Best-Ever Grilled Ribs image

Grilled BBQ ribs might sound intimidating, but they're actually so easy to make. There's no pre-cooking required and they come out smoky and flavorful every time.

1/4 c. light brown sugar
2 tbsp. smoked paprika
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
1 1/2 tsp. kosher salt
1 tsp. ground black pepper
1/2 tsp. ground cayenne pepper (optional)
2 racks baby back ribs (about 5 to 6 pounds total)
3 tbsp. vegetable oil, plus more for oiling the grates
1/2 c. chicken stock
1/4 c. apple cider vinegar
1 1/2 c. BBQ sauce

Steps:

  • Preheat a grill (charcoal or gas) to 300˚, with the coals or flames only under one half of the grill.
  • For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine.
  • Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.
  • Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180˚ to 190˚, about 80 to 90 minutes.
  • Increase the grill temperature to 375˚ and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.
  • Transfer the ribs to a cutting board, cut into pieces and serve.

2 tablespoons apple cider vinegar
1 cup barbecue sauce

Steps:

  • Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
  • Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
  • Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

1 cup extra-virgin or virgin olive oil
10 large cloves fresh garlic, room temperature, peeled, chopped, and sliced
1/4 cup yellow onion, peeled, very finely minced
1/3 cup fresh squeezed orange juice, preferable bitter orange
1 cup fresh squeezed lime juice
2/3 cup water
1/4 cup finely chopped fresh parsley leaves
1/2 teaspoon dried oregano
3/4 teaspoon garlic powder
2 teaspoons ground cumin
3 country-style ribs, boneless
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • In skillet over medium-high heat, add about 2 tablespoons olive oil. Once heated, add the garlic and onion, cook until pale golden brown; 2 to 3 minutes only, stirring constantly.
  • Stir in the citrus juices, 2/3 cup water, 2 tablespoons of olive oil and all dry ingredients. Bring sauce mixture to a rolling boil. Remove from heat and let cool to room temperature.
  • Preheat oven to 325 degrees F.
  • Season the ribs with salt and pepper. Add enough oil to a hot large skillet to just cover. Add ribs and sear, about 3 minutes each side. Remove to a large shallow roasting pan.
  • Add Mojo sauce over the country style ribs and turn to cover. Seal tightly with foil and roast for 3 hours. Marinate each hour with Mojo sauce. Take foil off for the last 30 minutes of cooking, or until tender.

3 large oranges, divided
4 lb. pork spareribs, cut into 4 slabs
1 onion, cut into wedges
1 cup chopped fresh cilantro
1/2 cup KRAFT Zesty Italian Dressing
6 cloves garlic, chopped
1 tsp. black pepper
1 cup KRAFT Barbecue Sauce, any flavor, divided

Steps:

  • Quarter 2 oranges; place in large resealable plastic bag. Squeeze oranges to release juice; add ribs, onions, cilantro, dressing, garlic and pepper. Seal bag; turn to evenly coat ribs with marinade. Refrigerate at least 4 hours to marinate.
  • Place half the rib mixture in single layer in center of large sheet heavy-duty foil. Fold to make packet. Repeat with remaining rib mixture.
  • Heat grill to medium-low heat. Grill packets on covered grill 1 hour or until ribs are done. Remove ribs from packets; discard marinade. Grill ribs 15 min., turning and brushing occasionally with 1/2 cup barbecue sauce. Squeeze remaining orange over ribs; serve with remaining barbecue sauce.

Pork Ribs and Roast with Mojo image

1 generous tablespoon cumin seeds, plus 1/2 teaspoon for Mojo
8 cloves garlic, chopped
1/2 cup freshly squeezed lime juice (about 4 limes)
1/4 cup extra-virgin olive oil
2 tablespoons kosher salt
1 generous tablespoon dried oregano, crumbled
1 tablespoon freshly ground black pepper
One 6-chop pork rib roast, chine bone attached and notched at each rib (about 5 pounds)
Mojo, recipe follows
1/2 teaspoon reserved toasted and ground cumin
6 cloves garlic, minced
1/2 cup olive oil
1 cup fresh lime juice
2 teaspoons chopped fresh oregano or 1 teaspoon dried oregano, crumbled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 habanero chiles, seeded and minced

Steps:

  • Toast both the 1 tablespoon and the 1/2 teaspoon cumin seeds (see Mojo) in a small saute pan over high heat until fragrant, about 30 seconds. Grind the seeds in a spice grinder or with a mortar and pestle and reserve 1/2 teaspoon for the Mojo. Mix remaining cumin with garlic, lime juice, olive oil, salt, oregano, and black pepper. Remove the pork loin from the ribs and chine bone by cutting between the meat and the bones. Rub the marinade all over loin and ribs. Place the loin back onto the ribs where it was removed and tie together with butcher's twine. Place in a nonreactive container, cover, and refrigerate for 4 hours or overnight.
  • Meanwhile, make the Mojo and reserve 3/4 cup to serve with the pork.
  • Prepare an outdoor grill with a medium-high fire for indirect grilling. Position a drip pan under grate on the cooler side of the grill. Set the roast rib side down over the pan on the side opposite from the heat. Cover, with the vent holes over the pork and cook, basting the meat periodically with the sauce. Rotate the roast 180 degrees after 30 minutes so it cooks evenly. (Add coals to the fire as needed to maintain an even heat.) After an hour, begin to baste with Mojo every 15 minutes and set the roast on its chine (back) bone, with the fat facing the heat, so it browns evenly. Cook until a meat thermometer inserted into the center of the loin registers 140 degrees F, about 1 1/2 hours in all.
  • Remove the roast from grill, cut the twine, and let the loin rest for 10 minutes. Meanwhile, place the ribs on the grill over direct heat with the side where the loin was attached facing down. Grill, turning as needed, until evenly browned, about 4 minutes. Let rest 5 minutes and cut between the ribs. Serve ribs with sliced loin and reserved Mojo.
  • Heat the reserved cumin in a skillet along with the garlic and olive oil. Cook over medium-high heat until garlic begins to sizzle, about 2 minutes. Remove from heat, transfer to a nonreactive bowl, and stir in remaining ingredients.

FALL-OFF-THE-BONE STICKY BARBECUE RIBS

4 racks of baby back pork ribs or other whole racks (about 450g each)
5 tbsp cider vinegar
2 tbsp smoked paprika
4 tbsp light brown soft sugar
1 tbsp garlic granules
1 tbsp onion granules
1 tbsp Chinese five-spice powder
300g tomato ketchup
2 tbsp honey
1 tbsp soy sauce
1 tbsp Dijon mustard
300ml apple juice

Steps:

  • If there's a thin membrane on the back of the ribs, peel this off as best you can. The length of the ribs will be determined by the size of your roasting tin and barbecue - leave them whole or cut in half or thirds. Tip the ribs into a large, deep roasting tin. Whisk the rest of the ingredients together in a bowl until completely combined, then pour this over the ribs. Toss the ribs in the sauce using your hands to ensure they're completely coated. Cover the tin with foil, shiny-side down. To cook straightaway, simply leave to marinate while the oven heats up, or chill the ribs overnight.
  • Heat the oven to 160C/140C fan/gas 3 and bake the ribs for 2 hrs 30 mins-3 hrs, turning once or twice until the bones are exposed and the meat is pull-apart tender. When the ribs are cooked, leave to cool a little, then lift onto a tray using tongs. Pour the sauce from the tin into a saucepan and bring to the boil. Reduce the heat and simmer for 25-30 mins, stirring occasionally until thickened. Leave to cool. The sauce and ribs can be prepared up to two days ahead and chilled.
  • Light the barbecue and wait until the coals are ashen, or set a gas barbecue to medium. Put as many ribs on the grill as you can fit, then brush generously with the sauce. Working quickly, grill the ribs, basting with more sauce and turning every minute or so until the ribs are well-coated, charred at the edges, caramelised and sticky. Repeat with any remaining ribs and sauce if they didn't all fit on the grill at once. Serve piled high on a platter with the reserved sauce on the side for slathering on top. Any leftover sauce will keep chilled in the fridge for up to a week.

1 cup water, or more as needed
½ cup barbeque sauce, or to taste

Steps:

  • Preheat grill for low heat.
  • Cut ribs in half and season with steak seasoning. Place ribs, bone-side down, in a foil pan; add water. Cover pan with a sheet of aluminum foil.
  • Cook ribs on the preheated grill, adding water every hour if liquid has evaporated, 1 1/2 to 2 1/2 hours. Add barbeque sauce to ribs and continue cooking for 30 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
