I received an email from Weight Watchers this morning and it had this recipe featured. 1/2 cup = 2 points (for those following the WW points plan) NOTES from the website:Check after 25 minutes to make sure smaller pieces of corn are not burning. Store any uneaten kernels in an airtight container in the refrigerator for up to 3 days. To recrisp any soft kernels, reheat in oven on a sheet pan until crispy. Add even greater flavor to this recipe by tossing the corn with flavored vegetable oil such as basil- or chili-flavored oil (for the Flex Plan only).

4 medium corn on the cob, raw, kernels removed with a knife
1 1/2 teaspoons garlic powder
1 teaspoon paprika
1/8 teaspoon table salt (to taste)

Steps:

  • Preheat oven to 375ºF.
  • Pour oil into a large, sided baking pan. Add corn, garlic powder, paprika and salt; stir to mix.
  • Bake until crisp, shaking pan occasionally, about 45 minutes. Yields about 1/2 cup per serving.

8 skinless chicken drumsticks (about 2 lbs)
1 lemon, juice of, large
2 large garlic cloves, minced
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
2 teaspoons olive oil
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (1 pint) container grape tomatoes or 1 (1 pint) container cherry tomatoes

Steps:

  • Preheat oven to 425°F Spray large rimmed baking sheet with nonstick spray.
  • Place drumsticks on baking sheet. Mix lemon juice, garlic, sage, rosemary, thyme, oil, mustard, salt and pepper in small bowl; pour over drumsticks and toss to coat. Add tomatoes.
  • Roast until drumsticks are cooked through and tomatoes are softened, about 40 minutes, turning drumsticks once halfway through roasting time.

I have not tried this recipe. I got the recipe from a Weight Watchers magazines. It is a 2 point value. The garlic for this dipping sauce can be roasted anytime the oven is on; just place the unpeeled cloves on a baking dish. An exact temperature or cooking time is not important as long as the garlic develops a rich, brown color and the flesh becomes soft enough to mash easily. The dipping sauce may be store in the refrigerator for up to 3 days. This dipping sauce is to be served with the New England Shore Dinner. Each serving is 3 tablespoons.

1/2 cup low sodium vegetable broth or 1/2 cup chicken broth
2 teaspoons cold water
2 teaspoons cornstarch
1/4 cup malt vinegar
4 roasted garlic cloves, mashed to a paste
2 tablespoons dijon-style mustard
1/2 teaspoon honey
2 tablespoons peanut oil
1/4 teaspoon salt
fresh ground pepper

Steps:

  • Bring the broth to a boil in a saucepan. Stir the water into the cornstarch in a small bowl and drizzle it into the simmering broth, stirring constantly until the mixture boils and thickens, about 1 minute.
  • Remove the pan from the heat; add the vinegar, garlic, mustard, and honey. Let the mixture cool completely; then drizzle in the oil, salt, and pepper, whisking constantly. Serve in small cups.
  • Cooks Tip: To reserve any unused roasted garlic, peel the cloves and place them in a small jar. Cover with cooking or salad oil; then cover jar and refrigerate for up to 4 days. Use the oil in other sauteed dishes that would benefit from subtle roasted garlic aroma.

  • Preheat oven to 400°F Wrap garlic in heavy-duty foil. Roast until soft, about 45 minutes. Unwrap and let stand until cool enough to handle, 10 minutes.
  • Increase oven temperature to 450F.
  • Separate garlic cloves; squeeze pulp out of their papery skins Combine roasted garlic pulp, tomato sauce, and pepper in small bowl.
  • Put crust on baking sheet; spread top with tomato sauce mixture, then sprinkle with mozzarella, parmesan and rosemary. Bake until bubbling, about 12 minutes. Cut into 8 wedges.
