This is a delicious side dish to add to about anything.

1 (8 ounce) package macaroni
1 tablespoon butter
1 teaspoon bacon grease
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can chopped stewed tomatoes, with juice
½ teaspoon white sugar
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Pour the macaroni into a saucepan and place over medium heat; stir in the butter, bacon grease, tomato sauce, stewed tomatoes with juice, and sugar; season with salt and pepper. Stir while cooking until butter and bacon grease has melted and incorporated completely, 5 to 10 minutes; remove from heat, cover, and allow to sit about 20 minutes before serving.

My family loves this salad! --- remember to use both mayo and salad dressing combined, the two dressings combined seem to spark up the taste, plan ahead this needs to be refrigerated overnight to blend the flavors.

1 lb elbow macaroni, cooked to eldente, drained and rinsed well
1 large cucumber, peeled and diced
1 large tomatoes, chopped with liquid included
1 small onion, chopped (more to suit taste)
1 large green bell pepper, seeded and chopped
2 -3 hard-boiled eggs, peeled cooled, and chopped (optional)
3/4 cup mayonnaise (Hellman's is best)
1/2 cup Miracle Whip
2 tablespoons prepared yellow mustard
2 teaspoons celery salt, to taste
2 teaspoons seasoning salt, to taste
black pepper

Steps:

  • In a large bowl, combine ALL ingredients; toss to coat (adding more mayo and/or salad dressing to taste).
  • Cover; refrigerate overnight to blend flavors.
  • Stir before serving.
  • Note: If you don't want to include the cooked hard-boiled eggs in the salad, I sometimes cook up 6-7 (or how many you desire), and just cut them into four pieces, and just lay them on top evenly around a large bowl with the pasta salad, so people have the option of having them or not-- and it makes for a nice presentaion-- if you are adding them into the salad, then 2-3 chopped should be enough.

1 (28 ounce) can plum tomatoes, drained
1 teaspoon sugar
2 cloves garlic, minced
1/3 cup light mayonnaise
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 cup buttermilk (or 2% milk)
1 lb fusilli, or other stout pasta
1 large tomatoes, diced
3 teaspoons fresh basil, chopped (or other herb of your choice)

Steps:

  • Completely puree tomato in a food processor.
  • Add sugar, garlic, mayo, salt, pepper& buttermilk.
  • Process until smooth.
  • Boil pasta until al dente.
  • Drain and rinse under cold water.
  • Combine pasta with dressing in large bowl.
  • Top with diced tomato and basil.
  • Let sit in fridge for 30 minutes at least.

2 cups uncooked elbow macaroni
1 large tomato, finely chopped
2 celery ribs, finely chopped
5 green onions, finely chopped
1-1/4 cups mayonnaise
5 teaspoon white vinegar
1/4 teaspoon salt
1/8 to 1/4 teaspoon pepper
1 pound bacon strips, cooked and crumbled

Steps:

  • Cook macaroni according to package directions; drain and rinse in cold water. Transfer to a large bowl; stir in tomato, celery and green onions., In a small bowl, whisk mayonnaise, vinegar, salt and pepper. Pour over macaroni mixture and toss to coat. Refrigerate, covered, at least 2 hours. Just before serving, stir in bacon.

Inspired by another macaroni salad and some nudging from my sister, this is what I came up with. :)* The cook time on this is boiling the macaroni and frying up the bacon, which I did simultaneously ;)

3 cups macaroni, cooked
8 slices bacon, fried and crumbled
1/4 cup onion, finely diced
1/4 cup celery, chopped
1/2 cup cucumber, finely chopped
1/2 cup tomatoes, chopped
1/3 cup mayonnaise
1 tablespoon balsamic vinegar

Steps:

  • Mix cooked macaroni, bacon, onion, celery, cucumber and tomato.
  • Toss with mayonnaise.
  • Add balsamic vinegar. Toss to coat.
  • You could mix the mayo and vinegar first, then put it on , it would ensure even distribution of the vinegar I guess! :).
