PEANUT BUTTER CORNFLAKE BARS

Peanut Butter Cornflake Bars image

Peanut butter cornflake bars were one of my favorite treats when I was a little girl. If you like chocolate, I have a friend who spreads 1 cup of melted chocolate chips over the top. Let the chocolate set before cutting into the bars. -Laura Campbell, Lisbon, Maine

NO-BAKE CORNFLAKE COOKIES

No-Bake Cornflake Cookies image

I grew up on a farm where we hand-milked cows and had plenty of milk and cream to use for cooking. Sometimes we'd substitute light cream for the evaporated milk in this recipe. We'd rarely let these cookies cool before sampling them, and a batch never lasted a day! -Denise Marnell, Hereford, Texas

  • Preheat oven to 375 degrees (F). Line 2 large baking sheets with parchment paper or silicon baking mats; set aside.
  • Place butter in a small sauce pan over medium-high heat and cook for about 2 minutes – stirring almost constantly – until the butter has browned (careful to watch closely here as we want brown butter, not burnt butter). Place the bowl in the refrigerator or freezer and bring the butter back to room temperature. *You’ll know the butter is at room temperature when you press a finger into the top and it makes a slight indentation.
