ORANGE COUSCOUS

TIP: When herbs are fresh and plentiful in her garden, Kathleen Martin chops and freezes them with the oil, lime juice and soy sauce, then stores in Zip-loc bags. That way she can enjoy this tasty dish with fresh herb flavor all year long.

- In a large saucepan, bring orange juice, water and cumin to a boil. Stir in couscous; remove from the heat. Cover and let stand for 5 minutes or until liquid is absorbed; fluff with a fork., Transfer to a large bowl; cool., In a small bowl, whisk the oil, lime juice and soy sauce. Stir in the cilantro, basil, chives, ginger and salt. Pour over couscous and toss to coat. Add oranges and almonds; toss gently. Refrigerate until serving.

Steps:
- In a large saucepan, bring water, butter and garlic powder to a boil. Turn off heat and stir in couscous. Cover and let stand for 5 minutes. Fluff with a fork and let cool.
- In a large bowl, mix together couscous, ham, pineapple, onion and drained peas
- In a small bowl whisk together 1/4 cup reserved pineapple juice, lemon juice, Dijon-style mustard and vegetable oil. Pour dressing over the salad and stir to coat. Salt and pepper to taste.

EASY PINEAPPLE COUSCOUS
Couscous side dish that is easy to make and kid friendly. It goes great with any seafood dish and would be excellent served with Teryaki Chicken. I served with Grilled Tuna Steaks and steamed green beans. Use leftovers as a healthy mid-day snack :-)

Steps:
- Bring chicken broth (or water) to boil in medium saucepan.
- Add dry couscous to boiling liquid, stir just to coat couscous, remove from the heat and cover with lid.
- Let sit for 5 minutes.
- While couscous is setting; mix well with whisk the pineapple juice, olive oil and Spicy Brown Mustard (can use Dijon or Whole Grain), salt/pepper to taste. Set "dressing" aside.
- Remove lid from saucepan and fluff couscous with fork.
- Add pineapple tidbits, diced red pepper, "dressing" and parsley to couscous and mix well.
- Enjoy!

MICROWAVE ORANGE PINEAPPLE MARMALADE
A friend of mine gave me a few bags of oranges from her tree, so I went on a hunt for recipes using oranges and this is one of them. It's so simple and it's really good.

- Put quartered oranges into food processor that is fitted with a metal blade and process until ground.
- In micro safe 2 1/2 qt dish, combine oranges, pineapple, sugar and lemon juice.
- Stir and mix it well.
- Micro on high for 10 minutes or until it boils, stirring half way thru.
- Continue to micro on high for another 3 minutes.
- Cool, stirring occasionally.
- Can be kept in refrigerator for up to a month and can be frozen for up to 6 months.

This is an easy cake, but taste so devine. Be prepared to be very popular where ever you take it. It is pretty so it looks like you worked a lot harder on it than you really have to. Yummy!!

- Cake: Grease and flour 3 8 inch round cake pans.
- Mix cake mix, oil, eggs,& Mandarin oranges including juices.
- Pour in to prepared pans.
- Bake at 350 for 30 minutes (check with tooth pick) or until tooth pick is clean.
- Do not over cook layers.
- Icing: Drain Pinapple and save juice.
- Mix Cool Whip,instant pudding, and pineapple in large mixing bowl.
- Spoon pineapple juice over each layer before icing.
- Spread icing over each layer and ice cake.

- 1. Add enough orange juice to the mandarin orange juice to make 2 1/4 cups liquid. Bring the juices and cumin to a boil in a saucepan. Remove from heat and add couscous. Cover and let stand 5 minutes. Pour into a large bowl and let cool.
- 2. Combine oil, soy sauce and lime juice. Stir into couscouls mixture. Add in mandarin oranges, cilantro, basil, green onions, ginger and pineapple. Sprinkle with pine nuts.
