CAJUN CHICKEN & PASTA

Steps:
- Toss chicken with Cajun seasoning; let stand 15 minutes. Cook pasta according to package directions; drain., In a large skillet, heat 1 tablespoon butter over medium-high heat; saute chicken until no longer pink, 5-6 minutes. Remove from pan., In same pan, heat remaining butter over medium-high heat; saute peppers, mushrooms and green onions until peppers are crisp-tender, 6-8 minutes. Stir in cream and seasonings; bring to a boil. Cook and stir until slightly thickened, 4-6 minutes. Stir in pasta and chicken; heat through. Top with tomatoes and basil. Sprinkle with cheese.

CREAMY TOMATO CAJUN CHICKEN PASTA
Cajun chicken and farfalle pasta tossed in deliciously creamy tomato sauce sprinkled with fresh chopped parsley and green onions.

Steps:
- In a small bowl, mix spices to make the cajun seasoning.
- In another bowl, add cubed chicken and toss to fully coat in 1 tbsp cajun seasoning.
- Cook your short cut pasta according to package instructions for al dente. Drain and set aside for later.
- Add butter and oil to a large skillet over medium-high heat. Add chicken to the hot skillet and cook until golden brown, turning chicken over halfway through.
- Drizzle honey over chicken and toss to combine. Chicken will be 165 degrees when fully cooked. Remove chicken from skillet and transfer to a plate, leaving any juices in the skillet.
- In the same skillet, add chopped onion. Cook, stirring occasionally, until onions are soft. Add minced garlic and diced tomatoes and sprinkle in 1 1/2 teaspoons of cajun seasoning.
- Bring to a low simmer, while stirring frequently, slowly pour in heavy cream until fully incorporated into the sauce. Break up tomatoes using your cooking spoon.
- Add chicken back to the skillet along with the cooked pasta. Sprinkle in parmesan cheese and stir to combine.
- Sprinkle with chopped green onion and chopped parsley (optional). Enjoy!
MAKE THIS 20-MINUTE TOMATO, BASIL, AND CHICKEN PASTA TONIGHT
Think of this as a lighter, fresher take on chicken Parmesan: We ditch the breading on the poultry and let juicy cherry tomatoes stand in for jarred pasta sauce. A little grated carrot adds just enough sweetness to round out the acidity in the tomatoes. Mini balls of fresh mozzarella, also called ciliegine, melt just enough in the finished pasta so that the dish feels extra cheesy. This would also be delicious with cooked, crumbled Italian turkey sausage or with simply sauteed shrimp.

- Cook pasta according to package directions, omitting salt and fat; drain.
- Heat oil in a large skillet over medium-high. Sprinkle chicken with 1/4 teaspoon salt and pepper and add to pan; cook 2 to 3 minutes on each side. Remove chicken from pan; keep warm.
- Add remaining 1/4 teaspoon salt, tomatoes, wine, 1/4 cup basil, and carrot to drippings in pan; bring to a boil. Cook 3 minutes or until tomatoes begin to break down, stirring frequently. Reduce heat, and simmer 5 minutes or until slightly thickened. Remove pan from heat; stir in mozzarella and 1/4 cup Parmesan.
- Divide pasta among 4 bowls. Top evenly with chicken, sauce, and remaining 1/4 cup basil and 1/4 cup Parmesan.

PESTO PASTA WITH CHICKEN AND TOMATOES
Pesto is easy to make from scratch with just a handful of ingredients. Its fresh flavor is the highlight of this super-fast pasta dish, packed with cherry tomatoes and chicken.

- In blender or food processor, place Pesto ingredients.
- Cover and process on medium speed about 3 minutes, stopping occasionally to scrape down sides with rubber spatula, until smooth. Set aside.
- In 4-quart saucepan, heat penne and broth just to boiling over high heat. Reduce heat to medium; cover and cook 8 to 10 minutes, stirring frequently, until al dente and liquid is almost absorbed. Remove from heat. Add pesto; stir in chicken and tomatoes; cook over medium 2 to 3 minutes or until thoroughly heated.
- Garnish with basil and 3 tablespoons Parmesan cheese.

TOMATO BASIL CAJUN CHICKEN PASTA
Just something I threw together with what I had in the house. After taking a quick look at the recipes I usually make, I decided to try something new. Husband approved and so did the teenager, so I figure it must be a keeper! This makes a colorful and quick meal.

- Cook your penne pasta, strain, and set aside.
- cut raw chicken breasts into bite sized strips.
- In a skillet, melt the butter on low heat and add minced onions and garlic, stir until well saturated.
- Add chicken strips to the skillet, along with your cajun seasoning, mix until even. Cover and allow to simmer on medium/low heat.
- when chicken is about halfway cooked, add the basil. I like to cut mine up into strips with cooking sheers, as some of those leaves can be big! Stir, cover, and simmer on medium/low until chicken is nearly done.
- Slowly add the cream, stirring in well. if you like a little extra sauce for your pasta, add a little extra cream.
- Add your freshly diced tomato to the mix and stir. Cover and allow chicken to finish cooking.
- Serve hot over pasta, top with parmesan.

- Cook pasta and drain well. Season chicken pieces with 4 teaspoons of the Creole Seasoning. Melt butter in a saute pan. Add tasso and saute until tender and lightly browned. Add chicken and green onions and saute until chicken is white. Add heavy cream and remaining Creole seasonings. Return to a simmer. Add drained pasta to sauce and bring back to a simmer.
