This is a soup that I used to sell at my Farmer's Market, that was very popular. If you omit the sour cream garnish, this recipe is Vegan. Besides being Vegan, it is delicious.

1 medium onion, chopped
1 celery rib, chopped
1 garlic clove, chopped
1 teaspoon olive oil
1 lb carrot, cut in 1-inch pieces
1 inch piece fresh gingerroot, peeled and sliced
1 teaspoon red pepper flakes
3 cups vegetable broth
1 1/2 tablespoons soy sauce
2 tablespoons creamy peanut butter
1 teaspoon sesame oil
13 1/2 ounces coconut milk, unsweetened
1 bunch fresh cilantro leaves, chopped

Steps:

  • In a large soup pot, saute onion, celery and garlic in oil, over medium heat, stirring so as not to let the onions scorch.
  • Add the carrots, ginger, red pepper flakes and vegetable broth, and simmer covered, for about 40 minutes.
  • Add remaining ingredients and simmer for 3 minutes, stirring to mix well.
  • Using an immersion blender, puree the soup until it is smooth and the cilantro leaves are in tiny little pieces. Do not let boil.
  • Ladle into soup bowls and garnish with a dollop of sour cream, if desired.

This can be made 2 days ahead and refrigerated, or frozen up to 3 months. Thaw before warming and warm slowly so it doesn't burn.

1 tablespoon oil
1 whole Spanish onion, thinly sliced
2 garlic cloves, minced
1 inch gingerroot
1 3/4 lbs carrots, peeled and thinly sliced
4 cups canned chicken broth
1/4 cup fresh cilantro, chopped
red pepper flakes, crushed

Steps:

  • Heat oil in 3-quart saucepan over medium-high heat.
  • Add onion, garlic, ginger, and carrots.
  • Cook, stirring frequently, until hot and fragrant about 4 minutes.
  • Add 3 cups stock.
  • Simmer, covered, until carrots are tender, about 25 minutes.
  • Drain liquid from solids.
  • Reserve liquid.
  • Puree solids with cilantro in blender or processor until smooth.
  • Add as much liquid as container can hold.
  • Puree until even smoother.
  • Transfer to 3-quart bowl.
  • Add remaining liquid, if any, and remaining 1 cup of stock.
  • Season to taste with salt and crushed red pepper.
  • Serve chilled or hot.
  • Adjust seasonings to taste before serving.

2 tablespoons corn oil
1 small onion, chopped
3 garlic cloves, chopped
1 inch ginger, chopped fine
2 tablespoons chopped lemongrass
4 cups chicken broth
1/4 cup jasmine rice
7 medium carrots, peeled and sliced thick
1 tablespoon cumin
1 1/2 teaspoons cardamom
1/4 teaspoon nutmeg
1 (15 ounce) can coconut milk
3 tablespoons fish sauce
1 lime, juiced
1 tablespoon soy sauce
2 tablespoons coriander, chopped
1 tablespoon basil, chopped

Steps:

  • Pour oil into heated saucepan. Add chopped onion and ginger, and lemongrass. Stir fry for about 1 minute.
  • Add the chicken broth and rice, and bring to a boil.
  • Add the carrots and spices. Reduce heat to medium, cover, and continue cooking for another 20 minutes, until carrots and rice are soft.
  • Add the coconut milk and stir. Using an immersion blender, puree the soup, being careful of splatter.
  • Add the fish sauce, soy sauce, and lime juice, adjusting flavours to taste.
  • Add basil and cilantro.

1 pound carrots, peeled and coarsely chopped
2 cloves garlic, minced
Juice of 1 lime
1 cup unsweetened canned coconut milk
1 teaspoon Thai fish sauce (nuocmam)
2 teaspoons sugar
1/2 teaspoon salt, or more to taste
1/4 teaspoon chili oil, or to taste
2 scallions, sliced thin

Steps:

  • Put the carrots in a saucepan, add water to cover and simmer until the carrots are very tender, about 20 minutes.
  • Drain the carrots and put them in a blender with the garlic, lime juice and a cup of water. Process until very smooth.
  • Return the carrot puree to the saucepan and stir in the coconut milk, fish sauce, sugar and salt. Bring to a simmer. Season with chili oil. Float chopped scallions on each serving.

  • Heat the oil in a dutch oven or soup pot over medium heat. Add the onions and garlic and saute it for 3-4 minutes or until the onions turn translucent. Add the ginger paste and continue to cook for 30 seconds. Add the carrots, curry paste, curry powder, vegetable broth, brown sugar, and peanut butter and allow the soup to come to a boil. Reduce the heat and let simmer for 30-35 minutes or until the carrots are tender.
  • Ladle the soup into a blender and puree till smooth or use an immersion stick blender right in the pot. If the soup seems a little thin to your preference, allow it to come back to boil and let simmer for another 5 minutes. Season with additional salt to taste
  • To saute the spinach - just add a drizzle of oil to a pan. Add ~ 3 cups of baby spinach and season with salt and pepper. Push the spinach around the pan and allow for it to wilt, about 2-4 minutes. You can season with a pinch of garlic powder for added flavor if you'd like.
