CRISPY BAKED ZUCCHINI
The most amazing crispy baked zucchini with Parmesan cheese, panko breadcrumbs, and garlic. Ready in less than 20 minutes!

Steps:
- Preheat the oven to 425 degrees.
- In a large bowl, toss the zucchini with olive oil, salt, and pepper. Lay flat on a prepared baking sheet in a single layer. Use a second baking sheet if needed.
- In a small bowl, mix together the breadcrumbs, parmesan cheese, and Italian seasoning, Carefully sprinkle over the zucchini.
- Roast until tender, about 12-16 minutes depending on thickness. Zucchini should be tender and topping should be browned.

Steps:
- In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until thickened, stirring occasionally., Meanwhile, in a shallow bowl, whisk egg and salad dressing. Place bread crumbs in another shallow bowl. Dip zucchini slices in egg mixture, then coat with bread crumbs. Cook on an indoor grill for 2-3 minutes or until golden brown. Serve with marinara.

CRISPY BAKED ZUCCHINI W/ MARINARA SAUCE
A great appetizer and best of all, they're baked. The marinara sauce is a perfect dipping sauce.

Steps:
- Spread each slice of zucchini with a thin layer of yogurt. Mix crumbs and parmesan together and sprinkle on both sides of zucchini.
- Preheat oven to 400 degrees. Place zucchini on parchment paper and bake until golden brown - approx. 20 min.
- Carefully flip zucchini and brown on the other side. Remove and place on a platter along with marinara sauce.
- For Marinara Sauce -- add all ingredients and mix well - cover and simmer for approx. 30 minutes or until sauce is thickened.
ZUCCHINI MARINARA
The Monterey Jack cheese is surprising in this "Italian" dish but it works better than Italian cheeses, in my opinion.

Steps:
- Saute zucchini in 3 Tablespoons olive oil until lightly browned; drain.
- Place in 1-1/2 quart casserole.
- Combine marinara sauce, wine, remaining oil, garlic, basil and oregano in small saucepan; stir well.
- Simmer for 15 minutes, stirring occasionally.
- Spoon sauce over zucchini; mix well.
- Sprinkle cheese over sauce; cover.
- Bake at 325 degrees for 30 minutes.
- Bake, uncovered, for 5 minutes longer.
