TRIPLE CHOCOLATE TOFU BROWNIES

A rich, chocolate, vegan, low-fat brownie that certainly doesn't taste low fat!

¾ cup whole wheat flour
¼ teaspoon baking soda
¼ cup cocoa powder
⅛ teaspoon salt
½ (12 ounce) package silken tofu, drained
¼ cup olive oil
1 cup white sugar
4 teaspoons vanilla extract
4 (1 ounce) squares bittersweet chocolate, chopped
½ cup dark chocolate chips

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan. Combine flour, baking soda, cocoa powder, and salt in a bowl.
  • Place the tofu into a blender. Cover, and puree until smooth. Add the olive oil and sugar. Blend for 1 more minute; pour into a mixing bowl and stir in the vanilla extract.
  • Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Mix the melted chocolate into the tofu mixture until well blended. Stir in flour mixture until thoroughly combined, about 3 minutes. Fold in the chocolate chips.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Cool before slicing into bars.

2 cups whole spelt flour
1 cup carob powder
1 teaspoon salt
2 teaspoons baking powder
1 ½ cups honey
1 cup strong brewed vanilla hazelnut tea (such as Yogi®)
½ cup heavy cream
½ cup vegetable oil
2 eggs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the spelt flour, carob powder, salt, and baking powder together in a large bowl.
  • Stir the honey, brewed tea, cream, vegetable oil, and eggs together in a separate bowl. Add the honey mixture into the flour mixture, and stir to thoroughly combine; pour into an 8x11-inch baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out gummy rather than wet, about 45 minutes. Allow to cool before refrigerating overnight for best results.

3/4 cup silken soft tofu
1/2 cup water
1/2 cup maple syrup
1/2 cup cocoa powder
2 tablespoons vegetable oil
1 tablespoon vanilla extract
1 1/4 cups flour
1 cup sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts, optional

Steps:

  • Gather the ingredients.
  • Pre-heat oven to 350 F and lightly grease a baking pan.
  • In a blender or food processor, process the silken tofu , water, maple syrup, cocoa, oil, and vanilla until smooth.
  • In a large bowl, mix together the remaining ingredients-flour, sugar, baking powder and salt-, except the nuts.
  • Combine the dry ingredient mixture with the wet ingredients, stirring well to combine. Gently fold in the walnuts.
  • Pour the batter into the baking pan and bake for about 40 minutes or until a toothpick inserted into the center comes out clean. Allow brownies to cool completely before cutting into 16 squares.

2 tsp. baking powder
1/3-cup honey
1/2-cup unsweetened applesauce
1 tsp. vanilla extract
1 cup water
1/4-cup chopped nuts (optional)

Steps:

  • In a large mixing bowl, combine flour, carob powder and baking powder. In a separate bowl, thoroughly mix remaining ingredients except nuts. Add dry ingredients to wet ingredients and mix well. Stir in nuts if using. Pour batter into a nonstick or lightly oiled 8-inch square baking dish. Bake at 350F for 35 minutes.

Mmmm! :) Feel free to add in chopped nuts, chocolate chips or coconut flakes. Ive also posted a healthified version of this recipe for those of us watching their weight.

3 ounces firm silken tofu
1/4 cup non-dairy milk (like e.g. soy)
1/2 cup canola oil
1 cup sugar
2 teaspoons vanilla extract
1 cup flour
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/2 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Puree the tofu, non-dairy milk and oil until smooth and fluffy. Transfer to a mixing bowl. Use a fork to vigorously mix in the sugar and vanilla.
  • Sift in flour, cocoa powder, cornstarch, baking powder and salt.
  • Use a spatula to mix batter until smooth. Transfer to an 8X8 greased baking pan and smooth out the top.
  • Bake in the preheated oven at 325°F/150°C for 25 minutes or until set.
  • Remove from the oven and let the brownies cool for at least 15 minutes before slicing and serving.
  • Enjoy.

TOFU CAROB BROWNIES

1/2 cup mashed soft silken tofu
1/2 cup maple syrup
1 teaspoon vanilla extract
2 tablespoons coconut oil
2 tablespoons carob powder
2/3 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 cup chopped pecans

Steps:

  • 1. Preheat the oven to 350°F. Generously oil and flour an 8-inch square cake pan. Set aside. 2. Place the tofu, maple syrup, vanilla, oil, and carob powder in a blender or food processor, and blend until smooth and creamy. Transfer to a large bowl and set aside. 3. In another bowl, sift together the flour and baking powder. Add the pecans and mix well. 4. Add the flour mixture to the tofu mixture, and stir well to form a batter. Spread the batter into the prepared cake pan. 5. Bake for 20 minutes or until a toothpick inserted into the center of the brownies comes out clean. Let cool at least 10 minutes before cutting into squares and serving. For a Change . . . * To make chocolate brownies, use cocoa powder instead of carob. For an even "chocolatier" version, add 1/2 cup chocolate chips to the batter. * To turn this into a two-layer cake, double the recipe and bake the batter in two 8-inch cake pans. Place one layer on a platter, spread with frosting (the Maple Icing on page 276 is recommended), add the second layer, and top with more icing.

These are dense, moist, and deeply carob-y. I like to serve them chilled very cold with whipped cream. They are more fudgelike than cakelike. This recipe comes from my sister who served them to me after my son was born. I believe she got this from the "Deaf County Country Cookbook."

1/2 carob powder
1 teaspoon sea salt
2 eggs, separated
1/2 cup sulphured molasses or 1/2 cup maple syrup

Steps:

  • Mix flours, carob powder, and salt together in a large bowl.
  • In a small bowl combine egg yolks, molasses, oil, water, and vanilla.
  • Add to the flour and mix well.
  • Add nuts and stir.
  • Beat the egg whites until stiff and fold into batter.
  • Spread in an oiled 8 inch square pan.

Steps:
