Time 15m

Yield 4 servings

Number Of Ingredients 13

1 pound thin cut chicken breast meat, available packaged in meat case of market
Grill seasoning (recommended: Montreal Seasoning by McCormick)
2 tablespoons vegetable oil, 2 turns of the pan
2 tablespoons minced ginger root
4 cloves garlic, minced
1 large red bell pepper, seeded and very thinly sliced
1 cup packaged shredded cabbage and carrot mix
3 scallions, chopped on an angle
1/2 cup plum sauce
2 cups basil leaves, loosely packed
1 tablespoon fish sauce
1/2 head iceberg lettuce, cut into half again
1/2 seedless cucumber, chopped

Steps:

  • Thinly slice the chicken into strips and sprinkle with grill seasoning.
  • Heat a large skillet to screaming hot. Add vegetable oil, then chicken. Cook chicken 2 minutes, stirring constantly. Add the ginger, garlic, peppers, cabbage and carrot mix and scallions and stir-fry another 2 minutes. Add plum sauce to glaze the mixture, toss 1 minute, then add basil and wilt leaves. Add fish sauce and turn to coat. Transfer cooked chicken and vegetables to a bowl. Place spoonfuls of chicken into a piece of lettuce with cucumber and fold lettuce over to eat, like small tacos.

ASIAN GLAZED CHICKEN THIGHS

Asian Glazed Chicken Thighs image

Slightly spicy, but the sweetness tames the heat. Serve with rice.

Provided by Essanaye

Categories     World Cuisine Recipes     Asian

Time 1h40m

Yield 4

Number Of Ingredients 9

½ cup rice vinegar
5 tablespoons honey
⅓ cup soy sauce (such as Silver Swan®)
¼ cup Asian (toasted) sesame oil
3 tablespoons Asian chili garlic sauce
3 tablespoons minced garlic
salt to taste
8 skinless, boneless chicken thighs
1 tablespoon chopped green onion

Steps:

  • Whisk the vinegar, honey, soy sauce, toasted sesame oil, chili garlic sauce, garlic, and salt in a bowl until smooth. Pour half the marinade into a large plastic zipper bag; retain the other half of the sauce. Place the chicken thighs into the bag containing marinade, squeeze all the air out of the bag, and seal. Shake a few times to coat chicken; refrigerate for 1 hour, turning bag once or twice.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Pour the other half of the marinade into a saucepan over medium heat, bring to a boil, and cook for 3 to 5 minutes, stirring often, to thicken sauce. Remove the chicken from the bag; discard used marinade. Place chicken thighs into a 9x13-inch baking dish, and brush with 1/3 of the thickened marinade from the saucepan.
  • Bake 30 minutes, basting one more time after 10 minutes; an instant-read thermometer inserted into a chicken thigh should read 165 degrees F (75 degrees C). Let stand for 5 or 10 minutes; meanwhile, bring remaining marinade back to a boil for 1 or 2 minutes, and serve chicken with marinade. Sprinkle with green onions.

  • Wipe the chicken fillets dry with paper towels. Pound to a uniform thickness of about a quarter inch (optionally, cut each fillet into two to three portions). Sprinkle both sides with salt and pepper.
  • Dredge each piece of chicken in flour; shake off the excess. Dip in egg. Coat with panko. It's like making ebi furai so you can use the photos in the ebi furai as guide.
  • In a small sauce pan, mix together all the ingredients for the glaze. Cook uncovered over medium heat to reduce. This should take about eight minutes.
  • While the glaze reduces, heat enough cooking oil in a frying pan to reach a depth of at least two inches.

  • First, pre-heat the oven to 350 degrees. Combine sweet chili sauce, garlic (either whole or minced or powder), lime, agave syrup, sriracha, garlic powder, parsley, ginger, onion powder, and salt. Set aside some sauce for serving.
  • Add the chicken to the marinade. Let it marinate for 30 minutes to an hour. If you are pressed for time, let it sit for 5 minutes.
  • Once it is marinated, add 2 tsp of olive oil into pan and sear chicken for 3-5 minutes on each side until it chars. Place chicken in an oven-safe skillet and into the oven and bake for about 15 to 20 minutes and until the chicken is no longer pink and a glaze is visible.
  • Once the chicken is cooked, it's time for the finishing touches. Add chopped green onions and peanuts on top of the chicken. The glaze is nice and sticky so it will stick and be ready to eat.
