cracked ice
2 fluid ounces gin
1 teaspoon simple syrup
½ fluid ounce lemon juice
5 fluid ounces brut champagne, chilled
1 slice lemon

Steps:

  • Chill cocktail shaker and glass (champagne flute or collins glass) in the freezer. Add ice to shaker. Pour gin, simple syrup, and lemon juice into shaker. Shake well. Fill chilled glass half full of ice, then strain cocktail into the glass. Top with champagne and garnish with a lemon slice.

1/2 cup (4 ounces) VS or VSOP Cognac
1/2 cup (4 ounces) simple syrup
1/3 cup (3 ounces) freshly squeezed lemon juice (2 lemons)
2 cups ice cubes
1 (750 ml) bottle good Champagne, chilled
4 long strips of lemon zest

Steps:

  • Pour the Cognac, simple syrup, and lemon juice into a cocktail shaker and add the ice. Shake for at least 30 seconds (it's longer than you think!). Pour the mixture into 4 Champagne flutes to fill each glass about two-thirds full. Fill the glasses with Champagne, garnish with the lemon zest, and serve ice cold.

4 ounces Champagne
Garnish: lemon twist

Steps:

  • Gather the ingredients.
  • In a cocktail shaker filled with ice cubes, pour the gin or cognac, simple syrup, and lemon juice.
  • Shake well .
  • Strain into a chilled Champagne flute that is at least half full of ice.
  • Slowly fill with Champagne.

6 raw sugar or brown sugar cubes
1 orange
1 lemon
6 ounces gin
1 bottle sparkling wine

Steps:

  • Put a sugar cube in each of 6 Champagne glasses. Use a vegetable peeler to remove a few pieces of orange peel. Trace around the rim of each Champagne glass with the orange peel to give it that hint of orange. Halve the orange and squeeze some juice into each glass. Add a squeeze of lemon juice to each glass also.
  • Add 1-ounce of gin to each glass. Stir to blend and top with sparkling wine. Serve immediately. This can be made in a pitcher as well.

50ml gin
champagne
ice
lemon zest

Steps:

  • Pour the lemon juice, sugar syrup and gin into a cocktail shaker then fill up with ice.
  • Shake well then strain into a champagne flute. Top with a little champagne, leave to settle (as it will bubble up) then fill up with more champagne. Swirl gently with a cocktail stirrer then garnish with a strip of lemon zest if you like.
