 40 to 50 minutes, until puffed and browned. Remove from the oven and serve hot or warm.

If you have an over abundance of fresh garden tomatoes, you may want to give this wonderful recipe from Gourmet Magazine a try! Best the day it is made, however you can prepare this recipe one day ahead if you like (covered after cooling and refrigerate). See cook's note at bottom of directions.

3 lbs plum tomatoes, such as roma halved lengthwise
1 1/2 teaspoons herbes de provence
1/2 cup extra virgin olive oil, divided
1 head garlic, left whole
10 cups cubed country-style Italian bread (1-inch, 1 pound)
2 cups whole milk
1 cup heavy cream
8 large eggs
2 cups coarsely grated chilled italian fontina (9 ounces)
1/2 cup grated parmigiano-reggiano cheese

Steps:

  • Preheat oven to 400°F with rack in middle of oven.
  • Butter a baking dish - 13 x 9".
  • Toss tomatoes in a bowl with herbes de Provence, 1 tablespoon oil, 3/4 teaspoon salt, and 1/2 teaspoon pepper.
  • Arrange tomatoes, cut sides up, in a large heavy 4-sided sheet pan.
  • Cut off and discard 1/4 inch from top of garlic head to expose cloves, then put on a sheet of foil and drizzle with 1 teaspoon oil.
  • Wrap garlic in foil and roast in pan with tomatoes until tomatoes are browned but still juicy and garlic is soft, 50 to 60 minutes (Leave oven on.).
  • Cool garlic to warm, then force through a medium-mesh sieve with a rubber spatula, discarding skins.
  • Reserve purée.
  • While garlic cooks, toss bread cubes in a large bowl with remaining oil until coated, then spread out in a large 4-sided sheet pan and bake until golden brown, 20 to 25 minutes.
  • Cool in pan.
  • Reduce oven temperature to 350°F.
  • Whisk together milk, cream, eggs, garlic purée, 2 teaspoons salt, and 1 1/2 teaspoon pepper.
  • Stir in cheeses.
  • Transfer bread to baking dish, then pour egg mixture over bread and add tomatoes, pushing some down between bread cubes.
  • Bake until firm to the touch and golden brown in spots, 50 to 60 minutes.
  • Cooks' note: Bread pudding is best the day it is made but can be made 1 day ahead and chilled (covered once cool). Reheat, covered with foil, in a 350°F oven.

1 teaspoon Worcestershire sauce
a pinch cayenne
2 tablespoons unsalted butter, melted
4 slices (each about 3/8 inch thick) homemade-style white bread, crusts discarded, cut into 3/4-inch squares

Steps:

  • Preheat oven to 400°F.
  • In a small saucepan simmer tomatoes, brown sugar, Worcestershire sauce, and cayenne, stirring, 5 minutes.
  • In a bowl drizzle butter over bread squares and toss to coat. Divide bread squares between two 1-cup soufflé dishes or custard cups and top each serving with half of tomato mixture.
  • Bake tomato puddings in middle of oven 20 minutes.

1 tablespoon corn oil or 1 tablespoon vegetable oil
8 cups thinly sliced onions
1/4 cup dry vermouth
1 garlic clove, split
6 ounces stale crusty French bread, cut into chunks
2 cups grated gruyere or 2 cups swiss cheese
3 eggs
2 cups half-and-half
salt & freshly ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Melt 4 tablespoons butter with the corn or vegetable oil in a heavy pot.
  • Toss in the onions, cover and steam over low heat for 15 minutes.
  • Uncover the pot raise the heat to medium, and cook, stirring occasionally, until the onions re deeply browned and caramelized.
  • Pour in the vermouth and boil until the liquid cooks away, scraping the bottom of the pot with a wooden spoon all the while.
  • Choose a shallow round 1 1/2-quart casserole dish Rub it thoroughly with the cut sides of the garlic clove.
  • Discard the garlic.
  • Toss the bread and onions together.
  • Spread them in the casserole dish.
  • Melt the remaining butter and pour over the bread.
  • Sprinkle on the cheese.
  • Beat the eggs slightly and beat in the half and half and salt and pepper.
  • Pour the mixture evenly over the bread and cheese.
  • Press the bread into the liquid with a spatula.
  • (The dish may be covered and refrigerated overnight. Bring to room temperature before baking)
  • Bake for 30 to 40 minutes until puffed and golden.
  • Serve at once.

3 cups bread, cubed
4 large eggs
1 egg yolk
1 cup heavy cream
1/2 cup whole milk
6 ounces chevre cheese, finely crumbled
3 ounces prosciutto, diced
1 teaspoon fresh thyme
2 shallots, minced
4 cremini mushrooms, sliced
1/4 cup pine nuts, toasted
fresh ground black pepper
1/4 cup parmesan cheese, freshly grated (or gruyere)

Steps:

  • Toast bread cubes in 350 degree oven for 10 minutes or so, stirring halfway through. Leave oven on at 350.
  • In a bowl, mix together eggs, yolk, milk, and cream until thoroughly blended.
  • In another bowl, toss together bread cubes, prosciutto, shallot, mushrooms, pine nuts, thyme, and pepper.
  • Spray or lightly butter a 9x9 square baking pan and pour in the bread mixture, pat to distribute evenly. Crumble the chevre over all and mix in slightly with hands.
  • Pour egg mixture over bread cubes. Sprinkle with shredded cheese such as parmesan or gruyere, for a golden crust.
  • Bake in a 350 degree oven for 30-40 minutes, or it springs back when you poke it in the middle. Alternately, when a thermometer inserted into center reads above 145 degrees it is done.
