Tlayuda With Black Bean Puree (Aka Mexican Unpizza) image

This is the genuine article, an Oaxacan specialty. Not to be called pizza. Better than the sum of its parts, the texture is key. I served with a Louisiana hot sauce, you may want to serve with salsa if you are not into things too hot. Other beans would also work well with this. As published in the NY Times. 2 cups cooked black beans or 2 cups canned black beans, drained, liquid reserved
salt & freshly ground black pepper, to taste
1 tablespoon garlic, minced
1 small onion, minced
1 teaspoon chili powder, to taste (mild like New Mexico or ancho)
2 -3 teaspoons cumin, to taste
4 corn tortillas
1 cup mozzarella cheese (if possible use quesillo which is Mexican string cheese, or use queso fresco, goat cheese or feta)
1 cup cabbage, chopped
1/2 cup fresh cilantro, shredded (optional)

Steps:

  • Preheat oven to 450 degrees.
  • If using dried beans, add salt, pepper, garlic, onion, chili powder and cumin in last few minutes of cooking. Place mixture in blender or food processer with enough liquid to allow machine to do its work and roughly puree.
  • If using canned beans, add seasonings and warm mixture gently in a saucepan, stirring, to take the edge off of the garlic and onion. Then roughly puree with a little of the liquid as necessary.
  • Place the tortillas on pizza peel or baking sheet and evenly spread with the bean mixture and then the cheese.
  • Bake for 5 minutes, then sprinkle with cabbage and cilantro if using. Bake another 5 minutes until the topping is hot and tortilla is crisp on the edges. Cut into wedges if desired.

2 cups cooked or canned black beans, drained, liquid reserved
Salt and freshly ground black pepper, to taste
1 tablespoon minced garlic
1 small onion, minced
1 teaspoon mild chili powder, like New Mexico or ancho, or to taste
1 tablespoon cumin, or to taste
2 large (12-inch) tortillas, preferably corn
1 cup chopped quesillo (Mexican string cheese) or mozzarella; or use a crumbly cheese like queso fresco, slightly dried goat cheese or feta
Rounds of chorizo or other sausage, optional
1 cup chopped cabbage

Steps:

  • Preheat oven to 450 degrees. If using dried beans, add salt, pepper, garlic, onion, chili powder and cumin in the last few minutes of cooking. Drain and reserve liquid. Carefully place mixture in a blender or food processor with enough bean liquid to allow machine to do its work and roughly purée, leaving the mixture a bit chunky. If using canned beans, add seasonings and warm mixture gently in a saucepan, stirring, just to take the edge off the garlic and onion. Then roughly purée.
  • Place 1 tortilla on pizza peel or baking sheet and spread half the bean mixture on it; top with half the cheese and half the meat, if using it. Bake (on pizza stone, if using) for about 5 minutes, then sprinkle with half the cabbage. Bake another 5 minutes or so, until topping is hot and tortilla crisp on edges. Serve, cut into wedges, then repeat with other tortilla.

MEXICAN CHORIZO PIZZA (TLAYUDA)

4 tablespoons vegetable oil
5 ounces raw pork chorizo
One 16-ounce canned refried black beans
2 cups instant corn masa
1/4 teaspoon salt
1 tablespoons vegetable oil
1/2 cup Oaxaca cheese
Iceberg lettuce, shredded
Kosher salt and freshly ground black pepper
Crumbled queso fresco
Mexican crema

Steps:

  • For the chorizo and bean topping: In a large heavy saute pan, heat 2 tablespoons oil on medium-high heat. Add the chorizo and cook until crisp, about 6 minutes. Remove from the heat and reserve. In a large heavy saute pan, heat the remaining 2 tablespoons oil on medium-high heat. Add the beans and cook until warm, about 5 minutes. Remove from the heat and reserve.
  • For the tortillas: Combine the corn masa, 1 1/4 cups water and salt in a large mixing bowl. Mix thoroughly by hand to form a soft dough, about 2 minutes. If the dough feels dry, add more water (one tablespoon at a time). Preheat a 12-inch cast-iron skillet. Place a piece of parchment paper on a flat surface. Put half of the dough onto the parchment paper and place another piece of parchment paper on top. Using a rolling pin, roll out the dough until it is 1/4-inch thick and 10 inches in diameter. Drizzle the oil into the hot skillet and place the rolled out masa dough into the skillet to cook for about 2 minutes. Turn over to cook on the other side.
  • To assemble the pizza: Spread 1/2 cup of the warm refried beans onto the cooked side of dough. Add 1/4 cup Oaxaca cheese and 1/2 cup cooked chorizo. Continue to cook for until the cheese is melted, another 2 to 3 minutes. Remove the pizza from the pan onto a round serving platter. Top with the iceberg lettuce. Season with salt and pepper. Then sprinkle with crumbled queso fresco and a drizzle of Mexican crema. Cut into 4-inch squares and serve immediately. Repeat with the remaining half of dough and toppings.

1 tablespoon vegetable oil or 1 tablespoon lard
1 large white onion, peeled and sliced into long thin strips
2 heads garlic, peeled and chopped
1/2 lb carrot, peeled and diced
1 lb Huitlacoche, sliced
1 lb shiitake mushrooms or 1 lb oyster mushroom, stemmed and sliced
1 lb black beans
1/4 cup oil or 1/4 cup lard
1 head garlic, peeled and minced
salt, to taste
3 chipotle peppers
5 -6 leaves epazote (optional)
10 -12 warm tortillas
sour cream
queso fresco
radish, slices

Steps:

  • For the filling: Heat the oil in a large skillet over medium high heat and cook the sliced onion, stirring often, until rich golden brown.
  • Add the garlic to the pan and cook for 2-3 minutes more.
  • Dice and add the carrots, and continue cooking, adding a touch of water or stock as need.
  • Add huitlacoche and mushrooms to the pan and cook for an additional five minutes or until mixture is relatively dry.
  • For the sauce: Place the beans in a medium sauce pan with the oil, garlic, epazote and enough water to triple the depth of the beans.
  • Simmer over medium heat until the beans are completely tender.
  • Season generously with salt and set aside to cool at least half an hour.
  • Blend the cooked beans and their cooking liquid with the chipotles and strain into a medium sauce pan.
  • Add more liquid while blending as necessary.
  • Slowly reheat the sauce as it will stick, and season with salt if needed.
  • To assemble: Heat both the filling and the sauce.
  • Roll approximately two heaping tablespoons of the filling into each tortilla and place on plates to serve.
  • Coat the tortillas completely in the black bean sauce from end to end.
  • Garnish the dish with a drizzling of the sour cream, a sprinkling of the cheese, and finish with radish slices.
