This is a recipe that I learned when I attended a cooking class at the Oriental Hotel in Thailand last year. Most Ingredients can be found in any Asian market. We love salads for dinner on any summer day, especially if it is hot.

1 Chinese barbecued duck, deboned and fat removed
1/2 large red onion, thinly sliced
2 sprigs green onions, diced
2 cups cilantro leaves, coarsely chopped
2 teaspoons heapful chili paste with soya oil
1/2 tablespoon sugar
2 teaspoons red chili powder (to taste)
2 teaspoons fish sauce (to taste)
2 large green limes
1 tomatoes, cut into chunks (optional)
1 pickle cucumber, cut into slices (optional)
3 -4 lettuce leaves
1/2 cup cashew nuts (halves) (optional)

Steps:

  • In a large bowl, squeeze the juice of the limes.
  • Add fish sauce and Chili Paste. Wisk until Chili Paste dissolves in sauce.
  • Add sugar and red chili powder. Mix well for 1 minute.
  • Add duck, red Onion, green Onions, cilantro leaves. Mix well until all ingredients are covered.
  • Optionally, add tomatoes and cucumber and mix well.
  • On a plate, place the lettuce so they form a bed.
  • Transfer the duck salad to the plate.
  • Optionally, sprinkle top with cashew.

ASIAN DUCK SALAD

A lovely light meal that is extremely healthy and full of flavour. You can also purchase cooked duck from your chinese take-away/restaurant and shred the meat instead of cooking the duck yourself. I am sure you could use chicken if preferred as well.

2 duck breasts, skin removed
1 carrot, peeled and julienned
100 g snow peas, trimmed and thnly sliced
100 g sugar snap peas, trimmed
1 red chile, deseeded thinly sliced
200 g Chinese cabbage, finely shredded
100 g bean sprouts, trimmed
coriander leaves
20 g sliced almonds
1 teaspoon ginger, finely frated
2 garlic cloves, crushed
1/4 fresh lime juice
1 teaspoon sesame oil
1 tablespoon tamari
1/4 teaspoon honey

Steps:

  • To make dressing combine all ingredients in a bowl and mix well.
  • Heat a non-stick frying pan, Add duck and cook 5 minutes each side. Remove and cover to stand for 10 minutes.
  • Meanwhile combine carrot, snow peas, sugar snap peas, and chilli in heatproof bowl. Cover with boiling water and drain immediately and refresh under cold water. Drain, return to bowl.
  • Thinly slice duck across the grain. Add to carrot mixture along with cabbage, bean sprouts, shallots, coriander and almonds.
  • Drizzle as much dressing over salad as you like and toss to combine.
  • Serve.

20 fresh tiger shrimp
1/2 onion
1 tomatoes
1 cup cucumber
1 tablespoon ground roasted rice
1 tablespoon spring onion
4 small fresh thai chilies
1 stick fresh lemongrass
2 cloves fresh garlic
2 tablespoons fresh coriander roots
1 tablespoon fresh ginger
2 tablespoons lemon juice
1 tablespoon white vinegar
1 teaspoon salt
2 tablespoons fish sauce
1 teaspoon white sugar

Steps:

  • Peel and de-vein the prawns.
  • Slice the onion and tomato.
  • Dice the cucumber into small pieces and chop the spring onions.
  • Chop finely all the sauce ingredients together adding the lemon juice, vinegar, fish sauce and sugar, mix well and leave to one side to infuse for approx.
  • 30 minutes.
  • Char-grill the Prawns or boil until the prawns turn pink, and then place into the salad bowl.
  • Mix the prawns, vegetables and roasted rice together and then add all the sauce in and mix well.
  • Serve with salad, garnish with coriander leaves.

2 eggs
1 teaspoon fish sauce
1 1/2 teaspoons white sugar
2 1/2 teaspoons fresh lime juice
1 tablespoon small Thai red chili pepper, finely chopped
1 tablespoon garlic, finely chopped
1 tablespoon coriander leaves, & stems finely chopped
1/3 cup vegetable oil, to partially submerge the eggs while frying

Steps:

  • Mix the fish sauce, sugar, soup base and lime juice well in a bowl.
  • Chop the garlic, chilies and coriander fine.
  • Fry the eggs in a very hot pan with a good deal of oil until crispy, about 1 minute. It helps to ladle the oil over the top of the egg to cook both sides at the same time. Set aside and allow to cool a bit.
  • Put the eggs in a plate and cut into quarters. Mix the garlic, chilies and coriander together into the sauce.
  • When ready to eat, pour the sauce over the eggs. Don't let it sit long or the eggs will get soggy.

Sesame-Glazed Duck Legs With Spicy Persimmon Salad image

Some Chinese cookbooks recommend steaming duck to tender perfection before roasting it to crisp the skin. It is a good technique to master, and works especially well with large moulard duck legs. You get moist tender duck, and a bonus pot full of rendered duck fat. (You can steam the duck up to 6 hours in advance of roasting it.) The accompanying salad of persimmons, oranges, pomegranate and daikon radish gets a kick from Serrano chile, lime juice, freshly grated ginger and sesame oil. Be sure to use Fuyu persimmons, which can be eaten unripe. (The long, pointy Hachiya persimmon must be completely ripe to be palatable.) It's worth mixing up a batch of fragrant, flavorful Sichuan pepper salt, both for this recipe and to have a little extra on hand to use as an all-purpose seasoning; if you can't find Sichuan peppercorns in a store, online spice merchants will have them.

2 tablespoons Sichuan peppercorns
3 tablespoons flaky salt
6 duck legs (about 5 pounds), preferably moulard duck, trimmed of excess fat
2 or 3 cinnamon sticks, lightly crushed
12 star anise pods, lightly crushed
1 tablespoon toasted sesame seeds, for garnish
2 tablespoons soy sauce
1 tablespoon toasted sesame oil
1 teaspoon Chinese spicy fermented bean paste (doubanjiang)
3 tablespoons brown sugar
2 tablespoons freshly squeezed orange juice
4 small Fuyu persimmons, peeled and cut in wedges
2 navel oranges, peeled and cut crosswise into 1/4-inch rounds
1 cup peeled and thinly sliced daikon radish or watermelon radish
1 or 2 Serrano chiles, to taste, seeded if you like and very thinly sliced
2 tablespoons lime juice
1 teaspoon finely grated ginger
2 teaspoons toasted sesame oil
Salt and pepper
3/4 cup pomegranate seeds
1/4 cup thinly sliced scallions
1 bunch cilantro, top sprigs only, for garnish

Steps:

  • Make Sichuan pepper salt: Put Sichuan peppercorns and salt in a dry small skillet over medium-high heat. Shaking the pan and stirring frequently, toast mixture until fragrant, 2 to 3 minutes. Let cool, then grind coarsely with a mortar and pestle or spice mill.
  • Season duck legs all over with Sichuan pepper salt, then wrap and refrigerate for at least 2 hours or overnight.
  • Set up a steamer: Fill a large pot halfway with water and set a steamer basket 2 inches above the water. Place crushed cinnamon and star anise on the bottom of steamer basket, then lay seasoned duck legs on top.
  • Cover with a lid and bring water to a hard boil over high heat. Reduce heat slightly to maintain a brisker simmer. (Check water level occasionally and add more boiling water as necessary.) Steam legs until tender when pierced with a thin-bladed knife, about 1 hour 15 minutes; start checking at 1 hour. Remove legs and set aside. (They may be left at room temperature for an hour or so before roasting, or you can steam the legs up to 6 hours before roasting and refrigerate, covered. Re-steam the refrigerated legs for 15 minutes to soften before proceeding.)
  • Heat oven to 375 degrees. Put legs on a rack set over a foil-lined baking sheet and roast uncovered for about 30 minutes, until skin begins to crisp.
  • As legs roast, make the glaze: Whisk together soy sauce, sesame oil, bean paste, brown sugar and orange juice. Once the legs have been in the oven for 30 minutes, brush them generously with glaze and roast for 30 minutes more (for a total cooking time of 1 hour), brushing them again every 10 minutes. Transfer legs to a serving platter. Sprinkle with sesame seeds.
  • Make the salad: Put persimmons, oranges, daikon, chiles, lime juice, ginger and sesame oil in a mixing bowl. Season with salt and pepper, and toss gently to coat. Transfer salad to platter with duck legs. Drizzle with any remaining juices from bowl. Garnish with pomegranate seeds, scallions and cilantro sprigs.

A special warm salad for sharing. This would work well as an appetizer for 4 or a main course for 2. The dressing is perfect for duck but make sure you mix it well so the honey doesn't sink to the bottom.

2 duck breasts, skin on
4 ounces salad leaves
9 ounces cherry tomatoes
4 scallions, sliced diagonally
1 garlic clove, crushed
1 teaspoon fresh ginger, grated
2 tablespoons soy sauce
3 tablespoons honey
salt and pepper

Steps:

  • Heat the oven to 400°F.
  • Score the skin of the duck breasts and season.
  • Heat a non-stick frying pan over a high heat, add the duck, skin side down and cook for 4 mins or until the skin is crisp. Turn over and quickly brown the underside then transfer to a baking tray.
  • Mix the dressing ingredients together and spoon all but 2 tbs of it over the duck. Roast the duck for 10 mins for pink or longer if you prefer.
  • Remove from the oven and allow to rest for 4 mins then slice into strips.
  • Toss together the salad leaves, tomatoes and scallions with the duck slices.
  • Drizzle over the remaining dressing and serve.
