A batch of homemade Tex Mex Seasoning is the best shortcut to making tacos, burrito bowls, fajitas, soups, or other Southwestern-style dishes. Keep a batch of this in your pantry and use it in any Southwestern or Mexican recipe. NOTE: This makes enough for any recipe that makes 4 servings, but use the slider below (next to "Servings") to easily adjust the measurements so you can make a big batch to store for future recipes.

1 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Ground Coriander
1 tsp Paprika
1/2 tsp Salt (optional; see note)
1/2 tsp Garlic Powder - Make sure you use garlic powder and not garlic salt.
1/2 tsp Dried Oregano

Steps:

  • Salt is always optional in homemade seasoning. Feel free to add it to the blend now or wait and add it, to taste, when you make a recipe later. (Just don't forget it entirely. Salt will bring out the flavors in the recipe you're making and will allow this seasoning blend to really shine.)
  • Combine all ingredients in a bowl. Store in an airtight container for up to 6 months.

  • Combine Spices: Mix the ingredients together in a bowl. Transfer to an airtight container or jar and store in a cool, dry, place for up to 6 months.

Tex-Mex Beer-Can Chicken image

This beer-can bird is delicious on its own, paired with cilantro-lime rice, or shredded and tucked into tacos with your favorite fixings.

1 whole roasting chicken (3 1/2 to 4 lb)
4 tablespoons cold butter, cut into tablespoons
3 green onions, thinly sliced, white and green parts separated
1/4 cup vegetable oil
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1/2 teaspoon salt
1 can (12 oz) beer
Chopped fresh cilantro leaves, Old El Paso™ Thick 'n Chunky salsa, lime wedges, as desired

Steps:

  • Heat gas or charcoal grill for indirect cooking. Remove and discard neck and giblets from chicken cavity. Pat chicken dry with paper towels. Carefully loosen skin at top of breast. Place butter and green onion whites evenly under skin of breast, without removing skin.
  • In small bowl, mix vegetable oil, taco seasoning mix and salt. Rub all over outside of chicken. Open beer can; with can opener, make several other openings in top. Measure out 2/3 cup beer; discard or reserve for another use.
  • Place half-full can of beer in ungreased shallow 8x8- or 13x9-inch aluminum grill pan. Carefully place chicken cavity over can, pushing until chicken balances in pan.
  • Place on grill over medium heat, making sure chicken is balanced. Cover grill; cook 1 hour to 1 hour 15 minutes or until legs move easily when twisted or lifted and thermometer inserted in thickest part of thigh reads at least 165°F.
  • With tongs and flat metal spatula, carefully remove chicken and can from pan on grill; place on clean cutting board or serving platter. Carefully remove pan and drippings; let cool, then discard. Let chicken stand 5 to 10 minutes. Twist can to remove from chicken; discard can. Sprinkle with cilantro and green onion greens. Serve with salsa and lime wedges.
  • To bake chicken, place oven rack in lowest position and heat oven to 375°F. Place prepared chicken on can in lightly sprayed 8-inch square (2-quart) baking dish. Bake 1 hour to 1 hour 15 minutes or until legs move easily when twisted or lifted and thermometer inserted in thickest part of thigh reads at least 165°F. Let chicken stand 5 to 10 minutes. Twist can to remove from chicken; discard can. Sprinkle with cilantro and green onion greens. Serve with salsa and lime wedges.

PLAN/PURCHASE
3 Tbsp chili powder, i prefer ancho
2 Tbsp dehydrated onions
2 Tbsp ground cumin
1 Tbsp dried oregano
2 tsp hungarian paprika, not smoked
2 tsp garlic powder
1 tsp red pepper flakes
1 tsp black pepper, freshly ground.

Steps:

  • 1. PREP/PREPARE
  • 2. If kept in a cool dry place (the pantry comes to mind), most spices will last up to a year.
  • 3. If you have an old glass spice bottle with a shaker top, that would be an ideal storage container.
  • 4. Gather your ingredients (mise en place).
  • 5. All of the ingredients have a ground consistency, except 3: The dehydrated onions, dried oregano, and the red pepper flakes. So, before mixing all the ingredients together, place those 3 into a spice grinder, or mortar, and grind until they are the same consistency as the other spices.
  • 6. Mix all the ingredients together, and store in a bottle or jar with a tight-fitting lid.
  • 7. PLATE/PRESENT
  • 8. I use this in a lot of different recipes: • With chicken, beef, or chicken tacos • Shake a bit over a taco bowl • As a spice topping on mashed, or smashed potatoes • Sprinkled over a queso cheese and chili dip • Add to mac & cheese for a South-of-the-Border twist And, leave a shaker full of it on the table for Taco Tuesdays Enjoy.

1/2 cup mayonnaise
1/2 cup sour cream
Corn chips
ADDITIONAL INGREDIENTS FOR TEX-MEX CHICKEN:
7 cups uncooked wide egg noodles
1 package (16 ounces) process cheese (Velveeta), cubed
1 cup sour cream
2 tablespoons milk
3 packages (6 ounces each) ready-to-use Southwestern chicken strips
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, undrained

Steps:

  • In a small bowl, combine the first five ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: about 6 tablespoons., To prepare dip: In a small bowl, combine the mayonnaise, sour cream and 4-1/2 teaspoons seasoning mix. Serve with corn chips. Yield: about 1 cup., To prepare chicken: Cook noodles according to package directions. Meanwhile, in a large saucepan, combine the process cheese, sour cream and milk. Cook and stir over medium-low heat until cheese is melted. Add the chicken, beans, tomatoes and 2 tablespoons seasoning mix; heat through., Drain noodles; add to sauce and toss to coat.
