EASY TEX-MEX CHICKEN AND RICE



Easy Tex-Mex Chicken and Rice image

1 tablespoon olive oil
2 cloves garlic, pressed
1/2 white onion, diced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground turmeric
One 15-ounce can tomato sauce
One 10-ounce can diced tomatoes and green chiles
3 cups shredded rotisserie chicken
Two 8.8-ounce bags microwaveable white rice
1 1/2 cups grated pepper jack cheese
Fresh cilantro, for serving

Steps:

  • In a deep skillet, heat the olive oil over medium-high heat. When the oil is hot, add the garlic, onion, chili powder, cumin, cayenne pepper, salt, pepper and turmeric. Cook, stirring often, until the onion is soft and the spices are toasted, about 3 minutes.
  • Pour in the tomato sauce, diced tomatoes and green chiles, chicken and both bags of rice. Stir together and cook until the rice is heated through and beginning to absorb some of the liquid, about 5 minutes. Turn the heat to low and sprinkle the pepper jack over the top. Cover with a lid and allow the cheese to melt completely, 2 to 3 minutes.
  • Sprinkle over the cilantro and serve.

Kosher salt
1 pound spaghetti
Two 10 3/4-ounce cans cream of chicken soup
2 generous cups pulled rotisserie chicken (from about 1 large chicken)
1 cup chicken stock
1 tablespoon adobo sauce from canned chipotles
1 teaspoon seasoned salt
1 poblano pepper, finely diced
1 small red bell pepper, finely diced
1 medium onion, finely diced
2 1/2 cups shredded sharp pepper jack cheese
Freshly ground black pepper
Fresh cilantro leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to the boil. Cook the spaghetti according to the package instructions, then drain.
  • Combine the spaghetti with the cream of chicken soup, pulled chicken, chicken stock, adobo sauce, seasoned salt, poblano pepper, bell pepper, onion and 1 1/2 cups of the pepper jack in a large bowl. Add salt and pepper to taste, then stir.
  • Transfer the mixture to a 13-by-9-inch casserole dish and top with the remaining 1 cup pepper jack. Bake until bubbly, about 45 minutes. Garnish with cilantro leaves before serving.

1 tablespoon olive oil, plus more for brushing the grill grates
3/4 teaspoon cayenne pepper
1 clove garlic, minced
1/2 cup creamy peanut butter
1/4 cup ketchup
1 teaspoon soy sauce
1 teaspoon fresh lime juice
2 large boneless, skinless chicken breasts, cut into 1-inch pieces (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
Roughly chopped fresh cilantro, for garnish
Thinly sliced Fresno chile, for garnish (optional)
For serving: Steamed white rice and lime wedges

Steps:

  • Preheat the grill to medium. Soak the skewers in water for at least 30 minutes.
  • Heat the oil in a small skillet over medium heat, add the garlic and cook, stirring, until just golden, about 1 minute. Add the peanut butter, ketchup, soy sauce and 1/2 cup water and stir until well blended. Remove from the heat, stir in the lime juice and set aside.
  • Sprinkle the chicken with salt and pepper and thread onto the skewers. Lightly oil the grill grates. Grill the chicken, flipping often, until cooked through, 4 to 6 minutes. Drizzle some of the sauce over the chicken and scatter with cilantro and Fresno chile if using. Serve with the remaining peanut sauce, steamed rice and lime wedges.

This is a great recipe! I've used it as a main dish and as an appetizer at parties. I use cornflakes for the coating and crushed red pepper flakes instead of ground red pepper--you can make it as spicy or as mild as you like. The cilantro dip cools and complements the chicken.The original recipe came from Better homes and Gardens.

6 inches wooden skewers
1/4 cup corn flake crumbs or 1/4 cup dry bread, crumbs
1 tablespoon chili powder
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1/4 teaspoon ground red pepper or 1/4 teaspoon crushed red pepper flakes
1 lb boneless skinless chicken breast half
2 tablespoons margarine or 2 tablespoons butter, melted
1 (8 ounce) carton sour cream
3 tablespoons fresh cilantro, snipped

Steps:

  • 1. Soak skewers in water for 30 minutes.
  • 2. While soaking skewers, combine crumbs, chili powder, black pepper, salt, and red pepper in a shallow dish.
  • 3. Cut chicken into strips, thread onto skewers. Brush chicken with melted butter or margarine. Roll in crumb mixture.
  • 4. Place chicken skewers in a single layer on a lightly greased baking sheet. Bake in a 400 degree oven for 8 to 10 minutes or until tender and no longer pink, turning once.
  • 5. While chicken is baking, stir together sour cream and cilantro in small bowl. Serve alongside chicken.

1 pkg taco seasoning mix, divided
6 boneless, skinless chicken breast halves, cut into 1" pieces
1 large clove garlic
1/4 tsp salt
2 Tbsp vegetable oil
1 c plain, non-fat yogurt
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 large purple onion, cut into chunks
1 small lime zested and juiced

Steps:

  • 1. In a large bowl combine 3 tbsp. taco seasoning mix (or less if desired), lime zest and juice and chicken; toss to coat well. Cover and chill 2 hours.
  • 2. For sauce, grate garlic clove or use garlic press and combine with salt to form a smooth paste. Place in a small bowl with vegetable oil; mix well. Stir in yogurt and taco seasoning to taste . Cover and chill before serving.
  • 3. Thread the chicken alternately with peppers and onion; grill over hot coals 10-12 minutes, turning occasionally. Serve with Yogurt Sauce. (If using wooden skewers, remember to soak them first).

Steps:

  • Heat grill to medium heat.
  • In a small bowl mix together the spices and then sprinkle over both sides of the chicken.
  • Spray the chicken with non stick cooking spray and place on preheated grill. Cover.
  • Grill 7-10 minutes or until no longer pink in the center, turning once.
  • Serve with avocado salsa or on a salad.
  • I like to pound the chicken to an even thickness for faster and more even cooking.
