EASY THAI CHILI



Easy Thai Chili image

A simple and easy weeknight chili recipe with a spicy Asian twist.

1 lb lean ground turkey
2 tablespoons olive oil
1 tablespoon red curry paste
1 small sweet potato, peeled and chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1 quart chicken stock
14 oz diced tomatoes
1 cup coconut milk
Salt and pepper
Lime wedges
Fresh cilantro

Steps:

  • In a large pot, add olive oil over medium heat. Add turkey and brown turkey, breaking it up as it cooks. Cook for 5-6 minutes until turkey is cooked through. Add curry paste to the turkey and stir it in.
  • Cook for a minute, then add the chicken stock along with chopped sweet potato and peppers. Add diced tomatoes, cover, and bring chili to a simmer. Simmer for 8-10 minutes until sweet potatoes are soft.
  • Stir in coconut milk and season chili with salt and pepper.
  • Serve finished chili with fresh cilantro and lime wedges.

2 (5 ounce) cans turkey meat, drained
2 (15 ounce) cans kidney beans
2 (14.5 ounce) cans Italian-style stewed tomatoes
2 (1.25 ounce) packages chili seasoning mix
1 (4 ounce) can green chile peppers
1 (8 ounce) can tomato sauce
1 onion, diced
1 cup water

Steps:

  • In a slow cooker, combine turkey, beans, tomatoes, chili seasoning, chile peppers, tomato sauce, onion and water. Cook on low 3 to 4 hours. Serve hot.

2 Tbsp olive oil
1/2 c carrots, julienned
1/2 c onion, chopped
1 lb ground turkey
13.5 oz can light coconut milk
1/2 tsp cumin, ground
1 tsp cardamom, ground
2 tsp coriander, ground & husks sifted out (may use less if coriander is fresh and/or pre-ground)
1 tsp fresh ginger paste
1/2 Tbsp fresh lemongrass paste
3/4 tsp salt
pepper, to taste
1 tsp garlic, minced
15.5 oz can great northern beans, rinsed & drained

Steps:

  • In a Dutch oven or other large pot, heat oil over medium heat. Add carrots and onion and saute until softened. Add the ground turkey and cook until browned, breaking into bite-sized pieces. Add remaining ingredients. Bring to a simmer and turn heat to low. Simmer until thickened to desired consistency. SLOW COOKER: Cook carrots, onion, and turkey as above. Add the carrots, onion, turkey, and remaining ingredients to slow cooker. Cook on LOW, removing lid toward the end of cooking to thicken sauce.

2 lbs ground turkey or 2 lbs ground beef
1 large onion, diced
3 garlic cloves
1 (796 ml) can plum tomatoes
1 (700 ml) jar tomato sauce
1 (540 ml) can kidney beans
0.5 (220 ml) can black beans
3 tablespoons hot chili sauce
1 teaspoon paprika
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon cayenne
1 teaspoon salt

Steps:

  • Saute onions and garlic briefly.
  • Add ground meat and fry until cooked.
  • Add plum tomatoes, sauce, and beans. Stir until blended.
  • Add all spices and stir until blended.
  • Reduce heat and simmer for 1.5-2 hours.
  • Serve on top of corn chips or with corn muffins on the side!
