BISCUIT MINI-BATCH FOR TOASTER OVEN
A nice, little batch of fresh, hot, biscuits to make in the toaster oven when you just need a little something. Drop biscuits are no more trouble to make than opening a can of dough and you don't have to keep track of expiration dates. Of course you could roll them and cut them if you wanted, but I've always liked the crunchy bits you get from the texture of the drop biscuits.

RED LOBSTER® CHEDDAR BISCUITS
I made these with baked potato soup and loved it. Great addition! I gave them to a friend and he said they tasted just like the ones at Red Lobster®. The recipe will yield more if made into smaller biscuits. They are best served fresh out of the oven.

- Select a cast iron skillet for the number of biscuits that you are choosing to make. If you will not make the entire can of biscuits- you can wrap the remainder tightly in plastic wrap and store in the fridge for a couple of days until ready to use. Place your butter in your cast iron skillet and place the skillet in the oven. Turn the oven on to preheat to the stated temp on your can of biscuits.
- When the oven comes to temperature, remove the skillet from the oven. Working quickly, wipe the biscuit in the melted butter and then turn it over and set it in the pan (so that both sides of the biscuit will be buttered). Be careful not to burn your fingertips - the butter is hot! Snuggle the biscuits up to one another in the pan so that they are touching. Once as many biscuits are in the pan as you desire, sprinkle with the desired topping and place the pan in the oven
- Bake according to the package instructions for your biscuits. Remove from the oven when done. Serve immediately.

- In a small bowl, stir together flour and baking powder. Create a well in the center of flour mixture. Pour half & half into the well and stir ingredients together until a light dough forms (try not to over mix, the dough comes together very quickly and over mixing will kill the dough's light airiness and affect the biscuits final texture).
- Divide dough into two even pieces. Place one piece on a lightly floured cutting board, sprinkle with a tiny bit of flour. Gently roll dough into a ball and lightly pat into a small 2.5-inch circle. Place circle onto the ungreased cookie sheet. Repeat with remaining dough piece. Keep circles separated if you want their entire exteriors crispy or place them touching side by side for a softer edge. Bake at 425 F for 9 to 12 minutes until biscuits are lightly golden brown on top and bottom.
