ASIAN TOFU NOODLE SOUP



Asian Tofu Noodle Soup image

Ginger, garlic and sherry jazz up this soup loaded with veggies and noodles. We like to accent ours with peanuts and green onions. -Diana Rios, Lytle, Texas

1 tablespoon canola oil
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes, optional
1/2 pound sliced fresh mushrooms
1 carton (32 ounces) reduced-sodium chicken broth
1/4 cup sherry or reduced-sodium chicken broth
1/4 cup reduced-sodium soy sauce
7 ounces firm tofu, drained and cut into 1/2-inch cubes
1 cup fresh snow peas, julienned
1 large carrot, shredded
2 green onions, thinly sliced
8 ounces uncooked Chinese egg noodles or uncooked spaghetti
Optional: Finely chopped peanuts and additional green onions

Steps:

  • In a large saucepan, heat oil over medium heat. Add ginger, garlic and, if desired, pepper flakes; cook and stir 1 minute or until fragrant., Add mushrooms, broth, sherry and soy sauce; bring to a boil. Cook, uncovered, 5 minutes. Add tofu, snow peas, carrot and green onions. Reduce heat; simmer, uncovered, 4-6 minutes longer or until vegetables are crisp-tender., Meanwhile, cook noodles according to package directions; drain and divide among 4 bowls. Pour soup over noodles. If desired, sprinkle with peanuts and green onions.

The star of this meal is the broth. An Instant Pot is a great way to quickly infuse aromatics into water or stock to create flavors that taste like they have simmering all day.

3 cups low-sodium chicken broth
3 scallions (1 cut into thirds)
1 2-inch piece fresh ginger, peeled and sliced
2 cloves garlic, crushed
2 tablespoons toasted sesame oil
1 tablespoon low-sodium soy sauce
1 8-ounce package pad thai-style brown rice noodles
2 carrots
6 ounces Canadian bacon
1 1-pound package silken tofu
3 cups baby spinach
Kosher salt

Steps:

  • Combine 3 cups hot water, the chicken broth, cut scallion, ginger, garlic, 1 tablespoon sesame oil and the soy sauce in an Instant Pot. Put on and lock the lid, making sure the steam valve is in the sealing position. Set the pot to pressure-cook on high for 10 minutes. When the time is up, carefully turn the steam valve to the venting position. When the steam is released, turn off the pot and remove the lid.
  • Meanwhile, put the noodles in a bowl and cover with hot water; stir occasionally until softened, about 15 minutes. Gently separate any clumps, then drain and rinse under cool water. Cut the carrots into thin matchsticks, chop the Canadian bacon and thinly slice the remaining 2 scallions. Drain the tofu and cut into 12 chunks.
  • Set the Instant Pot to sauté on high. Remove the garlic, ginger and scallion from the pot with a slotted spoon; finely chop and return to the pot. Add the noodles, carrots and Canadian bacon; cook, stirring, until the carrots are just tender, about 3 minutes. Turn off the pot. Stir in the spinach and thinly sliced scallions; season with salt.
  • Divide the soup among bowls and add 3 tofu chunks to each. Drizzle with the remaining 1 tablespoon sesame oil.

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. Open the tofu package, drain the excess liquid, and press the tofu while the oven reheats. (Either use a tofu press, or wrap the tofu in a clean towel and stack something heavy on top of it).
  • Press down on the tofu to "squish" it up into more irregular shape, then roughly chop it. (Optional; feel free to just cube it if you prefer). Place the tofu pieces on the baking sheet. Bake for 20 minutes, then agitate and flip the tofu pieces. Bake for another 15-25 minutes, or until the tofu pieces have firmed up significantly, with a slightly crisped crust on the outside. Remove from the oven and set aside.
  • (I start this step when the tofu has about 10 minutes left in the oven). In a large saucepan, heat the oils over medium heat. Add the onion, celery, and carrot, and continue to cook, stirring occasionally. If the vegetables start to brown, turn down the heat to medium-low. Continue until the onions and celery are translucent, 5 to 7 minutes.
  • Add the garlic, red pepper flakes, thyme, black pepper and white pepper and stir. Cook until fragrant, 60 to 90 seconds. Add the broth and bring the mixture to a boil. Reduce to a simmer and stir in the soy sauce, nutritional yeast, pasta, and baked tofu pieces. Continue to cook for about 15 minutes, stirring occasionally to prevent sticking, or until the pasta is tender.
