"MAMA'S ITALIAN GRAVY & MEATBALLS"



Nothing better than the aroma rolling through your house on a lazy Sunday afternoon from a big pot of "Red Gravy" and hand rolled meatballs....Mmmmmmmm Goodness!!!!!! Feels like I am back in Mama's Kitchen.

1 can(s) 28.5oz crushed tomatoes
1 can(s) 28.5oz tomato puree
1 can(s) 28.5oz tomato sauce
1 small can tomato paste
1 c chopped onion
4 sprig(s) fresh basil chopped fine
3 clove chopped garlic
2 Tbsp fresh parsley chopped fine
1 tsp italian seasoning
1 tsp salt
1 tsp pepper
1 tsp red pepper flakes
1 c red wine
MAMA'S HAND ROLLED MEATBALLS
1 lb sweet italian ground sausage
1 lb ground pork
3/4 lb ground chuck
1/4 c diced onion
1/2 c grated parmesan cheese
1/2 c bread rumbs (dry)
2 large eggs
1 tsp chopped garlic
1 pinch salt
1 pinch pepper

Steps:

  • 1. first of all lets roll up some meatballs: In a large bowl whisk two eggs lightly, add in salt, pepper, diced onion, grated parmesan, bread crumbs, chopped garlic combine well, add your ground pork, ground sausage & ground chuck...then just get in there with your hands and mix those ingredients very well. Then by eye just start pinchin' rollin' and placing on a bake sheet. Place in a pre-heated 325* oven for 30 minutes.
  • 2. While the meatballs are cooking start the "Gravy": In a large stock pot add 2tbs of olive oil and heat over med-high heat, add chopped onion and cook 5 minutes stirring often, add chopped garlic cook 2 minutes, add in you tomato paste and mix well, then add tomato puree & crushed tomatoes stir well, add your fresh basil and parsley, italian seasoning, crushed red pepper, red wine and your tomato sauce. stir well and reduce heat to low. When meatballs are ready remove from oven place on paper towel to absorb a little of the fat, then add to your gravy pot, stir well, hit with salt & pepper, replace lid and simmer 4 hours.
  • 3. 4 hours later the perfect plate of pasta. Spaghetti noodles cooked per box instructions, Mama's homemade Gravy and Meatballs topped with fresh grated parmesan and a slice of toasted garlic bread with olive oil....Mmmmmmmm Goodness!!!!

2 lbs ground beef
1 cup chopped onion
4 garlic cloves
3 eggs
1/2 cup chopped parsley
4 slices white bread
1 cup milk
1 cup grated locatelli cheese or 1 cup parmesan cheese
1 cup breadcrumbs
2 teaspoons salt
1/2 teaspoon pepper
3/4 cup extra virgin olive oil
8 garlic cloves, minced
1 medium sweet onion, chopped fine
3 (35 ounce) cans crushed tomatoes (I use Tuttaruso in the blue can)
1 (35 ounce) can tomato puree (I use Tuttaruso in the blue can)
1/2 cup chopped fresh basil
2 tablespoons salt
1 cup sugar
1 teaspoon fresh thyme

Steps:

  • MEATBALL DIRECTIONS.
  • In food processor chop onions, garlic, parsley. Soak bread in milk, then put in food processor with eggs and cheese. Add this mixture to ground beef with salt and pepper. Add bread crumbs to make soft firm ball. Roll meatballs, place on baking sheet and bake in 350 degree oven 30-40 minutes. Put in gravy and simmer for 1-2 hours.
  • TOMATO GRAVY DIRECTIONS:.
  • Sautee' onions and garlic until soft. Add remaining ingredients, stir and simmer 1 hour. Add meatballs and simmer another hour.

MAMA IULIUCCI'S FAMOUS MEAT-A-BALLS (ITALIAN MEATBALLS)

Here it is, my mom's FAMOUS Meatball recipe! This is THEE most requested of her for anything, anywhere! Whenever there is a shower, birthday, christening, etc., someone is asking for 150 to 200 of her famous meatballs. :) Of course, she always says yes! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed-up jarred sauce and they are still great. However, meat-a-balls like these deserve a homemade sauce, in my humble opinion!

2 lbs lean ground beef
8 -10 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up)
2 eggs, slightly beaten
1/2 teaspoon garlic powder (or to taste)
1 teaspoon italian seasoning (or to taste)
2 teaspoons parsley flakes (or to taste)
1/4-1/2 cup grated parmesan cheese (or Locatelli)
1 -2 teaspoon salt
1/4-1/2 teaspoon black pepper
olive oil (for frying) or vegetable oil (for frying)

Steps:

  • Mix all ingredients gently in a large bowl until well combined.
  • Roll meatballs 1 1/2- 1 3/4" in diameter.
  • Heat about 1/4" of oil over medium heat in a large frying pan.
  • Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.
  • Drop meatballs in your favorite sauce (I highly recommend My Mama Iuliucci's"Don't Skip a Step" Spaghetti Sauce recipe#26947) and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce.
  • Tip: You can also bake or broil these if the frying part is too much of a hassle-- I use my broiler pan if I bake them, so the fat drips down and away from the meatballs.

olive oil
1 lb bone in country-style spareribs or 1 lb pork neck bones
1 lb mild Italian sausage
5 garlic cloves (I use 5)
1/2 cup tomato paste, less than
3 (14 1/2 ounce) cans peeled whole tomatoes (or if you want use peeled fresh tomatoes from the garden)
salt and pepper
fresh basil leaf (you can buy it in the produce section)
3 garlic cloves, minced
1 lb ground beef
3/4 cup Italian breadcrumbs
3 eggs
1/2 cup parmesan cheese or 1/2 cup finely grated pecorino romano cheese
3 tablespoons chopped fresh Italian parsley
salt and pepper

Steps:

  • SAUCE: Heat oil in large heavy pot (use a seasoned pot if you have one). Place the pork in the pot and brown until just about cooked. Transfer pork to plate. Do the same with the sausage and transfer to plate. Leave fat in pot. Add whole peeled garlic cloves cook until tender. Put garlic on plate with meat and stir in tomato paste until "saucy". Chop up tomatoes leaving the tomato juice in the cans (I use my chopper) and add them to the pot.
  • Then add 1/2 of one can of the juice to the pot. Add salt and pepper to taste. Add the meats and garlic to the sauce and bring to a boil. Turn down to low and cook for about 1 1/2 hours. Leave the sauce on low and remove all the meat and garlic cloves.
  • Mix all ingredients for meatballs and shape into balls. Add to sauce turn up just a little higher than low and let cook the raw meatballs until they are done (1/2 hour) THATS IT!
  • Now this is an old recipe, but I have seen it in the sopranos cookbook and this is a bit different.
  • I used this sauce to make the ziti al forno from the sopranos cookbook (Recipe #73939) and it was the most amazing thing I have ever eaten, so I posted that too.

CHEF ROCCO DISPIRITO'S MAMA'S MEATBALLS

While watching the cooking segment of the October 19th episode of The Tony Danza Show, Chef Rocco's Dispirito's mama prepared her infamous meatballs. I have not tried them, but I have a friend that did the following night and said she will never make another meatball recipe again.

1/3 cup chicken stock
1/4 cup diced yellow onion
1 clove garlic, minced
1/4 cup fresh flat-leaf Italian parsley, chopped fine
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
1/3 cup plain breadcrumbs
2 eggs
1/4 cup parmigiano-reggiano cheese, grated
1 teaspoon red pepper flakes
1 teaspoon salt
1/4 cup extra virgin olive oil
3 -6 cups of your favorite marinara sauce

Steps:

  • Place the chicken stock, onion, garlic, and parsley in a blender or food processor and puree.
  • In a large bowl, combine the pureed stock mix, meat, bread crumbs, egg, Parmigiano-Reggiano cheese, red pepper flakes, and salt.
  • Combine with hands until mixture is uniform, do not overmix.
  • Put a little olive oil on your hands and form mixture into balls a little larger than golf balls.
  • Pour about 1/2 inch of extra virgin olive oil in straight sided, 10-inch-wide saute pan and heat over medium-high flame.
  • Add the meatballs to the pan, working in batches if necessary, and brown meatballs, turning once.
  • This should take about 10-15 minutes.
  • While meatballs are browning, heat the marinara sauce in a large pot.
  • Transfer the meatballs to the pot with the marinara sauce and simmer for one hour.
  • Serve alone or over your favorite pasta.

A hand me down recipe of true Italian origin that was shared with me by a good friend. The recipe has been in his Italian family for years. Very simple to make with a fairly short cooking time as compared with others!!!!

3 lbs ground beef
3 slices white bread (water soaked)
2 eggs
2/3 cup grated romano cheese
3 1/2 teaspoons salt
1 1/4 teaspoons black pepper
2 teaspoons sugar
1 teaspoon garlic powder
2 teaspoons crushed dry oregano
4 cloves crushed garlic
1/2 cup vegetable oil
1 (29 ounce) can tomato sauce
1 (29 ounce) can tomato puree
1 (29 ounce) can water
1 (6 ounce) can tomato paste
2 -3 pieces of fresh pork necks or 2 -3 pieces pork ribs

Steps:

  • In a large pot combine tomato sauce, tomato puree, tomato paste, water, sugar, oregano, 2 tspn salt, 1 tspn pepper, garlic cloves and bring to a simmer on low heat.
  • Combine ground beef, bread, eggs, Romano cheese, 1 1/2 tspn salt, garlic powder and 1/4 tspn pepper.
  • Mix ingredients and form into meatballs 2-3" in diameter.
  • In a large skillet use enough of the veg oil to have approx 1/8" covering bottom
  • Heat on medium.
  • When oil is hot enough, brown meatballs on all sides and add to pot with sauce.
  • Brown pork neck or ribs in same pan and add to sauce.
  • Add at least 1/2 of remaining oil in skillet to pot.
  • Don't forget to add all of those small cooked bits from skillet bottom.
  • (Great Flavor!!!) Any excess oil or fat can be spooned off of sauce after cooking.
  • Cook uncovered (simmer) for 1 1/2 hrs.
