SLOW-COOKER THREE CHEESE BROCCOLI SOUP



Slow-Cooker Three Cheese Broccoli Soup image

This crockpot broccoli cheese soup is a cheesy comfort food classic that's warm and satisfying for everyone in the family. With just fifteen minutes of prep, your slow cooker does all of the work for you, and the result is a delicious soup that will have everyone spooning up seconds.

1/4 cup butter
1 cup chopped onions
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1/4 cup Gold Medal™ all-purpose flour
1 can (12 oz) evaporated milk
1 carton (32 oz) Progresso™ chicken broth (4 cups)
1 bag (16 oz) frozen baby broccoli florets, thawed
8 oz Kraft™ Velveeta™ Original cheese product (from 16-oz box), cubed
1 1/2 cups shredded extra-sharp cheddar cheese (6 oz)
1 cup shredded Parmesan cheese (4 oz)
Additional shredded extra-sharp cheddar cheese, if desired

Steps:

  • Spray 4-quart slow cooker with cooking spray. In 2-quart saucepan, melt butter over medium-high heat. Add onions, pepper and salt; cook 3 to 4 minutes, stirring occasionally, until tender. Stir in flour. Cook 1 minute, stirring constantly. Gradually stir in evaporated milk until smooth. Pour mixture into slow cooker. Stir in broth and thawed broccoli.
  • Cover; cook on Low heat setting 4 to 4 1/2 hours or until hot but not simmering.
  • Add cheese cubes to slow cooker; stir until melted. Add 1 1/2 cups cheddar cheese and the Parmesan cheese; stir until melted. Sprinkle individual servings with additional cheddar cheese.

1 large onion, chopped (1 cup)
1/3 cup all-purpose flour
2 cups half-and-half
3 cups Progresso™ chicken broth (from 32-oz carton)
1 bag (12 oz) fresh broccoli florets, chopped
1 loaf (8 oz) prepared cheese product, cut into cubes
4 oz white Cheddar cheese, shredded (1 cup)
4 oz Gruyère cheese, shredded (1 cup)
1 cup freshly shredded Parmesan cheese (4 oz)
Additional freshly shredded Parmesan cheese, if desired

Steps:

  • Spray 3 1/2-quart slow cooker with cooking spray. In 1-quart saucepan, melt butter over medium-high heat. Cook onion in butter 3 minutes, stirring occasionally, until tender. Stir in flour; cook and stir 1 minute. Reduce heat to medium. Gradually stir in half-and-half; cook 3 to 5 minutes, stirring constantly, until thickened. Pour into slow cooker. Stir in broth and broccoli.
  • Cover; cook on Low heat setting 2 hours or until broccoli is tender.
  • Add cheese product, Cheddar cheese, Gruyère cheese and 1 cup Parmesan cheese; stir until cheeses are melted. Sprinkle individual servings with additional Parmesan cheese.

Not sure who to give credit to for this delcious recipe. One site says it is a copycat from Taste of Wisconsin. Anyway, it is easy to prepare and you might as well double it because it is very good!

6 tablespoons butter
1/3 cup flour
1/4 teaspoon garlic powder
1/4 teaspoon nutmeg, ground
1/8 teaspoon white pepper
1 dash thyme
1 (13 3/4 ounce) can chicken broth
1 cup milk
3 cups broccoli florets, bite-size
1 cup whipping cream
1/4 teaspoon Worcestershire sauce
1/8 teaspoon hot pepper sauce
1 cup cheddar cheese, shredded (4 oz)
1/2 cup havarti cheese, shredded (2 oz)
1/2 cup swiss cheese, shredded (2 oz)

Steps:

  • Melt butter in a 3-quart saucepan over low heat.
  • Blend in flour and seasonings.
  • Gradually add broth and milk; cook, stirring constantly, until thickened.
  • Stir in broccoli, simmer 10 minutes.
  • Remove from heat; stir in cream, Worcestershire sauce and hot pepper sauce.
  • Add cheeses; stir until melted.

This creamy soup made with frozen broccoli & three cheese sauce makes a delightful light lunch or evening meal - ready in 25 minutes.

1 bag (24 oz) frozen broccoli & three cheese sauce
3/4 cup vegetable broth
1/4 teaspoon freshly ground pepper
1 can (12 oz) evaporated fat-free milk
1/3 cup shredded reduced-fat sharp Cheddar cheese

Steps:

  • In 3-quart saucepan, mix broccoli and cheese sauce chips, broth, pepper and milk. Heat to boiling, stirring occasionally; reduce heat. Cover; simmer 10 minutes or until broccoli is crisp-tender and cheese is melted. Cool slightly.
  • In blender, place half of broccoli mixture. Cover; blend on high speed until smooth. Pour mixture into bowl. Repeat with remaining broccoli mixture. Return pureed broccoli mixture to saucepan; heat until hot. Top individual servings with cheese.
