Tibs is a popular Ethiopian dish of sautéed beef, mutton or venison, and vegetables, that's flavored with niter kibbeh and berbere.

2 lbs beef sirloin ((or merlan), trimmed and cut into 1 inch / 2.5 cm cubes)
3 oz niter kibbeh
4 onions (, cut into slices)
2 3 inch pieces fresh ginger (, peeled and grated)
½ teaspoon cumin
½ teaspoon black pepper
1 large head garlic (, peeled and crushed)
2 large tomatoes (, peeled, seeded, and finely diced)
2 green peppers ((jalapeño type), sliced ​​or whole)
5 tablespoons berbere spice
4 teaspoons neutral vegetable oil
2 teaspoons lemon juice
Salt
2 teaspoons fresh cilantro (, chopped)
Dutch oven
Blender
Cast iron pan ((12 inches / 30 cm in diameter))
Kitchen tongs

Steps:

  • Melt the niter kibbeh in a Dutch oven over medium heat, then add the onions, ginger, cumin, pepper, garlic and berbere spice.
  • Reduce heat to medium-low, and cook, stirring frequently, for about 30 minutes, or until onions are golden brown.
  • Towards the end of cooking, the onions should sizzle slightly, so if necessary, increase the heat.
  • Transfer half of the onions to a blender, puree them, and pour them back into the pot with the rest. Salt and mix well.
  • Add the tomatoes, and cook for 2 minutes over medium / high heat, stirring frequently.
  • Turn off the heat, cover and keep warm.
  • Generously salt the beef on all sides.
  • Heat the oil in a cast iron pan, until it's lightly smoking.
  • Add the beef in a single layer, leaving some free space between each piece.
  • Cook the beef pieces without moving for about 3 minutes, or until they are seared on one side.
  • Turn the pieces of meat over with kitchen tongs, and cook on the other side until seared.
  • Continue to cook the meat, stirring and turning the pieces occasionally until the desired sear is reached.
  • Mix the beef with the reserved sauce, and finally add the lemon juice and cilantro, and mix well..
  • Serve immediately with injera.

1 lb beef tenderloin, cubed
canola oil, to taste
½ teaspoon kosher salt, plus more to taste
pepper, to taste
1 tablespoon berbere, plus more to taste
2 cups broccoli rabe, roughly chopped
2 teaspoons spiced butter, niter kibbeh, or clarified butter
1 medium red onion, thinly sliced
2 cloves garlic, minced
1 ginger, 1 inch (2 cm) piece, peeled and minced
2 jalapeñoes, sliced
2 sprigs fresh rosemary, leaves, chopped
½ teaspoon ground cumin
½ cup crushed tomato, canned
2 tablespoons red wine vinegar
2 teaspoons dijon mustard
2 medium tomatoes, chopped
2 teaspoons fresh cilantro, chopped
injera, for serving
cheese, fresh - Ayib, for serving

Steps:

  • Cut the beef tenderloin into cubes. Reserve any fat trimmings and other scraps.
  • Heat the canola oil in a large skillet over high heat. Add the beef scraps and stir to season the pan. Add the cubed beef to the skillet and season to taste with salt, pepper, and berbere. Sear the meat for 2 minutes, then remove from the pan and let rest. Keep any meat juices behind in the pan.
  • To the pan, add the broccoli rabe and cook until wilted. Remove from the pan and set aside.
  • Add a drizzle of canola oil and the kibbeh to the same pan over medium heat. Once the kibbeh is melted, add the onion, garlic, ginger, and jalapeños and sauté for 3 minutes, until starting to soften.
  • Add the rosemary, cumin, and cook for one minute. Add the crushed tomatoes, red wine vinegar, mustard, berbere, and cooked broccoli rabe. Cook for 3 minutes, until simmering
  • Return the beef to the pan, along with the chopped tomatoes and cilantro. Simmer for 2 minutes to allow the flavors to meld. Remove the pan from the heat.
  • Serve the tibs over injera, garnished with berbere and ayib.
  • Enjoy!

12 ounces beef round steak, 3/4 inch thick,trimmed and cut into 4 pieces.
2 tablespoons flour
1/4 teaspoon pepper
nonstick cooking spray
1 cup water
1 teaspoon beef bouillon granules
6 ounces evaporated skim milk
1 tablespoon flour

Steps:

  • Mix together 2 tablespoons flour and pepper.
  • Pound into meat with a meat cleaver.
  • Spray a large skillet with nonstick cooking spray.
  • Heat to medium and brown beef on both sides.
  • Drain off fat if needed.
  • Add water and boullion to skillet and bring to a boil.
  • Reduce heat and simmer, covered 1 1/4 hours until meat is tender.
  • Remove meat and keep warm.
  • In a bowl, gradually add skim milk to the flour and whisk until smooth.
  • Stir into the pan juices.
  • Cook until thickened and bubbly, and cook an additional minute.
  • Serve over meat.

Through good times and bad, the cube steak has remained a wallflower among meat cuts. Old-fashioned and a little mysterious, it's a steak without pretension, or maybe a hamburger with humble aspirations. The term "cube" can be a little murky. It doesn't refer to the shape of the meat, which is usually beef but is sometimes made from pork, elk or other animals. Rather, it refers to both the shape of the dimples that checkerboard the surface of cube steak and the process that puts the dimples there. Those dimples provide more surface area for flour to cling to, which makes for crisper cutlets in recipes like this simply-prepared (no batter, just a generous dusting of flour) chicken-fried steak.

2 cups flour
1 1/2 tablespoons salt
1 1/2 tablespoons pepper
2 cups milk
2 pounds cube steak, cut into 6 pieces

Steps:

  • Heat oven to 200 degrees. Pour a half-inch of oil into a cast-iron or other large, heavy skillet and place over medium-high heat.
  • Put flour, salt and pepper in a large zip-top bag or in a large baking dish and mix well. Pour milk into a large bowl. Dip each piece of steak in milk, shake off excess and then shake in bag of flour or press into dish of flour, making sure both sides are well coated. Shake off excess.
  • Lay steaks into hot oil until skillet is full, but not crowded. Cook for about 3 minutes a side, or until a good crust is formed. You may need to do this in batches, moving steaks to a platter in the warm oven as they cook. When done, pour off all but about 4 tablespoons of fat from pan, leaving in as many browned bits as possible, and turn off heat.
  • Pour milk into a saucepan and add enough water to make 3 cups. Heat over medium heat until just before boiling point.
  • Turn heat under frying pan to medium. When oil is hot, sprinkle in 3 tablespoons of flour mixture, 1 tablespoon at a time, quickly stirring until flour starts to brown, 1 to 2 minutes. Gradually add liquid, stirring constantly to remove lumps and cook until thickened. Adjust seasoning.

Nothing says Southern Cuisine like Chicken Fried Steak. My Mom made one of the best chicken fried steaks around. But she never was one for measurements. It was always a little bit of this, a pinch of that. So I was on my own to figure out her secret that made hers better than most others I had tasted. The key is in the technique and the batter. Many recipes require the use of 2-3 eggs. This recipe does not. Which makes for a lighter textured crust full of flavor. This is my own recipe that I came up with. I've been making this recipe for over 25 years. It is a favorite of family and friends.

2 lbs lean tenderized round steaks
2 cups all-purpose flour
2 teaspoons garlic salt
1 teaspoon garlic juice
1 teaspoon black pepper
1 egg, beaten
2 cups milk
lard (for frying)

Steps:

  • In dish or bowl, mix flour, garlic salt and black pepper. Set aside.
  • Mix egg and milk in separate bowl or dish. Set aside.
  • Heat lard in large skillet on medium heat.
  • Baste both sides of meat with garlic juice. Dip meat in flour mixture. Then dip into egg mixture. Dip once more in flour mixture.
  • Add steaks to hot oil and cook until done on both sides. Flipping steaks once.
  • Drain on paper towels.
  • Serve with gravy.

Chicken-fried steak is a treat no Southerner can resist! And I can't resist a 5-ingredient version of the recipe. This is really not a hard food to prepare and I give ideas for rounding out a traditional meal using convenience foods. Prepare as much of your menu as possible beforehand because once the meat starts cooking, it goes fast! Treat yourself to some real down-home southern cooking today!

4 cube steaks (one for each of your diners)
1/3 cup flour
salt and pepper
1/4 cup milk
1 egg, beaten
1 1/4 cups dry bread, crumbs (panko may be used)
1/3 cup salad oil

Steps:

  • Mix the flour, salt and pepper together in a bowl; I use soup bowls. You may measure these, as I do, Rachael Ray style ~ in other words I eyeball the amounts. In a second bowl. whisk together the milk and egg until lemon colored. I a third bowl, add the dry bread crumbs. Line the bowls up assemble-line style.
  • Dredge the meat in the seasoned flour, knocking off excess. Dip floured meat in the egg and milk mixture, coating well. Then dredge in the bread crumbs, again, coating well.
  • Heat a cast-iron skillet (traditional but your own skillet will work) over medium-high heat. Add oil. When oil is hot enough to spit back at you if you sprinkle water on it, add meat and brown 2-1/2 minutes per side for rare, 4 minutes per side for medium and 6 minutes per side for well-done. Turn only once. As you see, this goes fast and the meat requires your full attention while cooking. Remove meat to a serving dish and keep warm.
  • Notes: A traditional meal of chicken-fried steak includes:.
  • Mashed potatoes: use a prepared mix or refrigerated potatoes.
  • Country gravy: use an envelope of country-style gravy and prepare according to package directions.
  • Green beans: canned beans work well, perhaps flavored with some bacon.
  • Biscuits: use refrigerated baking powder style biscuits. These are a vital part of the Southerner's meal.
  • Salad: A wedge of lettuce or tossed green salad goes well.
  • Dessert: That's up to you. Mississippi Mud Cake was a fave in our home (recipe is posted).
  • Remember to prepare as much as possible of the menu beforehand so that once the meat is cooked, you're ready to heat.
  • To make CHICKEN-FRIED CHICKEN, I follow this same recipe, but I use pounded boneless skinless chicken breasts (your butcher will do this for you). I do like Panko on the chicken.

I received this recipe from a co-worker about 5 years ago. This is by far the best chicken fried steak I've ever had. I've made this numerous times for my picky eater son and my southern-raised better half, as well as other family and friends. I get nothing but rave reviews each time.

4 (1/2 pound) beef cube steaks
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon black pepper
¾ teaspoon salt
1 ½ cups buttermilk
1 egg
1 tablespoon hot pepper sauce (e.g. Tabasco™)
2 cloves garlic, minced
3 cups vegetable shortening for deep frying
¼ cup all-purpose flour
4 cups milk
kosher salt and ground black pepper to taste

Steps:

  • Pound the steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, Tabasco Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour.
  • Heat the shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Fry the steaks until evenly golden brown, 3 to 5 minutes per side. Place fried steaks on a plate with paper towels to drain. Drain the fat from the skillet, reserving 1/4 cup of the liquid and as much of the solid remnants as possible.
  • Return the skillet to medium-low heat with the reserved oil. Whisk the remaining flour into the oil. Scrape the bottom of the pan with a spatula to release solids into the gravy. Stir in the milk, raise the heat to medium, and bring the gravy to a simmer, cook until thick, 6 to 7 minutes. Season with kosher salt and pepper. Spoon the gravy over the steaks to serve.

1 can of your favorite beef gravy, I use franco american beef gravy,actually low in fat.
1 (4 ounce) can sliced mushrooms, drained

Steps:

  • First let explain that I usually do not measure ingredients, thus the lack of exact measurements.
  • Make the cheese cracker crumbs out of your favorite cheese crackers.
  • Do not use regular cracker because there is a huge taste difference.
  • Season the cutlets with garlic salt and pepper.
  • I use a Parmesan cheese container (like they have at your favorite italian restaurant) to sprinkle flour onto my meat.
  • Sprinkle meat with flour.
  • Dip the cutlets into the egg and then into the cracker crumbs.
  • Place the breaded cutlets on a platter and let rest in the refridgerator for 15 minutes or longer.
  • This helps the breading stay on the cutlets.
  • If your in a hurry you can skip this step just make sure the meat is cooked on one side before turning or you will loose the breading.
  • Fry cutlet in oil until golden brown.
  • Place on a paper lined platter, and keep warm until ready to serve.
  • Heat gravy with mushrooms.
  • Serve cutlet and pass the gravy to put on top of the meat.

Try a classic American Deep South dish that fuses steak with southern-fried chicken. The steak is coated in a spice mix and fried for an indulgent dinner

2 fillet tail steaks (about 200g each), or 2 sirloin steaks, fat trimmed
2 eggs, beaten
1⁄2 tsp cayenne pepper
steamed greens and corn cobs, to serve (optional)
vegetable oil, for frying
4 tbsp plain flour
1 tbsp cornflour
1 tsp smoked paprika
1 tsp garlic powder
1 tsp dried thyme
1⁄2 tsp ground cumin
1⁄2 tsp ground cinnamon
1⁄2 tsp black pepper
1 tbsp flour
1 chicken stock cube
275ml milk
1 tbsp thyme leaves
squeeze of lemon juice

Steps:

  • Put the steaks on a board and bash with a rolling pin until about half the original thickness. Mix the eggs with the cayenne in a bowl. Combine the ingredients for the spice mix with a large pinch of salt in a separate shallow dish.
  • Dip the steaks into the egg, then the spice mix, turning to coat. Pour the oil into a large non-stick frying pan until the base of the pan is covered. Fry the steaks over a high heat for 2 mins until crisp, then turn and fry for 2 mins more. Transfer to a plate and keep warm.
  • If you're making the sauce, pour away all but 1 tbsp oil from the pan and stir in the flour, cooking until browned. Crumble in the stock cube. Slowly pour in the milk, whisking until smooth and fully incorporated. Reduce the heat to a simmer and cook for 4-5 mins. Season. Add the thyme and plenty of black pepper, then squeeze in the lemon juice to taste. Serve the steaks with the sauce, and greens and corn, if you like.

This is the best crust. I do a double dip as this is my DH favorite meal and it is all about the crust for him. The gravy is good, but not the best I have ever had. If you use 1 cup half n' half and 1 cup whole milk, of course the gravy will be better. This is also good the next day if you cool steaks(important as you don't want them to steam in the bag) then wrap steaks in paper towels first and bag, when heating up, put on a wire rack over a cookie sheet and into the oven at 350 for 25-30 mins. If you microwave it the crust will not be crispy.

5 teaspoons salt
1 teaspoon black pepper

Steps:

  • For the steaks: Measure the flour, 5 teaspoons salt, 1 teaspoon black pepper, and cayenne into a large shallow dish. In a second large shallow dish, beat the egg, baking powder, and baking soda; stir in the buttermilk (the mixture will bubble and foam).
  • Set a wire rack over a rimmed baking sheet. Pat the steaks dry with paper towels and sprinkle each side with salt and pepper to taste. Drop the steaks into the flour and shake the pan to coat. Shake excess flour from each steak, then, using tongs, dip the steaks into the egg mixture, turning to coat well and allowing the excess to drip off. Coat the steaks with flour again, shake off the excess, and place them on the wire rack.
  • Adjust an oven rack to the middle position, set a second wire rack over a second rimmed baking sheet, and place the sheet on the oven rack; heat the oven to 200 degrees. Line a large plate with a double layer of paper towels. Meanwhile, heat 1 inch of oil in a large (11-inch diameter) Dutch oven over medium-high heat to 375 degrees. Place three steaks in the oil and fry, turning once, until deep golden brown on each side, about 5 minutes (oil temperature will drop to around 335 degrees). Transfer the steaks to the paper towel-lined plate to drain, then transfer them to the wire rack in the oven. Bring the oil back to 375 degrees and repeat the cooking and draining process (use fresh paper towels) with the three remaining steaks.
  • For the gravy: Carefully pour the hot oil through a fine-mesh strainer into a clean pot. Return the browned bits from the strainer along with 2 tablespoons of frying oil back to the Dutch oven. Turn the heat to medium, add the onion and thyme, and cook until the onion has softened and is beginning to brown, 4 to 5 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the flour to the pan and stir until well combined and starting to dissolve, about 1 minute. Whisk in the broth, scraping any browned bits off the bottom of the pan. Whisk in the milk, salt, pepper, and cayenne; bring to a simmer over medium-high heat. Cook until thickened (gravy should have a loose consistency-it will thicken as it cools), about 5 minutes.
  • Transfer the chicken-fried steaks to individual plates. Spoon a generous amount of gravy over each steak. Serve immediately, placing any remaining gravy in a small bowl. **I serve this with no gravy on the steak, I put the gravy in a bowl on the side for each plate. This way the crust stays crispy and the person eating can pour it or dip their steak into it.
