Thai Style Rice Crackers With Persimmon Sambal Recipes

SAMBAL SHRIMP

2 cups sambal oelek (ground fresh chili paste)
1/2 cup freshly squeezed lime juice
1/2 cup olive oil
1/2 cup sugar
1/4 cup minced garlic
1/4 cup minced fresh ginger
1/4 cup mirin
2 tablespoons Vietnamese fish sauce (nuoc nam)
2 tablespoons dark sesame oil
3 pounds large shrimp (about 30 shrimp), peeled and deveined, head and tail segments intact
2 tablespoons fresh cilantro, roughly chopped
2 tablespoons fresh mint, roughly chopped

Steps:

  • In a medium bowl, combine the sambal oelek, lime juice, olive oil, sugar, garlic, ginger, mirin, fish sauce and sesame oil. Whisk well to combine. Allow the marinade to sit at room temperature for at least 1 hour and up to 4 hours.
  • Place the shrimp in a 1-gallon resealable plastic bag, and add all but 1 /2 cup of the marinade to the bag. Allow the shrimp to marinate at room temperature for 1 hour.
  • Preheat a grill to medium-high and oil the grill.
  • Place the shrimp on the grill and cook until they are just cooked through, 2 to 2 1/2 minutes per side. Transfer the cooked shrimp to a large bowl. Add the reserved 1/2 cup marinade, the cilantro and the mint and toss well to combine. Transfer the shrimp to a large serving bowl or platter, and serve immediately.

WOK-FIRED OKRA SAMBAL

2 tablespoons peanut or vegetable oil, plus more for frying
1/4 cup sambal oelek (Asian chili paste)
Kosher salt
1/2 cup sugar
2 pounds okra, trimmed and cut on the bias into 2-to-3-inch pieces
1 1/2 teaspoons oyster sauce
Freshly ground pepper
1 to 2 tablespoons fried shallots
Julienned red fresno or jalapeno chile pepper, for topping

Steps:

  • Heat the peanut oil in a wok or skillet over medium heat. Add the chili paste and fry, stirring, about 3 minutes. Add 2 tablespoons salt and all but 1 teaspoon of the sugar and cook until the sugar begins to caramelize, about 5 minutes.
  • Heat about 4 inches peanut oil in a medium pot over medium-high heat until a deep-fry thermometer registers 375 degrees F. Working in batches, fry the okra until bright green, about 30 seconds, then remove with a wire skimmer or slotted spoon and shake off the excess oil. Add the okra to the wok with the chili sauce and toss about 1 minute. Add the oyster sauce, 1/2 teaspoon pepper and the remaining 1 teaspoon sugar and toss 30 more seconds. Transfer to a serving bowl and top with the shallots and chile pepper.

2 quarts water
1/2 cup fresh ginger, sliced thin
3 cinnamon sticks
1 1/2 cups sugar
1 cup dried persimmons, sliced
1/2 cup pine nuts

Steps:

  • In a pot, combine the water, ginger, and cinnamon and let simmer for 1/2 hour. Remove from heat and strain the liquid. Stir in the sugar and persimmons. Cool and let sit in the refrigerator overnight. Serve well chilled with a teaspoon of pine nuts floating in each cup.

  • Cook the jasmine rice with 1 1/2 cup water (about 50% more water than when making plain rice). After the rice has been cooked, make sure it is quite soft and sticks to each other easily. If not, you can add a bit more water and cook it a bit longer.
  • With wet fingers, press a small ball of sticky rice into a ring mold or whatever cookie cutter shape you like. Make the rice as thin as you can without creating big holes in the rice cakes. Let dry completely then fry them as per instructions above. (These will take less time to dry than the rice crackers.) Note: I have not tried to broil these, so let me know how it goes if you try it!
  • Boil black sticky rice in plenty of water for about 20 minutes or until the rice is fully cooked and is no longer crunchy. Drain.
