TOMATO BISQUE WITH GARLIC CROUTONS
What a creamy delicious soup. The garlic-herb cheese called for is a Boursin cheese, but I guess you could use a cream cheese for it. I doubt it would taste the same. I always use the fresh herbs for the bread, but you could use dried. Be sure to half the herbs if using dried instead of fresh.

- For the Tomato Bisque: In a large soup pot melt bacon fat, add onions and celery. Cook onions and celery until translucent, do not brown. Add tomatoes, basil and cook for 2 minutes. Add tomato juice, V-8 juice, tomato paste, chicken stock and simmer 15 minutes. Add heavy cream and bring back to a boil. Turn off heat and add the tub of cheese. Add salt and pepper to taste.
- For the Garlic Croutons: In a large bowl, mix all ingredients together. Place the ingredients on a baking sheet and bake at 325°F until a golden brown, approximately 15 minutes.
- Final Presentation: Place soup in bowl, add croutons in soup and garnish with chives.

- In a medium saucepan, melt 2 tablespoons of the butter. Add the chopped onion, carrot, celery and garlic, cover and cook over moderately high heat, stirring occasionally, until the vegetables are just beginning to brown, about 5 minutes. Sprinkle the flour over the vegetables and stir over low heat for 1 minute, or until the flour is fully incorporated. Add the chicken stock, tomatoes, tomato paste and sugar and bring to a boil. Cover partially and cook the soup over moderate heat, stirring occasionally, until the vegetables are tender, 15 minutes.
- Transfer half of the soup to a blender and puree until smooth. Return the puree to the saucepan, add the heavy cream and cook until the soup is just heated through. Season the soup with salt and white pepper and swirl in the remaining 2 tablespoons of butter. Ladle the soup into bowls, garnish with croutons and serve.

- In a dutch oven over medium high heat. Add the vegetable oil. Once the oil sizzles, add the onions and celery.
- Sauté the onions and celery together until softened. Then toss is in the garlic. Cook until the garlic is fragrant. Add flour and combine it with the sauteed vegetables. Cook for a minute. Add the Marzano tomatoes and chicken broth.
- Use an immersion blender to smooth the soup. If you don't have an immersion blender you can pour everything in the pot into a blender. Let the soup come to a boil then cover and simmer for 15 minutes.
- Add the butter and and heavy whipping cream. Taste. Add seasonings, adjusting for taste if needed.
