Quick Tofu Dill Dressing image

This is a variation of Quick Tofu Sour Cream by Neva & Jim Brackett's 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes.

Number Of Ingredients 11

1 (12 ounce) box morinu soft silken tofu (or 9 ounces regular tofu and 1/2 cup water)
1/2 cup raw cashew nuts
1 tablespoon lemon juice
1 teaspoon onion powder
2 tablespoons fresh chives, snipped (may use dried chives)
1/2-1 teaspoon dill weed
1 tablespoon sugar
italian seasoning, to taste
garlic powder, to taste
salt, to taste (about 2 tsp)
water, to achieve desired consistency

Steps:

  • Place all ingredients in blender, except the chives. Blend for at least 1 minute until silky smooth.
  • Add the chives and a little water until you've achieved desired consistency.
  • Serve (thickens more if chilled).

TOFU DILL SAUCE



Tofu Dill Sauce image

A nice replacement for tartar sauce. Can be used for a dip with fish, fresh vegetables or thinned with a little milk to make a salad dressing. This is the way I like it, you may have to adjust seasonings to suit your own taste. This tastes SO MUCH better if allowed to sit in the refrigerator overnight.

6 ounces tofu (I use Mori-Nu silken soft lite)
1/4 cup fat free sour cream
1/4 cup fat-free mayonnaise (I use Nasoya)
2 teaspoons dried dill
2 tablespoons lemon juice (fresh is best)
1/2 teaspoon garlic powder
1 tablespoon dried chives
1/2 teaspoon salt (to taste, I use sea salt)

Steps:

  • Put all ingredients into a blender or food processor and blend until smooth.
  • Refrigerate overnight for best flavor.

Great with fried seafood dishes! This is a light and refreshing sauce for pasta dishes as well. Add a little milk for a great salad dressing.

This one-dish meal has enough tofu in it to get the health benefits, but not enough that it overpowers the senses of those who try to avoid it. It also has pasta and fresh vegetables to satisfy everyone.

1 tablespoon olive oil
2 garlic cloves, minced
8 ounces soft tofu, patted dry and cut into coarse pieces
1/4 cup lemon juice
1 tablespoon Dijon mustard
2 tablespoons chopped fresh dill
3/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup corn oil
1 lb fusilli or 1 lb curly pasta
1/2 lb asparagus, cut into diagonal 1 inch pieces

Steps:

  • Heat oil in small skillet, add garlic and cook over medium low heat about 3 minutes or until fragrant. Blend garlic, tofu, lemon juice, mustard, dill, salt, and pepper in a food processor until smooth Add corn oil, and blend until emulsified.
  • Meanwhile, cook pasta until tender, adding asparagus in the last 3-4 minutes Drain and toss with sauce.

  • Then, cut the block of tofu into whatever shapes you want. I like to slice the tofu into slices that are about 1/3-1/2 inch thick and then cut those diagonally so I have small triangles. You just want them to be about that thickness.
  • Now, place all of the tofu into the marinade and let marinate for at least an hour. The longer the better, and you can even do it in the morning when you want it for dinner or the night before.
