ROYAL RHUBARB COFFEE CAKE

This coffee cake recipe is a variation of one a close friend and I make for our home baking business. I've used raspberries and blueberries in place of the rhubarb with winning results. -Lorraine Robinson, Stony Plain, Alberta

Number Of Ingredients 13

1/3 cup butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
3-1/2 cups chopped fresh or frozen rhubarb, thawed and drained
TOPPING:
3/4 cup packed brown sugar
1/4 cup butter, melted
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition., Pour into a greased 13x9-in. baking dish. Spoon rhubarb to within 1/2 in. of edges. Combine topping ingredients; sprinkle over top. , Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

This is a colorful breakfast kuchen. I remember my dad baking this for us. It warms my heart just seeing the recipe. He has since passed away but not before he passed his interest in baking on to me. Hope you make this and years later your children will make it and think of you....and smile.

1 c all purpose flour
2 Tbsp shortening (butter flavor if you have it)
3 Tbsp milk
1 tsp baking powder
1 egg
3 c sliced rhubarb
3 oz box strawberry gelatin
1 c sugar
1/2 c flour
1/4 c cold butter

Steps:

  • 1. Mix flour, baking powder an a bowl
  • 2. Beat eggs add to flour along with shortening and milk.Blend
  • 3. Pat into a greased 9x9 inch baking pan, large pie pan or 7x11 inch pan
  • 4. Scatter rhubarb over the dough. Sprinkle gelatin powder over rhubarb
  • 5. in another bowl mix sugar and flour and cut or rub in butter. Sprinkle over kuchen. Bake 375 degrees for 30-40 minutes

This recipe was in an old St Peter's Christian Woman's Cookbook that my mother had for over about 60 years. I eat it, smile and think wonderful thoughts of her and all the glorious women of my past. The cookbook is so old and stained but oh so well treasured!

2 Tbsp butter flavored shortening or butter
1/2 c sugar
1 egg
1 1/2 c flour, all-purpose
1 1/2 tsp baking powder
3/4 tsp salt
1/2 c milk
1 tsp vanilla
2 c sliced rhubarb in 1/4 in slices
1 c sugar
2 Tbsp flour, rounded
2 Tbsp butter
1/2 tsp nutmeg

Steps:

  • 1. Cream butter and sugar. Add eggs and beat until smooth and flour, baking powder, creamy. Mix vanilla with milk. Sift flour, baking powder and salt. Add along with milk mixture to the creamed sugar egg mixture. Beat to blend. Dough will be fairly stiff.
  • 2. Grease a 9x13 pan. I plop about 6 plops of dough in the bottom of the 9x13 then I use an offset spatula to spread the dough in the pan. Sprinkle raw rhubarb over dough.
  • 3. In separate bowl mix sugar, the two rounded tablespoons of flour, butter and nutmeg. Sprinkle over the rhubarb. Bake 350 degrees for 35-40 minutes.

GERMAN RHUBARB STREUSEL CAKE

Rhubarb cake (Rhabarberkuchen) is very popular in Germany and this version is especially delicious. It is fairly quick and easy to make since the dough for the crust and the streusel are the same. Try it! You won't regret it.

2 cups all-purpose flour
1 egg
½ cup white sugar
2 teaspoons vanilla sugar
½ cup unsalted butter, cubed and softened
3 ½ cups chopped rhubarb
3 tablespoons white sugar
2 tablespoons unsalted butter, cut into cubes

Steps:

  • Sift flour into a large bowl and make a well in the middle. Add egg, 1/2 cup sugar, and vanilla sugar to the well. Distribute 1/2 cup cubed butter evenly on top. Mix into a dough using your hands. Cover and refrigerate for 30 minutes.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan.
  • Place 2/3 of the dough in the springform pan and smooth across the bottom. Cover with rhubarb.
  • Crumble remaining dough between your fingers and sprinkle over the rhubarb. Sprinkle with 3 tablespoons sugar. Scatter 2 tablespoons cubed butter over the streusel.
  • Bake in the preheated oven until streusel is lightly brown and crisp, 30 to 40 minutes.

Rhubarb is abundant in our area, and this recipe makes great use of it. The crunchy cinnamon-sugar topping is a nice complement to the rhubarb.

1-1/2 cups packed brown sugar
1/2 cup shortening
1 large egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1-1/2 cups chopped rhubarb
TOPPING:
1/4 cup sugar
1/4 cup packed brown sugar
1/2 cup chopped pecans or walnuts
1 tablespoon butter
1 teaspoon ground cinnamon

Steps:

  • In a bowl, cream sugar and shortening. Add egg. Combine flour, baking soda and salt; add alternately with the sour cream to the creamed mixture. Fold in rhubarb. Spread in a greased 13x9-in. baking pan. Combine all topping ingredients; sprinkle over batter. Bake at 350° for 45-50 minutes. Cool on wire racks.

Rhubarb Kuchen recipe from my grandmother. Its a lovely dessert that is a blend of tart, tangy rhubarb and a thick, buttery almond crust.

3/4 cup butter, softened
1 1/4 cups granulated sugar
1/3 cup plain yogurt
1 egg yolk
1 teaspoon grated orange rind
2 cups all-purpose flour
1/2 teaspoon baking soda
1 pinch salt
3/4 cup sliced almonds
5 cups chopped rhubarb
1 tablespoon orange juice
1/3 cup strawberry jelly

Steps:

  • Cream butter with 3/4 cup of the sugar.
  • Beat in yogurt, egg yolk and orange rind.
  • Combine flour, baking soda, salt and 1/2 cup of the almonds.
  • Gradually stir into butter mixture until mixed.
  • Using wet spatula or hands, spread dough evenly onto bottom and 3/4 inch up side of greased 10-inch springform pan.
  • Toss rhubarb with remaining sugar and orange juice.
  • Arrange evenly over the dough.
  • Sprinkle remaining almonds around the edge.
  • Bake in 350 F or (180 C) oven for 45-50 minutes or until pastry edge is golden brown and rhubarb is tender.
  • Let cool on rack.
  • Remove side of pan.
  • To make Glaze: In small saucepan, bring strawberry jelly and 3 tbsp of water to a boil while whisking constantly.
  • Reduce heat and boil gently whisking often for approx.
  • 3 minutes or until thickened.
  • Brush over rhubarb and sides of cake.
  • Let stand to cool for 5 minutes.

1 pinch salt
2 tablespoons margarine or 2 tablespoons butter
1 egg, beaten with
2 tablespoons milk
1 (85 g) strawberry Jell-O gelatin dessert
5 cups sliced rhubarb
1/3 cup sugar
3 tablespoons flour
1/3 cup flour
2/3 cup sugar
3 tablespoons margarine or 3 tablespoons butter

Steps:

  • Pre-heat the oven to 375.
  • THE BASE: Cut margarine or butter into dry ingredients until it looks like coarse crumbs. Add egg & milk mixture; stir till moist. Pat evenly on bottom and 1" up the sides of 9x9" pan.
  • THE MIDDLE PART: Mix all the ingredients together and turn into crust lined pan.
  • TOPPING: Cut together and sprinkle evenly over the rhubarb.
  • Bake for 45 minutes; cool and serve with ice cream or whipped cream.

Steps:

  • Crust.
  • Combine first 4 ingreddients with a fork till crumbly.
  • Spread into a 9 x 13 pan.
  • Filling.
  • Spread out Rhubarb evenly.
  • Sprinkle Jello mix over Rhubarb.
  • Topping.
  • Mix together Flour and Sugar in a bowl.
  • Melt butter in microwave.
  • Pour Butter over the Flour mixture.
  • Fork mix a little bit. Make clumpy. Mix to much you will make a big ball. Don't want a big ball.
  • Sprinkle on top the Rhubarb.
  • Bake in oven 350 degrees for 30 to 40 minutes.
