I've been a long-time fan of California Pizza Kitchen's Thai-style pizza. This one adapted from "Pizza on the Grill" blows it away with fresh mango, bean sprouts, mint leaves and chopped peanuts.

1/2 cup peanut butter (ideally natural)
1 tablespoon thai chili-garlic sauce (Sriracha)
6 tablespoons canned unsweetened coconut milk
1 lb prepared pizza dough, at room temperature (I like Oops, It's a Fat Free Pizza Crust)
1 1/2 cups cooked chicken (sliced or shredded)
1 ripe mango, peeled, pitted and cut into matchstick-size slices
3 scallions, sliced thinly on an angle (white and green parts)
1 cup grated mozzarella cheese
1/2 cup fresh bean sprout, brown root ends snapped off
1/4 cup fresh mint leaves, cut into ribbons or 1/4 cup fresh cilantro
2 tablespoons dry roasted peanuts, chopped
1 lime, cut into 4 wedges

Steps:

  • Preheat oven to 425 degrees.
  • In a medium bowl, combine the peanut butter, chili garlic sauce and coconut milk.
  • Spread the pizza crust with the peanut sauce. Top with the chicken, mango and scallions. Sprinkle with the cheese.
  • Bake for 10-12 minutes or until cheese is melted.
  • Remove from oven and sprinkle with the bean sprouts, mint and nuts. Slice and serve immediately with the lime wedges for some extra zing. Optional: top with thinly sliced Thai bird chiles and serve with a Thai beer to beat the heat!

2 tablespoons chopped fresh cilantro
1/2 cup peanut butter
1/2 cup hoisin sauce
1 tablespoon honey
2 teaspoons red wine vinegar
2 teaspoons minced ginger
2 tablespoons roasted sesame oil
1 teaspoon Vietnamese chili sauce (or dried chili flakes)
1 tablespoon oyster sauce
2 tablespoons water
1 tablespoon olive oil
10 ounces boneless/skinless chicken breast, cut into 3/4-inch cubes
1 store-bought pizza dough
cornmeal, semolina or flour for handling
2 cups shredded mozzarella cheese
4 scallions, slivered diagonally oriental style
1/2 cup white bean sprouts
1/4 cup shredded carrot
2 tablespoons chopped, roasted peanuts

Steps:

  • To make Spicy Peanut Sauce: Combine sauce ingredients in a small pan over medium heat. Bring the sauce to a boil. Boil gently for one minute. Divide into 2 portions for use on chicken and pizza. Set aside.
  • To make Thai Chicken: Cook the chicken in olive oil over medium-high heat, stirring, until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through. Once chilled, coat the chicken with 1/4 cup Spicy Peanut Sauce. Set aside in the refrigerator.
  • To make the pizza: Place the pizza stone in the center of the oven and preheat to 500 degrees for 1 hour before cooking the pizzas. Use a large spoon to spread 1/4 cup spicy peanut sauce evenly over the surface of the prepared dough within the rim. Cover the sauce with 3/4 cup shredded mozzarella. Distribute half the chicken pieces evenly over the cheese followed by half the green onions, bean sprouts, and carrots, respectively. Sprinkle an additional 1/4 cup mozzarella over the other toppings and top the pizza with 1 tablespoon chopped roasted peanuts. Transfer the pizza to the oven. Bake until the crust is crisp and golden and the cheese at the center is bubbly, 9 to 10 minutes. When cooked through, carefully remove the pizza from the oven. Sprinkle 1 tablespoon chopped fresh cilantro over the hot, cheesy surface. Slice and serve. Repeat with remaining ingredients for a second pizza. (The 2 pizzas may be prepared simultaneously if you are careful in placing the pizzas at opposite corners of your pizza stone.)

Vegetable oil, to saute
1 boneless, skinless chicken breast
Salt and freshly ground pepper
1 (6-ounce) jar ready-made Thai peanut sauce
1 (16-ounce) can coconut milk
2 tablespoons cornstarch
2 tablespoons water
1 (12-ounce) ready-made pizza crust
1 cup unsalted peanuts, chopped
5 scallions, chopped
2 cups bean sprouts
2 cups mozzarella, shredded

Steps:

  • Preheat oven to 375 degrees F.
  • Heat a small frying pan over medium-high heat. Add enough oil to lightly coat the bottom of the pan. Season the chicken breast with salt and pepper and cook until cooked through, about 5 minutes per side. Cut into small cubes.
  • Warm peanut sauce and coconut milk in medium saucepan. Whisk together the cornstarch and water and then add to the peanut sauce. Bring to a boil to thicken and then remove from the heat and cool.
  • Roll out the pizza dough and press into a 10-inch pizza pan.
  • Spread the peanut sauce over the pizza dough. Put peanuts, half of scallions, chicken and 1 cup of bean sprouts on crust. Sprinkle cheese, remaining scallions, and bean sprouts on top. Bake until cheese is melted and crust is browned, about 15 to 20 minutes.

1 prebaked 12-inch pizza crust
1 tablespoon olive oil
4 ounces ready-to-serve roasted chicken breast strips
2 to 3 large fresh mushrooms, thinly sliced
1/4 cup plus 2 tablespoons Thai peanut sauce, divided
2 cups shredded part-skim mozzarella cheese, divided
1/4 cup thinly sliced red onion
1/2 cup fresh snow peas, halved
1/4 cup chopped sweet red pepper
1/4 cup julienned carrot
2 green onions, sliced
1/2 cup salted peanuts

Steps:

  • Place crust on an ungreased 12-in. pizza pan; brush with oil. In a small bowl, combine the chicken, mushrooms and 1/4 cup peanut sauce; spread over crust. Sprinkle with 1 cup cheese. , Layer with the red onion, snow peas, red pepper and carrot. Sprinkle with remaining cheese. Top with green onions and peanuts. Drizzle with remaining peanut sauce. , Bake at 450° for 10-12 minutes or until cheese is melted.

1 thin pizza crust (Boboli or other pre-baked crust)
2 garlic cloves, minced
1 teaspoon gingerroot, minced
5 tablespoons peanut butter
2 tablespoons honey
2 tablespoons rice wine vinegar or 2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 teaspoon red pepper flakes
1 cup mozzarella cheese, shredded
1/2 orange bell peppers or 1/2 red bell pepper, sliced
1 cup pre cooked chicken breast, chopped
2 green onions, chopped
1/2 carrot, finely chopped
1 cup bean sprouts, roughly chopped
1/4 cup peanuts, chopped
1/2 cup cilantro, chopped

Steps:

  • Preheat oven to 425°F; do not bake the Boboli yet.
  • In a microwave safe bowl, add garlic, gingerroot, peanut butter, honey, vinegar, soy sauce and pepper flakes. Microwave until peanut butter is melted (about 1 minute). Mix well with a whisk.
  • Take pre-baked pizza crust out of the package and top with peanut sauce, cheese, bell pepper and cooked chicken. Bake for 5 minutes or until cheese is melted.
  • Meanwhile, prepare other vegetables.
  • Remove crust from oven and top with remaining vegetables, peanuts and cilantro.
  • Cut and serve immediately while the crust is still hot! Enjoy!
