CHERRY CHEESE DELIGHT

"You couldn't ask for anything more than a nutty crust topped with a smooth cream cheese mixture and sweet cherries," assures Kathy Branch of West Palm Beach, Florida. Since this dessert is made the night before, you don't have to worry about last-minute fuss.

1 cup all-purpose flour
1 cup chopped pecans
1/2 cup packed brown sugar
1/2 cup butter, softened
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1 carton (12 ounces) frozen whipped topping, thawed
2 cans (21 ounces each) cherry pie filling

Steps:

  • Preheat oven to 350°. In a small bowl, combine the flour, pecans and brown sugar. Stir in butter until crumbly. Lightly pat into an ungreased 13-in. x 9-in. baking dish. Bake until golden brown, 18-20 minutes. Cool completely., For filling, in a large bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth. Fold in whipped topping. Carefully spread filling over crust. Top with pie filling. Cover and refrigerate for at least 2 hours.

1/4 cup mayonnaise
2 teaspoons Spice Islands® Dill Weed
1/2 teaspoon Spice Islands® Garlic Powder
1/4 teaspoon Spice Islands® Celery Salt
1/8 teaspoon Spice Islands® Fine Grind Black Pepper
1/4 cup shredded Parmesan cheese
12 slices baguettes OR party rye bread
1/4 cup finely chopped tomato
2 green onions, finely chopped
2 tablespoons chopped black olives

Steps:

  • Combine mayonnaise, dill, garlic powder, celery salt, pepper and Parmesan cheese in a small bowl. Arrange bread slices on baking sheet in a single layer. Broil 6 to 8 inches from heat for 30 to 45 seconds or until lightly toasted. Turn slices over; spread with mayonnaise mixture. Broil 1 minute or until lightly browned. Top each with tomato, green onion and olives. Serve immediately.

Not the typical open faced Danish sandwich, but using some of their ingredients like Havarti cheese, rye bread, pickles, and foolproof sweet and spicy bacon creating a taste bud awaking Danish grilled cheese.. 1 tablespoon brown sugar
1/4-1/2 teaspoon chili powder (chipotle is a nice choice if you like smoky)
1/4 lb center-cut bacon, 4 slices
4 slices bread (a hearty rye with caraway seeds is really nice with the Havarti cheese )
1/4 cup butter, softened
2 ounces roasted sweet red peppers, that is one small pepper from the jar towel dried
2 thin slices pickles (give a nice bite and tang)
4 slices havarti cheese (garlic and herb if you can get it)
4 fresh basil leaves (optional if not using rye cheese or if you are)

Steps:

  • Line a baking sheet with foil. For EASY clean up.
  • Lay bacon slices on the foil lined baking sheet.
  • Sprinkle bacon with brown sugar and chili powder giving them a toss to coat then spread bacon out in a single layer.
  • Place pan on the center rack of a cold oven.
  • Close oven door.
  • Turn oven on to 400°F Check 17 to 20 minutes later. The exact time will depend on the thickness of the bacon slices, and also on how quickly your oven reaches 400 degrees.
  • Keep your eye on the bacon during the final few minutes of cooking to make sure that it doesn't burn. Also, remove the cooked bacon from the hot pan right away. The heat from the pan and the hot bacon fat will continue cooking the bacon.
  • Heat a cast iron or heavy bottom skillet to medium high heat.
  • Layer your sandwich:.
  • Start with bread slice, cheese, red bell pepper slices, pickle slices, bacon, cheese, optional basil, bread slice. Spread butter over the top of the sandwich. Place the sandwich top side down (butter side down) on the hot pan. Butter the exposed side of the sandwich.
  • Let cook for a minute and then flip over to its other side.
  • Press down on the sandwich with a spatula or lay a heavy pan on the sandwich. Cook for 2 minutes flip and wiegh down and cook for 1 minute more. If you have a panini press do use it.
  • The sandwich is done when the sides are toasted and the cheese is melted. Cut in half and ENJOY!

This is a winner from the Gilroy Garlic Festival. Recipe by Terra Fox. Spread this on crackers, toasted bread slices, or miniature pitas. Serving size is an estimate.

2 bulbs of garlic
6 ounces blue cheese
scallion
extra virgin olive oil
1 loaf bread, slices lightly toasted (or toasted miniature pita bread)

Steps:

  • Preheat oven to 375°F.
  • Remove all but a couple of layers of skin off the garlic (do not peel it down to the cloves).
  • Slice the tips of the cloves so flesh is just exposed.
  • Place garlic in a small baking dish (or a garlic roaster, if you have one).
  • Place a few sliced scallions around the garlic bulbs.
  • Coat garlic bulbs with olive oil with a thin layer of olive oil in the bottom of the dish.
  • Bake for about 45 minutes or until cloves are soft.
  • About 10 minutes before the garlic is done, place crumbled blue cheese around garlic cloves.
  • Stir around to coat with oil.
  • Return to oven and bake until melted.
  • Let stand 5 minutes before serving.
  • To eat, spread a bread slice with the blue cheese, squeeze on roasted garlic and spread.
