FRENCH THREE ONION SOUP
We took the best part of this classic soup, all the sweet caramelized onions, and left behind all the fat. By steaming the onions to get the caramelization started, you can eliminate the need for almost all the fat. A small sprinkling of a good cheese at the end goes a long way.

Steps:
- Heat the butter and oil together in a Dutch oven over medium heat. Add the onions, shallots and leek, and season with salt and pepper, to taste. Stir to combine and cover. Cook, without stirring until the onions are soft and beginning to brown, about 10 to 15 minutes.
- Uncover, and continue to cook, stirring often, until the onions are a rich brown color and well caramelized, about 25 to 30 minutes. (If the onions begin to stick to the bottom of the pan or burn add about a 1 tablespoon water at a time.) Meanwhile, tie the reserved leek top with the thyme and rosemary using a piece of kitchen twine.
- Sprinkle the flour over the onions and cook, stirring, to cook out the raw flour taste, about 2 to 3 minutes. Stir in the broth and 2 cups water, scraping any browned bits from the bottom of the pan; add the herb bundle. Reduce the heat and simmer until thickened, 20 to 25 minutes. Stir in the Worcestershire and remove from the heat. Discard the herb bundle, stir in the sherry and season, to taste, with salt and pepper.
- Preheat the broiler. Divide the soup between 4 (16-ounce) oven proof bowls or ramekins and arrange them on a baking sheet. Top each bowl evenly with 2 baguette slices and top with the cheese. Put under the broiler until the cheese is melted and lightly browned, about 1 minute. Sprinkle with the chives and serve.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a large baking sheet with cooking spray.
- Snip the white ends off of the asparagus so that all of the stalks are roughly the same length. Lay the stalks on a baking sheet so that they are all touching.
- Drizzle asparagus stalks with olive oil. Shake the onion soup mix packet to mix up any settled ingredients; sprinkle over asparagus.
- Bake in the preheated oven until softened and lightly browned, 25 to 35 minutes.
- Remove from oven; sprinkle mozzarella cheese on top of the asparagus. Continue baking until cheese is melted and starting to brown, about 5 minutes more.

CREAM OF ASPARAGUS SOUP (CRèME D'ASPERGES)
This classic French soup is made with just six ingredients: butter, asparagus, onion, chicken stock, cream, and lemon juice.

Steps:
- Cut tips from 12 asparagus 1 1/2 inches from top and halve tips lengthwise if thick. Reserve for garnish.
- Cut stalks and all remaining asparagus into 1/2-inch pieces.
- Cook onion in 2 tablespoons butter in a 4-quart heavy pot over moderately low heat, stirring, until softened. Add asparagus pieces and salt and pepper to taste, then cook, stirring, 5 minutes. Add 5 cups broth and simmer, covered, until asparagus is very tender, 15 to 20 minutes.
- While soup simmers, cook reserved asparagus tips in boiling salted water until just tender, 3 to 4 minutes, then drain.
- Purée soup in batches in a blender until smooth, transferring to a bowl (use caution when blending hot liquids), and return to pan. Stir in crème fraîche, then add more broth to thin soup to desired consistency. Season with salt and pepper. Bring soup to a boil and whisk in remaining tablespoon butter.
- Add lemon juice and garnish with asparagus tips.
ASPARAGUS SOUP
Steps:
- 1. Melt the butter in the oil in a pot over medium-low heat. Add the onions and garlic; cook until tender, stirring occasionally, about 15 minutes. Add the broth; heat to boiling.
- 2. Trim woody ends off the asparagus. Reserve the tips, then cut the stalks into 1-inch pieces; add to broth. Add the carrots, parsley, tarragon, salt, pepper and cayenne to broth. Simmer, partially covered, until the vegetables are tender, about 45 to 50 minutes.
- 3. Puree in batches in a blender or a food processor, then strain soup back into the pot.
- 4. Before serving, add the asparagus tips and simmer over medium-low heat until the tips are tender and soup is hot, about 10 minutes.
- 5. Serve with a dollop of sour cream, if desired, and a sprinkling of diced tomato.
FRESH ASPARAGUS, ONION, POTATO SOUP
Easy and quick with the help of a food processor. This couldn't be easier and a great soup to make in a hurry. Serve as a starter for dinner or a main course with a side salad or sandwich. I make this often when my grocery store puts asparagus on sale or when they have it at the Farmers Market. It is easy on the budget and just comforting. You can top with some diced sauteed bacon, a toasted baguette or even some grated Monterey Jack cheese, which is creamy when it melts.

- Asparagus -- First cut off about 14 tips - not to long. These will be lightly cooked in the microwave for about 30 seconds, just to lightly blanch or to soften them up. They are just a garnish. Rough chop the remaining asparagus. They are going in the food processor, so no need to chop them too fine.
- Soup Base -- To the food processor, add the diced asparagus (not the reserved tips), the onion, garlic, potatoes and a little of the broth, just to allow it to puree. Continue pulsing until smooth or the consistency you like best.
- Cook -- To a medium size soup pot, add 1/2 the butter and melt on medium heat. Add the vegetables and cook on medium to medium low and slowly cook the vegetables. They will take about 15 minutes until cooked through.
- Sauce -- As the vegetables cook, add the remaining butter to a small measuring cup and melt in the microwave (just 10 seconds or so). Remove from the microwave and add the flour and sherry and stir well. Pour this mixture into the vegetables, along with the broth and mix to combine. Bring to medium heat until the soup begins to thicken. Slowly whisk in the cream. You can add as much cream as you like. Some make like a more creamy texture and other less. So start slow and add 1 cup cream and a time until it reaches the consistency you like. Check for salt and pepper seasoning, and add the dill. Cook another 5 minutes until heated through.
- Asparagus Tips -- Wrap the tips in a damp paper towel and cook for 20-30 seconds in the microwave on medium high until they are slightly tender.
- Serve -- Top each bowl of soup with a couple of the asparagus tips and a little of the monterey jack cheese. You can also add bacon bits or a toasted baguette, or even bagel chips. Anything you want.

ASPARAGUS-THREE ONION SOUP WITH CREME FRAICHE
A very lovely, pale green soup perfect for spring. If you can't get creme fraiche, there are recipes posted--such as Creme Fraiche Recipe #62515. Very nice at lunch with a sandwich or salad, or at dinner as a soup course served with frico. To make this soup truly elegant, strain through a fine mesh strainer before serving.

- Melt butter in heavy large deep-sided nonreactive pot over medium heat.
- Add shallot and garlic (if using) and leeks and saute until softened, about 5 minutes.
- Add asparagus and saute 2 minutes.
- Add broth and 1 teaspoon salt.
- Bring to simmer, reduce heat and simmer gently, uncovered, until vegetables are very tender, about 15 minutes.

- Stir in 1 cup creme fraiche.
- Season to taste with salt and fresh ground white pepper.
- If serving immediately, reheat soup a few minutes if necessary.
- Soup can be prepared 2 days ahead; just cool, cover and refrigerate and then stir over medium heat until heated through before serving.
- To serve, ladle soup into 8 soup bowls. Garnish each with a dollop of creme fraiche. Sprinkle with chives.

THREE ONION SOUP
This recipe was originally given to me by a French housewife on the Island of Crete in Greece many years ago. Over the years I have adapted/perfected it to fit my guests and my tastes. It is a hearty soup and can be used as a first course or a complete dinner on a cool fall or winter night.

- Add oil to dutch oven and heat.
- Add onion, green onions and leeks and saute until translucent.
- Mix in flour to make a roux and saute until mixture just starts to turn golden.
- Add broth, wine (if used) and nutmeg.
- At this point taste the broth for flavor and seasoning. If the broth used does not meet your expectations, add a chicken or beef bullion cube or 1/2 teaspoon of chicken or beef base.
- Taste the broth again and make adjustments until you are satisfied with the intensity of flavor and the seasoning.
- Stir and simmer on low heat for 25 minutes
- Spoon into bowls that can be placed under the broiler, top with french bread and cheese.
- Place bowls in the broiler and broil until cheese melts and is bubbly.

- Preheat oven to 350°F
- Butter an 8 cup baking dish with 1 tablespoon of butter.
- Make a layer in the baking dish, using a third each of the yellow onions, red onions and leeks.
- Sprinkle the layer sparingly with salt and pepper and top with the Havarti.
- Make another layer of the onions and leeks. Add a little more pepper.
- Top this layer with the Boursin.

- Melt the butter in a large pot over medium heat.
- Stir in the scallions and leek and cook about 8 minutes, until very soft, stirring often.
- Add the asparagus, potatoes and stock and increase the heat to high.
- When the soup reaches a simmer, reduce the heat to low and cook for 20 minutes.
- Remove from the heat and let cool for 5 minutes.
