VEAL, PORK AND PORCINI BOLOGNESE SAUCE



Veal, Pork and Porcini Bolognese Sauce image

6 tablespoons extra-virgin olive oil
1/2 cup chopped onions
1 tablespoon chopped garlic
1 teaspoon chopped fresh rosemary
1 cup ground veal
1/2 cup ground pork
Sea salt and freshly ground black pepper
2 tablespoons dry porcini mushrooms, soaked in warm water for 15 minutes and chopped, liquid reserved
2 tablespoons porcini juice, reserved from above
3/4 cup veal stock
1/4 cup canned or jarred marinara sauce
1/3 cup white wine
1 tablespoon finely chopped parsley leaves
1/3 cup grated Parmesan
2 tablespoons extra-virgin olive oil
1/2 cup minced onion
1 tablespoon chopped fresh Italian parsley leaves
1 large clove garlic, minced
4 cups fresh tomato puree
1 large fresh basil stem with leaves removed
1 teaspoon sea salt, preferably gray salt
Pinch baking soda or sugar, if needed

Steps:

  • In a large skillet, heat the oil over medium heat. Add the onions and cook gently to sweat for about 2 minutes. Do not let the onions caramelize. Add the garlic and rosemary and cook about 1 minute, or until garlic is lightly browned.
  • Add the veal and pork and cook, smashing the meat apart with a wooden spoon, to keep it from clumping together. Cook for about 2 minutes and season with salt and pepper to taste. Add the mushrooms and continue to cook about 4 minutes, evaporating any liquid and caramelizing the meat.
  • Add the porcini juice to the meat and cook for 1 minute to evaporate. Add the veal stock and cook for 2 minutes. Add the marinara and the wine. Reduce the heat and simmer for 3 to 4 minutes. Stir in the parsley.
  • Toss 2 tablespoons of the Parmesan into the sauce to help it bind. Add some reserved pasta water, as necessary, if the sauce appears too dry. Top with the remaining Parmesan.
  • Heat the olive oil in a large non-reactive pot over moderate heat. Add the onion and saute until translucent, about 8 minutes. Add the parsley and garlic and cook briefly to release their fragrance. Add the tomatoes, basil and salt. Simmer briskly until reduced to a sauce like consistency, stirring occasionally so nothing sticks to the bottom of the pot. The timing will depend on the ripeness and meatiness of your tomatoes and the size of your pot. If the sauce thickens too much before the flavors have developed, add a little water and continue cooking.
  • Taste and adjust the seasoning. If the sauce tastes too acidic, add the baking soda and cook for 5 more minutes. If it needs a touch of sweetness, add the sugar and cook for 5 more minutes. Remove the basil stem before serving.

This sauce must be cooked for 2 hours or even more is even better! the first hour covered then the last uncovered. If possible prepare this sauce one day in advance and refrigerated, it will increase the flavor. This is a very hearty sauce, you can also add in a can or plum tomatoes, chopped and drained if desired.

3 -5 tablespoons olive oil
4 slices thick-cut bacon, diced
1 large onion, chopped
2 tablespoons minced fresh garlic
2 stalks celery, finely chopped
2 small carrots, peeled and finely diced
1 teaspoon dried thyme
2 teaspoons dried basil
1 teaspoon dried red pepper flakes (you can add in more to taste)
2 bay leaves
3 tablespoons tomato paste
1 lb ground veal
1 lb ground pork
1 1/4 cups dry red wine
2 (14 ounce) cans beef broth (or beef consomme for an even richer flavor)
1 (28 ounce) can crushed tomatoes
whipped cream (optional)
parmesan cheese
cooked pasta

Steps:

  • Heat the oil in a large heavy-bottomed pot over medium heat.
  • Add in the diced bacon and saute until beginning to brown (about 5 minutes).
  • Add in the onion, celery, carrot, garlic, thyme, basil, dryed pepper flakes and bay leaves; saute for about 5-6 minutes.
  • Add in tomato paste; cook stiring with a wooden spoon for 2 minutes.
  • Then add in the ground veal and pork; cook until cooked through and well browned (about 12 minutes, the meat should be BROWNED well!).
  • Add in the wine then simmer for about 8 minutes uncovered.
  • Add in the broth and crushed tomatoes; reduce heat to low, cover and simmer for 1 hour, stirring often with a wooden spoon.
  • Uncover and season with salt and pepper; simmer for another hour or more (uncovered).
  • If you prefer a creamy sauce, add in about 1/4 cup whipping cream towards the end of cooking.
  • Serve over cooked pasta and top with parmesan cheese.

Not only do we have amazing markets here in Palm Beach Gardens but our farmers markets are spectacular. I got 4 Cubanelle peppers and grilled 2 with our steak dinner. Looking at the remaining 2, this dish came to me. Enjoy with your favorite pasta, spaghetti squash, or sweet potato noodles.

2 Cubanelle peppers, chopped

1 pound ground veal
½ pound ground chuck

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add Cubanelle peppers; cook and stir until softened, about 5 minutes. Stir in garlic; cook until fragrant, about 30 seconds.
  • Stir veal and chuck into the saucepan; cook, breaking up gently with a wooden spoon, until browned, about 10 minutes. Add crushed tomatoes, Italian seasoning, salt, and pepper. Bring sauce to a boil; reduce heat to low and simmer, covered, until flavors combine, about 30 minutes.

1 dried one-quarter-ounce package porcini mushrooms
1 large clove garlic
1 small onion, (about 5 ounces), peeled and cut into quarters
2 small carrots, peeled and cut into chunks
1 large rib celery, strings removed, cut into chunks
1 pound veal shoulder, trimmed of all fat and cut into 1/4-inch dice
1/2 cup dry red wine
1/4 cup Low-Fat Tomato Sauce
3 1/2 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
3/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1/8 teaspoon freshly grated nutmeg
1 pound spaghetti
6 tablespoons freshly grated Parmesan cheese, optional
Olive-oil, cooking spray

Steps:

  • Place mushrooms in a small bowl; cover with 1/2 cup boiling water. Let soak 15 minutes. Lift mushrooms from liquid, and chop medium fine; set aside. Strain liquid through cheesecloth; set liquid aside.
  • Place garlic in food processor; process until finely chopped. Add onion; process until finely chopped. Transfer onions and garlic to a small bowl. Process carrots in food processor until coarsely chopped, about 15 pulses. Add celery; process until carrots and celery are finely chopped; set aside.
  • Spray medium-high, straight-sided skillet with olive-oil spray; place over medium-low heat. Add vegetables, cover, and cook until translucent, about 7 minutes.
  • Add veal, and raise heat to high; cook until veal turns opaque, about 5 minutes. Add wine; cook until evaporated. Stir in tomato sauce, mushrooms, stock, reserved mushroom liquid, salt, pepper, and nutmeg; bring to a boil. Lower heat to medium low; simmer until meat is tender and most liquid has been absorbed, about 2 hours.
  • Cook pasta until al dente; transfer to large serving dish. Pour sauce over pasta; toss. Sprinkle with Parmesan, if desired.

VEAL SCALOPPINE BOLOGNESE

12 veal scallops, 2 to 3 ounces each
1/2 teaspoon kosher salt
All-purpose flour for dredging (1 cup or more)
4 large eggs
4 tablespoons extra-virgin olive oil
5 tablespoons butter
3 ounces thinly sliced prosciutto, cut in 1/4-inch strips
1/2 cup dry Marsala
1/2 cup dry white wine
1 cup hot light stock (chicken, turkey, or vegetable broth) or water
5-ounce (or larger) chunk of Grana Padano or Parmigiano-Reggiano
RECOMMENDED EQUIPMENT
A meat mallet with a toothed face; a large heavy-bottomed skillet or sauté pan, 12-inch diameter or larger; a large rectangular baking dish or casserole pan, such as a 4-quart Pyrex dish (15 by 10 inches)

Steps:

  • Heat the oven to 400° and arrange a rack in the middle.
  • Flatten the veal scallops into scaloppine, one at a time. Place a scallop between sheets of wax paper or plastic wrap, and pound it with the toothed face of a meat mallet, tenderizing and spreading it into a thin oval, about 1/4 inch thick. The pieces will vary in size.
  • Season the scaloppine with salt on both sides, using about 1/2 teaspoon in all. Spread the flour on a plate and dredge each scallop, coating both sides with flour. Shake of the excess and lay them down, spread apart, on wax paper. Beat the eggs with a pinch of salt in a wide shallow bowl.
  • Pour 2 tablespoons of olive oil and drop 3 tablespoons of butter into the big sauté pan, and set over medium-high heat. When the butter begins to bubble, quickly dip scallops, one by one, in the eggs, let the excess drip off, then lay them in the skillet. Fit in as many scallops as you can in one layer-about half the veal.
  • Brown the scallops on one side for about a minute, then flip and brown the second side for a minute. Turn them in the order in which they went into the skillet, and then transfer them to a plate. Remove any burnt bits from the skillet, and pour in the remaining olive oil; dip the remaining scallops in egg, and brown them the same way. (If your skillet is not big enough, it is fine to fry the veal in three batches.)
  • When all the scaloppine are browned, arrange them in the baking pan, overlapping them so they fill the dish in an even layer.
  • To make the Marsala sauce: Wipe out the skillet, melt the remaining 2 tablespoons butter in it, and set over medium heat. Scatter in the prosciutto strips, and cook, stirring, for a couple of minutes or longer, until crisped on the edges. Pour in the Marsala and white wine at the same time, raise the heat, and bring to a rapid boil. Cook until the wines are reduced by half, then pour in the stock, heat to the boil, and cook for a couple of minutes more, stirring, untl the sauce has amalgamated and thickened slightly.
  • Remove the pan from the heat, scoop out the prosciutto strips, and scatter them over the scaloppine in the baking dish, then pour the sauce all over the meat, moistening the scaloppine evenly.
  • To make the gratinato: shave the chunk of Grana Padano or Parmigiano-Reggiano with a vegetable peeler, dropping thin wide flakes of cheese over the scaloppine, lightly covering them.
  • Set the baking dish in the oven, and bake for 20 minutes or so, until the gratinato is nicely browned and very crisp (rotate the dish in the oven to ensure even coloring).
  • Remove the dish from the oven and, with a sharp knife or a spatula, cut around the scaloppine and lift them out, one or two at a time, with the topping intact, onto a platter or dinner plates. Drizzle the pan sauce around the scaloppine-not on top-and serve immediately.
