Berry fine, indeed: The jammy, intensely fruity base of this raspberry cobbler -- which packs in five whole cups of berries -- is balanced by a light, sweet biscuit topping.

5 cups (1 pound 10 ounces) raspberries (red, black, or a combination of the two)
3/4 cup granulated sugar
2 tablespoons cornstarch
1/4 teaspoon coarse salt
1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
1/4 cup granulated sugar
1/4 teaspoon salt
6 tablespoons cold unsalted butter
3/4 cup heavy cream, plus more for brushing
Sanding sugar, for sprinkling (optional)

Steps:

  • Make the filling: Preheat oven to 375 degrees. Mix together raspberries, granulated sugar, cornstarch, and salt. Pour into a 9-inch square baking dish (2 inches deep).
  • Make the biscuit topping: Whisk together flour, baking powder, granulated sugar, and salt. Cut in butter until largest pieces are the size of small peas. Add cream, and use a fork to incorporate, stirring just until cream is absorbed (there should be lots of loose pieces).
  • Turn out dough onto a clean surface, and knead once or twice, gathering loose bits into ball. Pat dough to a 1 1/4-inch thickness. Cut into 9 rough squares, and place them on top of filling. Brush with cream, and sprinkle with sanding sugar.
  • Bake cobbler until bubbling in center and biscuit topping is golden brown and cooked through, about 1 hour (loosely tent with foil if biscuit topping gets too dark). Let stand at least 30 minutes before serving.

1 cup white sugar
2 ½ teaspoons baking powder
½ teaspoon salt
3 tablespoons butter, melted
.66 cup milk
1 teaspoon vanilla extract
1 egg, beaten
2 cups raspberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  • In a large bowl combine flour, sugar, baking powder and salt. Stir in butter, milk, vanilla and egg until smooth. Fold in raspberries. Pour into prepared pan.
  • Bake in preheated oven 35 to 40 minutes, until top is firm.

2/3 cup sugar
1/2 teaspoon lemon juice
2 tablespoons butter
1 1/2 cups bisquick biscuit mix
3 tablespoons melted butter
1 egg, beaten
1/2 cup milk
whipped cream

Steps:

  • In a mixing bowl, toss the raspberries with the sugar and lemon juice.
  • Spread berries out into a buttered 10x6 inch baking dish.
  • Dot with 2 tablespoons butter.
  • In another mixing bowl, add Bisquick, melted butter, egg, and milk; stir just to combine.
  • Drop spoonfuls of dough over fruit.
  • Bake for 30-35 minutes at 350 degrees or until a pick comes out clean (comes out clean from the biscuit dough, that is).
  • Serve warm with whipped cream.

1 ¼ cups white sugar
1 cup all-purpose flour
¾ cup milk
1 ½ teaspoons baking powder
2 ½ cups black raspberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour melted butter into an 11x7-inch baking dish.
  • Mix 1 cup sugar, flour, milk, and baking powder together in a bowl. Pour on top of melted butter in the baking dish, making sure not to stir. Place black raspberries on top of mixture, making sure not to stir. Top with remaining 1/4 cup sugar.
  • Bake in the preheated oven until crust is browned and set, 30 to 40 minutes.

1 lb. frozen raspberries, thawed and drained of excess water
3/4 cup sugar
1 tbsp. cornstarch
1 tbsp. sherry liqueur
1/2 tsp. lemon zest
juicy cobbler dough, recipe follows
1 tbsp. butter, softened
one 12 x 8 inch baking dish

Steps:

  • 1. Preheat oven to 375
  • 2. In large bowl, mix together raspberries, sugar, cornstarch, sherry liqueur and lemon zest. Set aside for 30 minutes.
  • 3. Prepare cobbler dough according to directions
  • 4. Butter baking dish and fill evenly with half the cobbler dough.
  • 5. Fill baking dish 3/4 full with raspberry and liqueur mixture, then fill rest of dish with remaining cobbler dough.
  • 6. Bake for 35 minutes. Serve at once. Serves 8

Juicy Cobbler Dough: 1 stick, unsalted butter, cut into cubes, 4 oz 1 cup sugar 1 cup flour 1 T. baking powder 1 T. pure vanilla extract 1/2 t. salt 1 cup whole milk Using a hand or stand mixer, mix together butter and sugar on low speed until creamy. In another bowl, mix together flour and baking powder. Add the vanilla extract, salt, milk and half the flour mixture to mixer, continuing to mix on low speed. Add remaining flour mixture and mix until well blended. Cover bowl with plastic wrap and refrigerate for 20 minutes before using. To use juicy cobbler dough in a recipe, scoop out with a large spoon and use according to instructions. This cobbler works great in recipes that call for baking fruit without cooking it first. 1/4 cup sugar
1 teaspoon cornstarch
6 tablespoons butter

Steps:

  • In a bowl combine the 1/4 cup sugar and cornstarch. Then mix in the berries. Place the berries in a 13 x 9 baking pan.

  • Spoon the batter over top of the berries, using a spatula to smooth it out.

1 tablespoon fresh lemon juice

1 cup sugar
1 cup milk

Steps:

  • In a bowl, mix the peaches, raspberries, 1/4 cup sugar, cinnamon, and lemon juice. Allow to sit while proceeding with remaining steps.
  • Preheat oven to 350 degrees F (175 degrees C). Melt the butter in a 9x13 inch glass baking dish in the preheating oven, and evenly coat dish. Remove from heat.
