TIPSY BOLOGNA SANDWICHES

Recipe from local TV show about 16 years ago. One of those I'll make this- it sounds so good recipes scribbled and saved on a piece of ripped envelope.

1 tablespoon(s) adobo sauce or 1 chipotle pepper in adobo sauce, finely chopped
1/2 cup(s) mayonnaise
2 tablespoon(s) olive oil
1 slice(s) (2 inches thick bologna, cut into 1/2 inch cubes
1/2 cup(s) chopped onion
- kosher salt and fresh ground pepper
2 tablespoon(s) dijon mustard
2 teaspoon(s) honey
1/2 cup(s) white wine or white grape juice
4 slice(s) pullman bread, toasted ( or your favorite bread)

Steps:

  • For the chipotle/mayonnaise spread: Combine the mayonnaise and chipotle pepper in a bowl, and blend until smooth. Refrigerate until ready to use. --- For bologna: In a large pan on medium-hi heat, add the oil.When oil is slightly heated add the bologna chunksSautéaute while tossing to brown all sides, about 8 minutes. Add the onions and season lightly with salt and a little pepper. Continue to toss while cooking until the onions are tender, about 5 minutes more. Stir in the mustard and honey to coat, and then add the wine. Simmer while tossing until the wine bubbles and foams and is reduced to only a bit of sauce is in the pan. --- To assemble sandwich: Slather chipotle mayonnaise on each slice of toasted bread and top equally with the bologna. YUM!

1-1/2 pounds bologna or ham, ground
1 to 1-1/4 cups mayonnaise
3/4 cup sweet pickle relish, well drained
3 tablespoons chopped onion
1 tablespoon Worcestershire sauce
30 slices bread
15 slices process American cheese
Lettuce leaves, optional

Steps:

  • In a bowl, mix bologna, mayonnaise, relish, onion and Worcestershire sauce. Use about 1/3 cup of the salad for each sandwich, and top with a slice of cheese and lettuce if desired.

Yield 1 sandwich

Number Of Ingredients 9

2 slices soft white sandwich bread, such as Wonder Bread
Mayonnaise, for spreading
Yellow mustard, for spreading
4 thin slices bologna (preferably nitrate-free and pork)
Unsalted butter, for the skillet
2 slices American cheese
2 tablespoons chow chow
1/2 cup BBQ potato chips
1/2 cup shredded iceberg lettuce

Steps:

  • Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
  • Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
  • Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.
