8 garlic cloves, sliced thin
8 green onions, cut in 2 inch lengths then lengthwise in half
1 teaspoon red pepper flakes
1 cup sake (rice wine)
1 cup water
3 lbs littleneck clams, washed and drained
1 cup basil leaves, fresh and cut into strips
2 tablespoons fish sauce
4 ounces somen noodles
2 tablespoons peanut oil

Steps:

  • Boil somen noodles in 12 cups of water. Drain and rinse under cold water.
  • Heat heavy pot(big enough to hold the clams) over high heat.
  • Add peanut oil. Add garlic, red pepper flakes, and green onions and cook for 15 seconds.
  • Add 1 cup rice wine to 1 cup water and stir.
  • Add wine mixture to pot, cover, and bring to a boil.
  • Add clams, cover, and return to a boil.
  • Reduce heat to medium and cook until clams open (about 7-8 minutes) and be certain to shake pot occasionally to insure clams cook evenly.
  • Add basil to liquid and cook for about 45 seconds.
  • Then add fish sauce and stir thoroughly.
  • Divide noodles among 6 individual bowls, add clams, and then pour broth over it.
  • Serve immediately.

The classic, highly aromatic Thai seasoning for seafood includes lemongrass, galangal, lime leaf, hot pepper and coconut milk. Spicy and refreshing, the bright-tasting broth is a mix of sweet, salty, sour and herbaceous. You may substitute mussels or prawns for the clams.

Number Of Ingredients 16

1 tablespoon coconut oil
1 red onion, peeled, halved and sliced into 1/4-inch half-moons
2 cups chicken broth
1 stalk lemongrass, pale bottom part only, smashed and cut in thick diagonal slices
3 slices galangal, 1/4 inch thick (see note)
3 slices ginger, 1/4 inch thick
3 or 4 small hot Thai chiles, thinly sliced
4 makrut lime leaves, torn
1 tablespoon palm sugar or brown sugar
1 tablespoon fish sauce
1 cup coconut milk
Salt, to taste
2 pounds small clams
1 cup roughly chopped cilantro, leaves and tender stems
1/2 cup thinly sliced scallions, white and tender green parts
Lime wedges, for serving

Steps:

  • Heat coconut oil in a heavy-bottomed soup pot over medium-high heat. Add onions and cook until softened, about 5 minutes. Add chicken broth and bring to a simmer.
  • Add lemongrass, galangal, ginger, chiles, lime leaves, sugar and fish sauce. Simmer for 20 minutes. Add coconut milk, then taste broth for salt and adjust. (You may prepare up to this point 1 to 2 hours in advance and leave at room temperature.)
  • Bring mixture to a boil over high heat and add clams. Cover and cook for 5 to 8 minutes, stirring once or twice, until all clams have opened.
  • Transfer clams to soup bowls. Strain broth if desired and ladle over clams. Sprinkle with cilantro and scallions. Squeeze lime over each bowl and serve with lime wedges.

4 oz dried rice stick noodles
1 tbsp vegetable oil
2 shallots, thinly sliced
2 cloves garlic, smashed
1/2 cup chopped onion
2 1/2 cups chicken stock
1 can (14 oz) diced tomatoes, with juice
1 cup light coconut milk
3 tbsp rice vinegar
2 tbsp fish sauce
Zest of 2 limes (about 1 tbsp)
1-2 Thai red chiles, thinly sliced
1 tbsp sugar
1 stalk lemongrass, minced
6 sprigs cilantro, plus more for garnish
2 sprigs basil, plus more for garnish
1/2 cup canned straw mushrooms
12 large shrimp, peeled and deveined
4 large sea scallops, cut in half
1 cup frozen calamari rings, thawed
Juice of 1 lime

Steps:

  • Bring a medium saucepan of water to a boil. Stir in noodles; remove from heat. Let stand until noodles soften, 7 to 10 minutes; drain. Heat oil in a large pot over medium heat. Cook shallots, garlic and onion until soft, 3 to 5 minutes. Add stock, juice from tomatoes, coconut milk, vinegar, fish sauce, lime zest, chiles, sugar and lemongrass. Bring to a boil over medium-high heat. Add cilantro and basil; reduce heat to medium-low; simmer 10 minutes. Remove garlic, cilantro and basil from pot; add tomatoes and mushrooms. Return to a simmer. Add shrimp and scallops; cook 2 minutes. Add calamari and lime juice. Season with salt and pepper. Divide noodles among 4 bowls; top with broth and seafood; garnish with remaining basil and cilantro.

1/3 cup champagne or 1/3 cup white wine
3 tablespoons soy sauce
1 cup water
3 -4 lbs littleneck clams, well washed and drained
1 cup fresh basil leaf, cut into thin strips
2 tablespoons fish sauce

Steps:

  • Heat a heavy pot (or Wok) over a high heat until hot.
  • Add 2 Tablespoons peanut oil. Swirl oil until very hot but not smoking.
  • Add the garlic, scallions, and red pepper flakes. Stir for about 15 seconds.
  • Standing back, add the wine mixture, cover, and bring to a boil.
  • Add the clams, cover, and return the liquid to a boil. Immediately reduce the heat to medium and cook until the clams have just opened, 7 to 8 minutes, shaking the pot 3 or 4 times to ensure that the clams cook evenly.
  • Add the basil and stir it thoroughly into the liquid. Cover and cook for 30 to 45 seconds.
  • Add the fish sauce and stir thoroughly.
  • Serve immediately over rice noodles (Soba) or white rice.

1 large red bell pepper, seeded and sliced lengthwise

4 large fresh cherrystone clams, scrubbed
¼ cup chicken broth, or more as needed
1 fresh lime
1 teaspoon fish sauce

3 tablespoons chopped fresh basil, divided, or more to taste
12 large shrimp, peeled and deveined

Steps:

  • Heat peanut oil in a large saucepan over medium-high heat. Add onion and red bell pepper; saute until softened, about 4 minutes. Reduce heat to medium. Add ginger and garlic; cook and stir until fragrant, 1 to 2 minutes. Stir in red chile paste and coconut milk. Add the clams and simmer until flavors combine, 3 to 5 minutes. If curry appears too thick, stir in chicken broth.
  • Finely grate zest from the lime. Stir half of the zest into the curry along with fish sauce and brown sugar. Squeeze some lime juice into the curry. Stir in half of the basil and shrimp; simmer curry until shrimp are opaque and cooked through, 5 to 10 minutes. Thin the curry with more chicken broth if needed.
  • Scoop clams out of the curry, draining their juice back into the saucepan, and discard. Mix in remaining lime zest and basil before serving.

1 stalk fresh lemongrass
1/2 cup vegetable broth or chicken stock, preferably homemade
1 (1-inch) piece of fresh ginger, peeled and cut into matchsticks
2 jalapeño peppers, seeded and sliced
2 tablespoons Asian fish sauce
1 tablespoon light brown sugar
1/2 cup canned full-fat coconut milk (not refrigerated nondairy beverage)
2 pounds clams, scrubbed
Salt and freshly ground black pepper to taste
1 scallion (white and green parts), chopped
1/2 cup fresh cilantro leaves, chopped
1 lime, cut into wedges, for squeezing

Steps:

  • Using the sauté function, heat the oil in the pressure cooker. Add the shallots and sauté until they are soft and browned at the edges, 3 to 5 minutes.
  • Meanwhile, peel the outer layers from the lemongrass stalk and smash the inner core with the side of a heavy knife to bruise it (this helps release the flavor). Finely chop the core.
  • Add the lemongrass to the pot along with the stock, ginger, jalapeños, fish sauce, and brown sugar. Stir until the sugar has dissolved, and then bring the sauce up to a simmer, and simmer for 1 minute. Stir in the coconut milk and simmer until it has reduced by a third and is beginning to thicken, 5 minutes.
  • Add the clams, cover, and cook on low pressure for 1 minute. Release the pressure manually. Discard any clams that didn't open. Taste the sauce, and season it with salt and pepper to taste.
  • Serve the clams in bowls, spooning some broth over them and garnishing with the scallion, cilantro, and a squeeze of lime juice.

  • Rinse the clams under cool running water, then drain in a colander. Thinly slice the garlic. Cut the bird’s-eye chillies in half lengthwise and scrape out and discard the seeds. Slice the chilli flesh about 3mm (⅛in) thick. Slice the banana chillies on the diagonal into 5mm (¼in) pieces. Pour the fish sauce, oyster sauce and sugar into a bowl and stir thoroughly.
  • Heat 20ml (4tsp) of cooking oil in a wok placed over a high flame. When the oil is hot, add the garlic and both types of chillies. Stir fry for about 30 seconds, then add the clams. Add the fish sauce mixture, stir well and bring to the boil. Lower the heat, cover the wok with the lid and simmer for a few minutes, stirring often. Cook until most of the clams open, then taste the sauce and correct the seasonings, as necessary. Add some black pepper and the Thai sweet basil leaves. Stir until the basil wilts, then serve immediately with steamed rice.
