8 TB light or low sodium soy sauce
4 TB Asian oyster sauce
2 TB palm sugar (known for its deep caramel flavor; if you can't find it, sub with light brown sugar)
2 tsp dry crushed red pepper
4-6 TB olive oil (or cooking oil of your choice)
1 large onion (chopped)
10 cloves fresh garlic (chopped)
4 lbs boneless (skinless chicken thighs, towel-dried and cut into 1 1/2 inch pieces)
2 cups Thai basil leaves (no stems)
1 large red bell pepper (seeded and thinly sliced)
Garnishes: Slivers of lime (Sriracha)

Steps:

  • Make the Sauce: In a bowl, hand-whisk together the sauce ingredients until combined. Can be made ahead of time, covered, and chilled until ready to use.
  • Cook the Dish: In a large heavy pan or wok, heat oil over medium high heat until hot. Add onion and stir until translucent, 2-3 min. Add garlic and stir 1 more minute. Add chicken, stirring for 2 min or just until no longer pink in center. Add red bell peppers, stirring 2 more minutes.
  • Add prepared sauce, stirring 1 minute or until heated through and fully incorporated. Turn heat off. Gently stir in the basil leaves. Serve with your choice of white or brown rice, spooning excess sauce over individual plates.

1 1/4 pounds boneless skinless chicken breast (cut into 1 inch pieces)
1 can coconut milk
1 1/2 tablespoons brown sugar
1 teaspoon red curry paste (or more if you prefer it spicy)
1 inch knob of ginger (peeled and cut into 3 slices)
the zest of one lime
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons chopped cilantro
2 tablespoons chopped peanuts
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 1/2 tablespoons brown sugar
2 tablespoons lime juice
1 tablespoon sesame oil
1/2 teaspoon minced garlic
1/4 cup warm water

Steps:

  • Place the coconut milk, brown sugar, curry pasta, ginger, lime zest, salt and pepper in a resealable freezer bag. Seal and shake to combine.
  • Place the chicken in the bag. Marinate in the refrigerator for at least one hour or up to 8 hours.
  • Remove the chicken from the marinade and thread onto skewers.
  • Preheat the grill or a grill pan to medium heat. Place the chicken skewers on the grill and cook for 4-5 minutes on each side or until cooked through.
  • Sprinkle the cilantro and peanuts on top of the chicken and serve with peanut sauce.

1 pound boneless skinless chicken thighs or breasts, thinly sliced
2 tablespoons corn starch or flour
1 teaspoon ground turmeric
1 teaspoon ground ginger
1-2 teaspoons black pepper, using more or less to your taste
3 tablespoons sesame oil or extra virgin olive oil
1/4 cup honey
1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
1/2 teaspoon crushed red pepper flakes
8 ounces rice noodles
2 medium shallots, sliced or chopped
2 small heads broccoli, chopped
1/2 cup raw cashews
zest and juice of 1 lime
1/2 cup fresh basil or cilantro, roughly chopped
3 tablespoons salted butter
3-4 cloves garlic finely chopped or grated
1/3 cup canned coconut milk

Steps:

  • 1. In a medium bowl, toss together the chicken, cornstarch, turmeric, ginger, black pepper, and 1 tablespoon oil.2. In a glass jar, combine the honey, soy sauce, rice vinegar, red pepper flakes, and 1/4 cup water. 3. Cook rice noodles according to packaged directions. 4. Heat the remaining 2 tablespoons oil in a large skillet over medium heat. When the oil shimmers, add the chicken and brown all over, until it becomes crispy, about 5 minutes. Add the shallots, broccoli, and cashews, cook another 2-3 minutes, until the broccoli is charring. Pour in the honey/soy sauce mix. Bring the sauce to a boil over medium-high heat and cook until the sauce coats the chicken, about 5 minutes. Remove from the heat and stir in the lime zest, lime juice, and the basil.5. Meanwhile, heat a medium skillet over medium heat. Add the butter, garlic, and a pinch of red pepper flakes, if desired. Cook until the garlic begins to caramelize and turn light golden brown, 1 to 2 minutes. Stir in the coconut milk, cooking 3-5 minutes, until warmed through. Remove from the heat and toss the noodles with the sauce. 6. To serve, divide the noodles among bowls and top with chicken. Serve with additional basil and limes. Enjoy!

3 cloves garlic, crushed (or more)
2 teaspoons lemon juice or 2 teaspoons balsamic vinegar
1/4 cup soy sauce
1/4 cup vegetable oil
6 boneless skinless chicken breasts, cubed

Steps:

  • In a large glass or ceramic bowl or plastic bag combine the marinade ingredients: garlic, lemon juice or balsamic vinegar, soy sauce, vegetable oil, ginger, black pepper, sugar, coriander and jalapenos, if using.
  • Add chicken cubes and refrigerate for four to eight hours.
  • Drain.
  • Discard marinade.
  • On long skewers thread chicken pieces.
  • Grill over medium-hot flames for about 8 minutes, until juices run clear when chicken is pricked.

24 x 12-15cm wooden skewer s
2 tsp coriander seed
500g minced pork
1 garlic clove , crushed
2cm piece of ginger , peeled and finely chopped
1stalk of lemongrass , finely chopped
20g pack fresh coriander , roughly chopped
2-3 tsp Thai red curry paste
2 tsp tomato purée
200ml carton coconut cream
1 tsp light muscovado sugar
¼ tsp Thai fish sauce or soy sauce
½ lime , juice only

Steps:

  • Soak the skewers in warm water. Put the dip ingredients into a saucepan, bring to the boil and simmer for 5 minutes until slightly thickened. Pour into small serving bowls.
  • Crush the coriander seeds with a pestle and mortar. Tip them into a food processor and add the pork, garlic, ginger, lemongrass, coriander, ½ tsp sea salt and plenty of black pepper. Pulse until the mix becomes pasty.
  • Preheat the grill to medium high. Using wet hands, divide and shape the mixture into 24 equal-size sausage shapes around each skewer.
  • Put the brochettes on an oiled baking sheet and grill for 7-10 minutes, turning until golden. Serve on a plate, with the dip in small bowls.

1 chicken breast, sliced into thin bite-size pieces (3/4 cup)
1/4 cup garlic cloves, smashed
3/4 teaspoon palm sugar (or white sugar)
3/4 teaspoon white pepper powder or :black pepper powder: (or mix 'em!)
1 3/4 teaspoons fish sauce
1-2 tablespoons oil (enough to coat bottom of pan)
2-3 tablespoons water
1 teaspoon coriander leaves (for garnish)

Steps:

  • Rinse and cut the chicken into bite-sized pieces (see picture). Smash the garlic lightly with the side of a knife. Remove the skin if not using thin-skinned Thai garlic. Heat the oil in a pan until very hot. Add the garlic and keep stirring so it doesn't burn. When (very) lightly browned, add the chicken (or meat, or whatever you're using!). Cook until done (not raw). If it gets dry and sticky, add some water to the pan about 1-2 tablespoons at a time. Add the palm sugar, fish sauce and pepper. You may need to add a bit more water here so that it mixes well. Mix well and serve on rice (for a one-dish meal), or in a plate (to share with friends). Garnish with cilantro. Note: If making a vegetarian version - pre-fry the tofu first until browned, remove, then start with step 2. Substitute the fish sauce for :white soy sauce:.

I served mine with a low fat coleslaw, boiled rice cooked in vegetable stock with fresh coriander and spring onions and a vegetable curry.

2 skinless chicken breasts (6oz, 175g)
6 fresh bay leaves
1/2 medium red onion, peeled, halved and separated into 8 layers
1/2 large yellow pepper, deseeded and cut into 8
1 teaspoon peanut oil or 1 teaspoon other flavourless oil
salt
fresh ground black pepper
1 garlic clove
1 teaspoon peeled grated fresh ginger
1 medium green chili, deeseded
1 tablespoon fresh coriander leaves (cilantro)
1 teaspoon ground turmeric
6 fluid ounces buttermilk
salt & fresh ground pepper
wooden skewer

Steps:

  • To make the marinade.
  • Crush garlic with 1/2 teaspoon of salt until it becomes a puree. Add the grated ginger. Chop the chilie and coriander add to ginger and garlic with turmeric and black pepper. Mix with the buttermilk.
  • Now cut each breast into five pieces, then add to marinade and mix. Cover the bowl with clingfilm and place in the fridge for a few hours or overnight.
  • 30 minutes before cooking soak the wooden skewers for 30 minutes in hot water.
  • Preheat the grill to its highest setting for 10 minutes.
  • Dry the skewers and thread half a bay leaf on to each one, then a piece of chicken, a piece of onion and a piece of pepper. carry on alternating the bay leaf , chicken, onion and pepper until you have threaded five pieces of chicken on each skewer, finishing with half a bay leaf on each. Season with salt and pepper and brush the vegetables with a tiny amount of oil. Lay the brochettes on the grill rack about 4 inches from the heat source. Brush liberally with remaining marinade and grill them for 10 minutes, before turning them over and grilling for a another 10 minutes. Brushing with more marinade as they cook and watching them carefully so they do not burn.

4 limes , juice, plus zest of 1
1 bunch coriander , stalks and leaves chopped separately
1 ½ tsp sugar
¾ tsp fish sauce
1 tbsp olive or rapeseed oil
2 garlic cloves , crushed
1 tsp ginger paste
1 ½ tsp Thai curry paste
8 skinless chicken breasts
sweet chilli sauce , to serve

Steps:

  • In a bowl, mix the lime juice, zest, coriander stalks, sugar, fish sauce, oil, garlic, ginger and curry paste together.
  • Slice each chicken breasts into 4 strips lengthways and coat with the marinade. Refrigerate for at least 2 hours and up to half a day. Soak 32 wooden brochette sticks in water for at least half an hour.
  • Thread each strip onto a wooden brochette stick, weaving in and out as if you're sewing.
  • Preheat the grill or barbecue and cook the chicken for 4 - 5 minutes on each side or until cooked through, in batches.
  • Arrange on a platter. Serve with a pot of sweet chilli sauce and a sprinkling of coriander leaves.
