250 g Whitebait (Main)
3 Eggs, 2 yolks and 3 whites
1 serving Butter, to fry
1 serving Olive oil, to fry
1 serving Toast bread slices, to serve
1 squeeze Lemon juice, to serve

Steps:

  • Mix whitebait and yolks and a little salt and pepper. Whisk the whites until almost firm, but not dry, and fold into the whitebait.
  • Heat up a pan, adding some butter and olive oil, and dollop spoonfuls of the mixture into the sizzling fat.
  • Fry until golden on both sides then eat on hot buttered toast, or simply just eat with your fingers with lemon juice squeezed over them.

NZ whitebait season is now open and what better way to celebrate being a Kiwi than NZ whitebait fritters! Whitebait are highly prized little fishes collected en masse from New Zealand rivers and eaten whole in buttery, whitebait fritters. Whitebait is most commonly served in fritters. In this NZ whitebait fritters recipe, we've used a small amount of flour, which I think gives the best result. But fritters can be made using just egg, or egg white, more like an omelette. FYI, whitebait fritters remain one of the most asked for finger food items at parties and events. People can't get enough of them - so make wee ones for a BBQ platter, or try serving fritters with asparagus and a hollandaise sauce for a main meal. These are the best whitebait fritters, hands down. This whitebait recipe is easy as!

250 g NZ whitebait (drained and gently washed)
1/2 cup self raising flour
2 eggs (lightly beaten)
1 tablespoon water
1 spring onion (slice very thinly)
1 juice of one lemon (or lemon pepper seasoning if you have no fresh lemons)
salt and freshly ground pepper
1 tablespoon butter
a handful parsley (chives, cress and rocket for garnish (we love Superb Herb))

Steps:

  • Drain your whitebait in a colander. Set aside.
  • In another bowl, sieve the flour. Make a well and add the beaten eggs with a dash of water, then mix into a smooth, thick batter.
  • Now gently fold in the whitebait, sliced spring onions and lemon juice (or lemon pepper). Season the mixture with salt and pepper.
  • Melt butter in a good quality, heavy pan and place a large spoonful of the fritter mixture in the pan. Shape into round fritters and cook until the egg is set or until golden on one side (use egg-flip to peek under). You do not need to wait for the fish to go white. Then gently flip over as you would an omelette and cook the other side for 20 seconds.

Whitebait is a bit of a delicacy in New Zealand, and whitebait from the West Coast of the South Island is the best. The idea is to have more whitebait than batter, however it you go to a restaurant you will probably find that it's the other way round! West Coasters also serve them with mint sauce which is very tasty. Another thing to do is heat the oven to 50degrees C, and butter 4 slices of white bread. Put these on a plate in the oven (butter side up) and as each whitebait pattie is cooked put them on the bread. Us kids used to fight over the bread at the end as it tastes yummy(strange but true).

3 eggs, beaten
1/2 cup milk
3/4 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
500 g whitebait
2 tablespoons light vegetable oil (for frying) or 2 tablespoons butter (for frying)

Steps:

  • Beat the eggs in a large bowl, then mix in the milk.
  • Season with salt & pepper to taste.
  • Lightly beat through the flour & baking powder to ensure there are no lumps. Add the flour slowly - the mixture should be thick & runny but not too gloopy.
  • In a colander, rinse the whitebait and pick out any river stones or other debris.
  • Drain, and mix into the egg mixture until well combined.
  • Heat a frying pan on medium-high heat, and once heated, add the butter/olive oil.
  • Drop in dessert-spoonfuls of the whitebait mixture, and cook until the pattie is set (& starts to go golden on the underside). The whitebait will normally have gone white at this stage.
  • Turn, and cook on the other side until golden.
  • Keep warm in the oven until ready to serve, in my house they get eaten as fast as they are cooked!
