HOLIDAY SANDWICH COOKIES

4 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
3/4 cup confectioners' sugar substitute, preferably Swerve
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon lemon zest (from 1/2 large lemon)
2 cups blanched almond flour (not superfine)
1/4 cup coconut flour, plus extra for dipping cutters into
1 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, at room temperature
2 cups confectioners' sugar substitute, preferably Swerve
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
Red and green food gel pastes, for tinting
Crushed sugar-free peppermint candy canes
Red and green sugar-free sprinkles
Red and green sugar-free sanding "sugar"

Steps:

  • For the cookies: Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Beat the cream cheese, butter and confectioners' sugar together in a large mixing bowl with a handheld mixer until light and fluffy, 2 to 3 minutes. Scrape down the bowl. Add the egg, vanilla and lemon zest and beat until smooth, another minute. Scrape down the bowl again. Add the almond and coconut flours and the salt. Beat until a slightly sticky dough forms. Halve the dough and shape each into a flat disc. Wrap each in plastic and chill in the freezer until firm, about 30 minutes.
  • Work with one disc of chilled dough at a time, leaving the other in the freezer. Place the dough between 2 sheets of parchment paper and roll to 1/4-inch thickness. Carefully peel off the top sheet of parchment. Dip a 3-inch round cookie cutter into some coconut flour to help keep it from sticking to the dough and cut the dough into rounds. (The dough is very soft, so you will likely have to leave the cookies in place and scrape away the surrounding dough.) If you like, use mini cookie cutters to cut a hole from the middles of the rounds for half of the rounds. The dough will probably be too soft to transfer the cookies, so slide the parchment paper with the rounds onto a baking sheet. Gather the scraps of dough together and flatten into another round. Wrap the disc of dough in plastic, and chill in the freezer. Place the baking sheet of cut cookies into the freezer to chill for 10 to 15 minutes. Meanwhile, repeat the process with the second disc of chilled dough. Reroll the scraps and cut out more cookies. (You should be able to cut a total of 18 to 20 rounds.)
  • Bake one sheet of cookies at a time for 5 minutes. Turn the oven down to 300 degrees F and continue to bake, rotating the pan halfway through, until lightly golden on the edges, about another 10 minutes. Transfer the baking sheet to a rack. (Do not try to transfer the cookies from the baking sheet until completely cooled.) Increase the oven to 350 degrees F and repeat with the other cookies.
  • For the frosting: With a handheld mixer, beat the butter in a bowl until light and airy. Add the confectioners' sugar, vanilla and salt. Mix on low speed until smooth. Transfer a third of the frosting to a piping bag and set aside. Divide the remaining frosting evenly between 2 bowls. Add about 1/2 teaspoon red gel paste to one bowl and 1/2 teaspoon green gel paste to the other. Mix until the color is evenly distributed, adding more gel as desired. Transfer to two more piping bags. Cut off the tips of the bags when ready to assemble.
  • To assemble: Pair off the cookie rounds into tops and bottoms, using any cookies with cutouts as tops. Arrange the flat sides of the bottom cookies facing up. Pipe about 3 tablespoons frosting onto the bottom cookies. Smooth the frosting with an offset spatula. Top with the flat sides of the top cookies facing down, pressing gently so that the frosting is pushed to the edges of the cookies.
  • Put the crushed peppermint candy and sprinkles on separate plates. Place the sanding "sugar" in a bowl. Roll the edges of each cookie in the candy or sprinkles, or spoon the sugar over the frosting. Sprinkle any cut-out windows with more decorations as desired.

1 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 16 oz container)
2 tablespoons Betty Crocker™ candy sprinkles

Steps:

  • Heat oven to 350°F. In medium bowl, stir cookie mix and flour until well blended. Add butter, egg and almond extract; stir until soft dough forms.
  • Roll dough into 84 (1/2-inch) balls. Roll each ball in sugar. Place balls 1 inch apart on ungreased cookie sheet. Bake 7 to 9 minutes or until set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
  • For each sandwich cookie, spread 1 teaspoon frosting on bottom of 1 cooled cookie. Top with second cookie, bottom side down; gently press cookies together. Roll sides of sandwich cookie in sprinkles.

3/4 cup butter, softened
1/2 cup sugar
1 large egg yolk, room temperature
1-1/2 cups all-purpose flour
2 tablespoons raspberry or strawberry preserves
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar. Add egg yolk; mix well. Stir in the flour by hand. On a lightly floured surface, gently knead dough for 2-3 minutes or until thoroughly combined. , Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Using the end of a wooden spoon handle, make an indention in the center of each. Fill each with 1/4 teaspoon preserves. , Bake for 13-15 minutes or until edges are lightly browned. Remove to wire racks. Dust warm cookies with confectioners' sugar if desired. Cool.

1/4 lb unsalted butter
1 1/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa
2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
4 tablespoons unsalted butter
1 teaspoon vanilla extract
4 cups confectioners' sugar
whipping cream

Steps:

  • FOR THE COOKIES --
  • Cream the butter with the sugar in a large bowl until light.
  • Beat in eggs and vanilla; set aside.
  • Sift the cocoa, flour, salt, baking powder, and baking soda together.
  • Stir the dry ingredients thoroughly into the butter mixture.
  • Cover the bowl with plastic wrap and refrigerate for 2 or 3 hours.
  • Preheat the oven to 375F and butter 2 cookie sheets.
  • Using a teaspoon measure, roll level teaspoons of the dough into balls and place them 2 inches apart on the sheets.
  • Bake for 10 to 15 mins, until cookies are puffed and surfaces slightly dry and cracked.
  • Cool on racks.
  • FOR THE FILLING --
  • Cream the butter until light.
  • Beat in the vanilla and powdered sugar, adding whipping cream and continuing to beat until the consistency is like creamy frosting.
  • When the cookies are complete cool, spread about 1/2 tablespoon of iflling on the bottom of one cookie, then top with the bottom side of another cookie.
  • VARIATION --
  • For half a batch of vanilla-filled and half a batch of peppermint-filled cookies, add 1/8 teaspoon peppermint extract to half the filling. Tint the peppermint filling pink or green before filling half the sandwiches.

3 tablespoons european style unsweetened cocoa powder

2 cups sugar
1 teaspoon vanilla extract
1 cup good quality chocolate chips

Steps:

  • preheat oven to 350 degrees (high altitude 375).
  • Melt butter with unsweetened chocolate in a double boiler.
  • Set aside to cool.
  • Sift together cocoa, flour, baking powder and salt.
  • Beat eggs until creamy, and slowly add the sugar, beating constantly.

1 tablespoon sherry wine (dry)
1 tablespoon soy sauce
1 tablespoon cornstarch

2 garlic cloves (pressed)
1 tablespoon oyster sauce
2 cups broccoli florets
1/2 cup beef broth
8 baby corn (spears, drained)
20 snow pea pods (fresh)
1 scallion (with top, chopped)

Steps:

  • Combine the sherry, soy sauce, half the cornstarch, sugar, 1/2 teaspoon of the oil, pepper, and garlic.
  • Marinate the sirloin at room temp in the mixture for one hour.
  • Heat a tablespoon of the remaining oil in a wok over high heat.
  • Stir-fry beef quickly, until the meat is medium rare. Remove and set aside.
  • Mix the remaining cornstarch with the oyster sauce.
  • Reheat the wok with the remaining oil.
  • Add the broccoli and carrots; stir-fry for 30 seconds.
  • Add the broth, cover the wok, and steam for approximately one minute or until the vegetables are tender-crisp.
  • Add the corn, snow peas, scallion, beef & oyster-cornstarch mixture.

1/2 cup unsalted butter
1/2 cup dark brown sugar
1 cup all-purpose flour
1 -2 cup pecan halves
2 eggs
1 cup firmly packed dark brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
additional flour (see below)
1 cup chocolate chips

Steps:

  • Preheat oven to 375.
  • In a food processor, combine the first three ingredients with a metal blade until coarse crumbs are formed. (can also bedone with 2 knives or a pastry cutter).
  • Pat as a crust into a buttered 9x13 pan.
  • Bake for 10 minutes, then cool completely.
  • Spread pecans over cooled crust.
  • Beat eggs with brown sugar until thick.
  • Add vanilla.
  • Put salt and baking power in the bottom of a 1/4 cup measure, then fill the rest of the measure with flour.
  • Stir this into egg mixture.
  • Pour this mixture over the pecans and crust.
  • Sprinkle chips over the mixture.
  • Bake at 375 for 20 minutes or until center is set.
  • Let cool before cutting.

Steps:

  • Preheat oven to 350°F
  • Grease two 9″ springform pans.
  • Combine flour with 1 1/2 cups sugar, and cut in the butter until the mixture resembles coarse crumbs. Reserve two cups.
  • To the remaining crumb mixture, add the first two eggs, sour cream, salt, baking powder, baking soda, and almond extract.
  • Mix, and spread over the bottom and up the sides of the pans.
  • Combine the cream cheese with the vanilla, the remaining eggs, and 1/2 cup sugar.
  • Spread half of this mixture over the batter in each pan.
  • Spread the raspberry preserves on top of the cream cheese mixture in each pan.
  • Whirl the almonds in a food processor until chunky.
  • Combine with the reserved crumb mixture and sprinkle over the preserves on each cake.
  • Bake cakes 45 to 55 minutes, or until a toothpick tests clean.
  • Cool the cakes at least half an hour before attempting to serve. Best if made the night before and refrigerated.
