This is the base for making most of the popular Thai soups Tom Yum and Tom Kha Gai (coconut chicken soup).

1 chicken carcass
¾ cup thinly sliced galangal
2 kaffir lime leaves, or to taste
2 stalks lemon grass, crushed
2 chopped Thai chiles, or to taste
2 cloves peeled garlic
1 shallot, sliced
10 cups water

Steps:

  • Place the chicken carcass into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer for 5 minutes. Drain, and rinse the carcass under running water. Return the carcass to the pot along with the galangal, lime leaves, lemon grass, chile peppers, garlic, and shallot. Pour in 10 cups of water.
  • Return to a boil over high heat, then reduce heat to medium-low. Simmer uncovered for 1 1/2 hours, skimming the foam and fat often. Strain through cheesecloth before using.

2 lbs chicken pieces
1 onion, halved
3 carrots, halved
3 stalks celery, halved
1/2 cup cilantro stems
6 garlic cloves, crushed
1 slice ginger (1/2 inch thick)
1 teaspoon whole black peppercorn
10 cups water

Steps:

  • Place chicken, onion, carrots, celery, cilantro, garlic, ginger, peppercorns, and water in a stockpot. Bring to a boil over medium-high heat.
  • Skim off any froth that is on the surface.
  • Reduce heat and simmer covered for 2 hours.
  • Strain into a bowl, cool, and refrigerate.

6 lb chicken wings, halved at joint
4 qt cold water
1/2 cup coarsely chopped fresh cilantro stems
3 garlic cloves, smashed
3 (1/4-inch-thick) fresh ginger slices, smashed 1 1/2 teaspoons salt

Steps:

  • Crack chicken wing bones in several places with back of a cleaver or large knife on a cutting board. Bring all ingredients to a boil in an 8- to 10-quart pot, skimming froth as necessary, then reduce heat and gently simmer, partially covered, 2 1/2 hours.
  • Remove pot from heat and cool stock to room temperature, about 1 hour. Pour stock through a large fine-mesh sieve lined with a triple thickness of cheesecloth into a large bowl and discard solids. Measure stock: If there is more than 10 cups, boil in cleaned pot until reduced; if there is less, add water.
  • If using stock right away, skim off and discard fat. If not, cool stock completely, uncovered, before skimming fat (it will be easier to remove when cool), then chill, covered.

Most of the ingredients for this Thai-inspired soup can be found in the supermarket. The red curry paste is spicy, but by controlling the amount of paste you add, you can tailor this to your own threshold of pain.

3 lemongrass stalks, bottom two-thirds of tender inner bulbs only, thinly sliced
4 cloves garlic, chopped
1 (4 inch) piece fresh ginger root, chopped
4 cups chicken broth
1 tablespoon vegetable oil
2 ½ pounds skinless, boneless chicken thighs, cut into chunks
12 ounces fresh white mushrooms, quartered
2 teaspoons red curry paste
3 tablespoons fish sauce
1 lime, juiced
2 (14 ounce) cans coconut milk
1 red onion, sliced
½ bunch cilantro, roughly chopped
1 lime, cut into wedges, for serving
1 fresh jalapeno pepper, sliced into rings

Steps:

  • Stir lemon grass, garlic, and ginger together in a large stock pot over medium-high heat. Stir in chicken broth and bring to a boil. Reduce heat to low and simmer for 30 minutes.
  • Strain chicken broth and set aside. Discard lemon grass, garlic, and ginger.
  • Heat vegetable oil in a large soup pot over medium heat; Stir in chicken; cook and stir for 5 minutes.
  • Stir in mushrooms and cook for 5 more minutes.
  • Stir in red curry paste, fish sauce, and lime juice until combined. Stir in chicken broth and coconut milk; return to a simmer and cook on low for 15 to 20 minutes.
  • Skim off any excess oil and fat that rises to the top and discard.
  • Stir red onion into the chicken mixture; cook and stir until onion softens, about 5 minutes.
  • Remove from heat and add about 1/2 the cilantro.
  • Serve with plates of cilantro, lime wedges, and fresh sliced jalapenos.

1l hot chicken stock
1 tbsp Thai red curry paste
1 tbsp Thai fish sauce
2 tsp sugar
zest and juice 2 limes
100g Portobello mushrooms, sliced
bunch spring onions, sliced, whites and greens seperated
200g leftover chicken, shredded

Steps:

  • Tip the stock into a saucepan, then stir in the curry paste, fish sauce, sugar, lime juice and most of the zest. Bring to the boil, then add the mushrooms and whites of the spring onion. Cover, then simmer for 2 mins.
  • Stir in the chicken and most of the spring onion greens to gently heat through, then serve ladled into bowls and scattered with the remaining lime zest. Serve with extra lime juice, sugar and fish sauce on the side so everyone can adjust their own bowlfuls.

A spicy, nourishing soup packed full of vegetables and Asian flavours - rice noodles help keep the fat and calories low

500ml chicken, beef or vegetable stock (use a stock cube at around 35-40 cals, or homemade, cleared of fat)
½ lemongrass stalk, tough leaves removed, thinly sliced
1 lime leaves , thinly sliced, or the grated zest ½ lime
15g fresh ginger , grated
1 tsp Thai fish sauce
½ red chilli , seeds removed, thinly sliced
85g spring cabbage , cut into wedges
50g carrot , thinly sliced
50g green bean , cut into 2.5cm lengths
25g rice noodle , cooked, following pack instructions and rinsed in cold water
¼ lime

Steps:

  • Bring the stock to a simmer in a large pan. Add the lemongrass, lime leaf or zest, ginger, fish sauce and as much chilli as you like. Simmer for 20 mins. Add the cabbage and simmer for another 30 mins until it is very soft. Add the carrots and beans, and simmer for 3 mins. Top up with more boiling water if necessary.
  • Put the rice noodles in a bowl and pour over the boiling broth. Serve with a wedge of lime to squeeze over.
