1-1/2 lb. ground beef
1/2 cup KRAFT Original Barbecue Sauce, divided
6 KRAFT Singles
6 kaiser rolls, split, toasted
6 lettuce leaves
12 tomato slices
12 CLAUSSEN Kosher Dill Burger Slices

Steps:

  • Preheat grill to medium heat. Mix meat and 1/4 cup of the barbecue sauce. Shape into 6 patties.
  • Grill patties 6 to 8 minutes on each side or until cooked through (160°F), turning and brushing occasionally with the remaining 1/4 cup barbecue sauce for the last 5 minutes of the grilling time. Top each patty with 1 Singles; continue grilling 2 minutes or until Singles begin to melt.
  • Place lettuce and tomatoes on bottom halves of rolls; top with burgers, pickles and tops of rolls.

1 medium onion
1 medium green bell pepper
12 ounces lager of your choice
1 cup mayonnaise
1 habanero pepper, rough chopped and seeds removed
1 teaspoon garlic powder
1 teaspoon cayenne pepper
2 pounds 80/20 ground chuck
1 teaspoon salt
1 teaspoon ground black pepper
4 hamburger buns
1 head iceberg lettuce
1 medium tomato, sliced
1 cup shredded Monterrey Jack cheese

Steps:

  • Julienne onion and green bell pepper and allow to marinate in lager for a minimum of 1 hour or up to 24 hours.
  • In a blender or food processor add mayonnaise, habanero pepper, garlic powder and cayenne pepper. Blend until smooth for spicy mayo.
  • Meanwhile, form ground chuck into 4 patties. (Each patty should be 1/2 pound.) Sprinkle with salt and pepper. Cook over medium-high heat using a griddle or grill. (For a medium burger, cook 4 minutes per side.) Transfer to a plate.
  • Add onions and bell peppers to hot griddle or grill and cook until cooked through, 3 minutes.
  • Toast buns until browned.
  • Put a spoon of spicy mayo on each bun. Add lettuce, tomato, grilled onions and grilled bell peppers. Top with patties, then add 1/4 cup Monterrey Jack to each.

For the barbecue sauce:
2 tablespoons vegetable oil
1 red onion, chopped
2 cloves garlic, chopped
1 1/2 tablespoons chili powder
3/4 cup ketchup
1/4 cup apricot preserves
3 tablespoons yellow mustard
3 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
For the burgers:
2 1/2 pounds ground beef chuck
Kosher salt and freshly ground pepper
1 red onion, sliced into rings
1 tablespoon vegetable oil
6 slices monterey jack or pepper jack cheese
6 sesame seed hamburger buns, split
2 avocados, sliced

Steps:

  • Make the barbecue sauce: Heat the vegetable oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the chili powder and cook, stirring, until toasted, about 1 minute. Stir in the ketchup, preserves, mustard, vinegar, soy sauce, Worcestershire sauce and 1/2 cup water. Bring to a simmer and cook until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth; let cool to room temperature.
  • Make the burgers: Combine the ground beef and 3 tablespoons of the prepared barbecue sauce in a bowl; mix with your hands until just combined. Form the meat into six 1/2-inch-thick patties; season both sides with salt and pepper.
  • Preheat a grill to medium. Toss the onion with 1 tablespoon of the barbecue sauce and the vegetable oil. Grill (use a grill basket if you have one), turning occasionally, until lightly charred, about 8 minutes.
  • Transfer 1/2 cup of the remaining barbecue sauce to a separate bowl for brushing. Increase the grill temperature to medium high and grill the patties, brushing with the barbecue sauce and flipping occasionally, about 8 minutes for medium rare; top with the cheese during the last minute and cover to melt. Toast the buns on the grill. Serve the burgers on the buns; top with the grilled onions, avocado slices and more barbecue sauce.

450g beef mince (ideally 15-20% fat)
2 tbsp Worcestershire sauce
8 cheddar or Red Leicester slices
1 tbsp chipotle paste
5 tbsp tomato ketchup
2 tbsp mayonnaise
4 large soft brioche buns (available in Marks & Spencer and Waitrose) or burger buns, halved
4 thick leaves iceberg lettuces
4 thick slices beefsteak tomatoes
4 very thin slices red onions
16 Bread & butter pickles (see Goes well with) or 2 gherkins , thinly sliced

Steps:

  • Put the meat and Worcestershire sauce in a bowl and season with black pepper and 1 generous tsp salt. Mix together well, then shape the meat into 4 thin, flat burgers. Chill until needed. Can be made a day ahead. Combine the chipotle paste, ketchup and mayonnaise in a bowl to make a sauce.
  • Heat a gas or charcoal barbecue to high (or you can use a griddle pan on the hob). Cook the burgers over direct heat for 2 mins each side or until grill marks appear. Top each with 2 slices of cheese and cook for another 30 secs or until melted, then remove from the heat. Toast the buns for a few seconds on the cut-side.
  • Spread a little of the spicy sauce on the base of each bun and top with lettuce, tomato, a burger patty, onion and pickles. Top with the bun lid and devour immediately.
