ROASTED PARMESAN GARLIC ALMONDS
Satisfy your snack attack with nutrient packed, crunchy, savoury Roasted Parmesan Garlic Almonds. These also make great gluten-free croutons for salads!

- Preheat oven to 250°F or 325°F (see Cook's Notes). Lightly spritz a half-sheet pan with non-stick cooking spray or lightly grease it and and set aside.In a small mixing bowl, toss together the grated Parmesan cheese, Italian seasonings, granulated garlic, smoked paprika, and salt and set aside.In another mixing bowl, whisk or beat the egg whites until they reach soft peaks. Measure the almonds into a larger mixing bowl. Scrape the egg whites on top of the almonds and gently mix to coat. Toss the Parmesan mixture over the almonds and gently toss to coat evenly. Distribute the coated almonds in an even, single layer over the prepared half-sheet pan. If baking at 250°F, bake for about an hour, stirring once every 15 minutes. If baking at 325°F, bake for about 30 minutes. After each stir, re-arrange the almonds again into an even, single layer. After an hour, or when the almonds are mostly dry to the touch, turn off the oven and prop the door open partway. Let the almonds cool in the opened oven for 20 minutes before transferring the half sheet pan to a rack to finish cooling completely to room temperature. Transfer the almonds to an airtight container and store at room temperature for up to a week.
GARLIC ROASTED ALMONDS
Steps:
- Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- Add the almonds to a bowl, then pour the avocado oil over the almonds. Stir until the almonds are all completely coated. Spread the almonds into a single layer on the parchment lined baking sheet. Place the baking sheet onto the center rack of your preheated oven. Roast for 10 minutes at 350 degrees Fahrenheit.
- While the nuts are roasting, add the seasoned salt and garlic powder to a small bowl and stir to combine.
- Once the almonds have roasted for 10 minutes, carefully remove from oven. Stir the almonds, sprinkle with the garlic salt mixture, then stir again to coat them with the seasoning.
- Place the seasoned almonds back into the oven and continue roasting them for an additional 5-7 minutes. Watch them carefully after 5 minutes so they do not burn.
- Remove the almonds from the oven and allow them to cool completely on the baking sheet. Do a taste test and sprinkle with additional salt if desired.
- Serve fresh or store them in an airtight container.

- Heat the oil in a small frying pan.
- Add the crushed garlic clove, try to keep it whole as it makes it easier to take out later. Fry the clove for a few seconds for the oils to release then add the rest of the ingredients.
- Stir the almonds until they are golden brown. Discard the clove and enjoy the almonds!

- For the basic risotto: Preheat the oven to 450 degrees F (230 degrees C). Roast the whole garlic heads on a dish in the oven until soft, about 30 minutes.
- Stage 1: Heat the stock. In a separate pan heat the olive oil, add the shallots or onions, garlic, and celery, and fry slowly for about 4 minutes. When the vegetables have softened, add the rice and turn up the heat.
- Stage 2: The rice will now begin to fry, so keep stirring it. After a minute it will look slightly translucent. Add the vermouth or wine and keep stirring, it will smell fantastic. Any harsh alcohol flavors will evaporate and leave the rice with a tasty essence.
- Stage 3: Once the vermouth or wine has cooked into the rice, add your first ladle of hot stock and a good pinch of salt. Separate the roasted garlic cloves and squeeze out the sweet insides into the risotto. Add the thyme and black pepper to the risotto. Turn down the heat to a highish simmer, so the rice doesn't cook too quickly on the outside. Keep adding ladles of stock.
- Stage 4: Remove from the heat and add the butter and Parmesan. Stir gently. Place a lid on the pan and allow to sit for 2 to 3 minutes. This is the most important part of making the risotto, as this is when it becomes outrageously creamy and oozy like it should be. Eat as soon as possible while the risotto retains its perfect texture. In a frying pan toast the almonds and bread crumbs in a little olive oil until crisp and golden. Season with a little salt. Set to one side. Serve the risotto with the toasted almonds and bread crumbs sprinkled over the top. Lovely.
ROASTED GARLIC PARMESAN ALMONDS (SALAD TOPPER)

- Spread almonds in a single layer on a baking sheet and place in a cold oven.
- Turn oven on to 350 degrees F (175 degrees C). Bake almonds, stirring occasionally, until light tan and fragrant, 12 to 15 minutes. The nuts will continue to cook after removing from oven.
- Meanwhile, mix sugar and salt together in a small bowl; sprinkle about 1 tablespoon sugar mixture into a large bowl.
- Stir honey, water, and almond oil together in a saucepan; bring to a boil. Add almonds; cook and stir until almonds have absorbed all the liquid, about 5 minutes.
- Transfer coated almonds to the large bowl sprinkled with sugar mixture. Sprinkle remaining sugar mixture over almonds; toss to coat evenly.
