This recipe idea formed quickly when I saw the ingredients list - as I just simply love Thai food. There are two variations to making this dish - you can either make a salad or a soup (perfect for all seasons!). When trying out both versions, I realized that I liked the Chinese flat rice noodles for the salad which is oilier (sold in the chilling area in my supermarket), and pho, its Vietnamese counterpart which is sold in the dried form. The chicken patties may be used in other stir fries, or frozen after you've cooked them.

250 g ground chicken
2 tablespoons fresh basil, chopped (Thai basil preferably)
2 tablespoons cilantro, chopped
1 garlic clove, minced
2 thai birds eye chiles, minced (optional)
1/2 tablespoon soy sauce
1/2 tablespoon fish sauce
1/2 tablespoon lime juice
1 egg, lightly beaten
1 slice day-old bread, crushed into crumbs
1 teaspoon peanut oil
2 tablespoons sweet chili sauce
2 tablespoons lime juice
1 tablespoon fish sauce
3 cups chicken stock
2 slices ginger (galangal if you can find it)
1 stalk lemongrass, cut into 1 ", pieces and bruised
1/2 tablespoon fish sauce
1/2 tablespoon soy sauce
1 teaspoon sesame oil
fresh ground black pepper, to taste
1 small carrot, cut into ribbons using peeler (approx 80g)
1 small red peppers or 1 small green pepper, julienned
4 medium shiitake mushrooms, sliced
1/2 cup bean sprouts
200 g chinese flat rice noodles (kway teow) or 200 g vietnamese dry rice noodles (pho, if using pho, soak in hot water for 5 mins and drain before using)
fresh cilantro
fresh basil leaf
chopped roasted cashews

Steps:

  • To make patties: Mix all required ingredients in a medium bowl using your hands; cover and let marinate in the fridge for 30mins.
  • Shape chicken mixture into patties (if you like, you can make chicken meatballs).
  • Heat 1-2 TB oil in skillet over MED-HI heat and cook patties, turning once, for 6 minutes or until cooked through and golden brown; set aside in a low oven to keep warm.
  • Whisk together dressing/dipping sauce ingredients, set aside.
  • To make salad: Bring salted water to boil in a saucepan (enough to cover the noodles), add noodles and cook for 4 mins or until tender; drain.
  • You may also blanch your vegetables in the boiling water for a few minutes, depending on how 'crunchy' you like your salad to be; drain.
  • Place cooked noodles and vegetables in a large bowl, add half of the dressing; toss to coat.
  • If desired, cut the cooked patties into thin slices (for presentation) before serving.
  • To serve the salad, divide the salad mixture on 2-3 plates, top with sliced chicken patties, drizzle with remaining dressing and sprinkle with cilantro/basil and chopped cashews.
  • To make soup: Bring chicken stock to boil, add ginger, lemongrass, fish and soy sauce; add pho and cook until tender (approx 6-8 mins).
  • Add vegetables to soup to blanch them for a few minutes.
  • To serve, divide noodles/vegetables/soup into 2-3 bowls and sprinkle some black pepper and a few drops of sesame oil.
  • Top with the sliced chicken patties and garnish with basil/cilantro and cashews.

12 Minute Thai Chicken Peanut Noodles image

Recipe video above. Thai Chicken Peanut Noodles is what you make when you've got less than 15 minutes to get dinner on the table and you need a Thai fix! Using chicken mince means no meat prep - and you can switch it out with literally any ground meat (beef, turkey, pork). It might not be authentic Thai ... but it's fast and 100% delicious!NOTE: Trick here is to work quickly so the sauce isn't all absorbed by the noodles which will make them bloated and clumpy. If your noodles do absorb all the sauce, just add a splash of water to thin it out.

1 tbsp oil
1 garlic clove (, minced)
200g/7oz chicken mince ((ground chicken) (Note 1))
1 tsp curry powder ((Note 2))
1 1/2 tbsp red curry paste (, separated (Note 3))
1 tsp dark soy sauce ((Note 4))
1 1/2 cups chicken stock/broth (, low sodium)
3/4 cup coconut milk ((~1/2 a can), full fat for best flavour)
2 tbsp cider vinegar
3 tbsp peanut butter
2 instant ramen or noodle cakes (~70-100g/2.5-3.5oz per cake; any brand (discard seasoning pack, Note 5))
2 (big!) handfuls baby spinach
2 tbsp peanuts (, finely chopped)
Roughly chopped fresh coriander/cilantro leaves
Sriracha or other chilli paste (, optional)

Steps:

  • Sauté garlic: Heat oil in a medium skillet over high heat (not too large, else the sauce will evaporate too quickly). Add garlic and cook for 20 seconds until it turns golden.
  • Cook chicken: Add chicken mince and cook for 2 minutes, breaking it up as you go, until it mostly changes from pink to white.
  • Add flavourings: Add 1 tbsp red curry paste, curry powder and soy sauce. Cook for 1 minute.
  • Cook extra curry paste: Clear a space in the middle of the pan, add remaining 1/2 tbsp curry paste, stir the curry paste for 30 seconds.
  • Simmer stock: Add chicken stock, bring to a simmer then reduce to medium-high. Simmer for 1 minute.
  • Add noodles: Squish the noodle cakes in, pushing chicken aside so the noodles are as submerged as possible.
  • Cook 45 sec, flip, 30 sec: Leave to cook for 45 seconds, then flip noodles. Leave for another 30 seconds, then separate the noodles with 2 wooden spoons.
  • Add peanut sauce: Push noodles aside, add coconut milk, peanut butter and vinegar, then give it a quick mix to mostly dissolve the peanut butter.
  • Toss with spinach: Add spinach, toss with the noodles for 30 seconds until wilted. Make sure it's still pretty saucy - everybody loves sauce!
  • Serve: Transfer to serving bowls, sprinkle with coriander, peanuts and Sriracha or chilli paste if desired.

2 large skinless chicken breasts
175g dried medium egg noodles
2 good handfuls of greens, such as Chinese leaf , finely shredded
2 carrots , cut into thin strips
8 spring onions , finely sliced
1 red pepper , seeded and finely sliced
a handful of fresh coriander leaves
1 red chilli , seeded and finely chopped
2 garlic cloves , finely chopped
1 tbsp root ginger , finely chopped
2 tbsp soy sauce
juice of 1 lime
2 tbsp olive oil

Steps:

  • Preheat the grill to high. Put the chicken on a baking tray and grill for 10-12 minutes without turning, until cooked through.
  • Meanwhile, cook the noodles according to instructions. Drain and run cold water through to stop them sticking together.
  • Mix the vegetables in a bowl. Thinly slice the chicken and add to the bowl, along with the noodles and coriander leaves.
  • Mix the dressing ingredients together with 2 tablespoons water, pour over the salad and toss well. Serve straight away.

1 tablespoon olive oil
2 carrots, shredded
½ onion, diced
½ red bell pepper, diced
2 large chicken breasts, chopped in small pieces
2 cloves garlic, minced
1 (32 fluid ounce) container chicken broth
1 (14 ounce) can coconut milk
2 tablespoons red curry paste
2 teaspoons salt
½ teaspoon ground black pepper
4 ounces rice noodles, broken in half

Steps:

  • Heat a large stock pot over medium heat. Add oil, carrots, onion, and bell pepper. Cook for about 3 minutes. Add chicken and mix well. Add garlic. Cook until chicken is no longer pink in the center and juices run clear, 5 to 10 minutes.
  • Mix in chicken broth, coconut milk, curry paste, salt, and pepper. Bring soup to a boil, about 5 minutes. Add noodles and allow soup to come to a boil again. Reduce heat to low and simmer about 3 minutes.
  • Cover the pot, remove from heat, and let sit just until noodles are tender, 5 to 10 minutes.

1 1/4 pounds boneless, skinless chicken breasts, thinly sliced crosswise
Spicy Asian Dressing for Thai Chicken and Noodle Salad
Coarse salt
3 1/2 ounces Chinese rice noodles, broken in half if long
1 tablespoon vegetable oil, such as safflower
2 carrots, sliced into ribbons with a vegetable peeler
1 English cucumber, halved lengthwise and thinly sliced crosswise
1/4 cup fresh basil, torn
Bean sprouts, chopped peanuts, fresh mint leaves, red-pepper flakes, and sliced scallion greens, for garnish (optional)

Steps:

  • Place chicken and half of dressing in a resealable plastic bag (reserve remaining dressing). Marinate at room temperature for 30 minutes (or refrigerate up to overnight).
  • In a large pot of boiling salted water, cook noodles until tender. Drain, and rinse under cold water to stop the cooking. Transfer to a platter.
  • In a large skillet, heat oil over medium-high. Working in batches, cook chicken (do not crowd skillet) until cooked through, 1 to 2 minutes; transfer to platter on top of noodles.
  • Top with carrots, cucumber, and basil. Drizzle with reserved dressing, and sprinkle with garnishes, if desired.
