PINEAPPLE & MACADAMIA NUT CAKE



Pineapple & Macadamia Nut Cake image

This delicious cake is one of my own invention. It's been a huge hit among family and friends and even inspired fierce bidding at a local charity auction! -Greta Kirby, Carthage, Tennessee

Number Of Ingredients 16

1 package white or yellow cake mix, regular size
1-1/4 cups unsweetened pineapple juice
1/2 cup canola oil
3 large eggs, room temperature
FILLING:
3/4 cup sugar
4 teaspoons all-purpose flour
2 large egg yolks
1/4 cup butter, melted
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/4 cup chopped macadamia nuts, toasted
FROSTING:
1/2 cup butter, softened
4 cups confectioners' sugar
2 to 4 tablespoons 2% milk
Additional chopped macadamia nuts, optional

Steps:

  • Preheat oven to 350°. Combine cake mix, pineapple juice, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into three greased and floured 8-in. round baking pans., Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., For filling, combine sugar and flour in a large saucepan. Whisk in egg yolks, butter and pineapple until blended. Bring to a boil over medium heat; cook and stir until thickened and bubbly, about 2 minutes. Remove from heat; cool to room temperature. Reserve 1/3 cup pineapple mixture for frosting; gently stir nuts into remaining pineapple mixture., Place one cake layer on a serving plate; spread with half of the filling. Repeat. Top with remaining cake layer., For frosting, cream butter, confectioners' sugar, reserved pineapple mixture and enough milk to reach a spreading consistency. Spread over top and sides of cake. If desired, chop and toast additional nuts; sprinkle on top and around bottom of cake.

One 17.5-ounce package sugar cookie mix
1 egg
1 stick butter, melted
3/4 cup flaked sweetened coconut
1/2 cup chopped macadamia nuts (recommended: Mauna Loa)
1/2 cups white chocolate chips, for drizzle

Steps:

  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, combine all ingredients for cookies except the white chocolate chips. Stir until soft dough forms.
  • Drop cookie dough by tablespoonfuls onto ungreased cookie sheet. Bake for 15 to 16 minutes or until edges are light golden brown. Remove from oven and cool 1 minute.
  • Melt white chocolate chips in microwave in 30 second intervals, stirring each time, until smooth. Drizzle over cookies.

im not much of a fan of carrot cake but this cake was amazing, i made it for a date and he loved every bit of it! this is one that i will be making for many years to come, it has the right anount of sweet and spice to it, if youre not a carrotcake person like myself, this cake will change your mind!

2 1/3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 cup pineapple juice
1/2 cup canola oil
3/4 cup sugar
1/2 cup pure maple syrup
2 teaspoons vanilla extract
1 cup macadamia nuts, roughly chopped
1/4 cup crystallized ginger, chopped
1 cup unsweetened dried shredded coconut
2 cups carrots, grated
1/4 cup margarine (at room temperature)
1/4 cup coconut milk
1 teaspoon vanilla extract
2 cups confectioners' sugar, sifted
1 cup unsweetened coconut

Steps:

  • preheat oven to 350 and have ready 2 8 inch round springform cake pans lightly greased.
  • in a large bowl, sift together flour, bakinh powder, baking soda, salt, and ground spices.
  • in a separate mixing bowl, mix together pineapple juice, oil, sugar, maple syrup, and vanilla.
  • add dry ingredients to wet ones until smooth.
  • fold in the macadamias, ginger, coconut, and carrots.
  • divide the batter evenly between the 2 round cake pans and bake for 40 - 45 minutes.
  • let cool in pans.
  • frost with coconut frosting and serve!
  • for frosting:.
  • cream the margarine until light and fluffy.
  • add the coconut milk and vanilla and combine.
  • add the sifted confectioners' sugar and mix till smooth.
  • add unsweetened coconut and combine.

250 g pineapple, tinned, crushed, drained
1 cup self raising flour
1/2 cup coconut

Steps:

  • Beat sugar and eggs until thick and creamy.
  • Mix nuts and pineapple together.
  • Add to egg and sugar mixture.
  • Add flour and beat well.
  • Grease and flour a ring tin.
  • Spoon in mixture, sprinkle with coconut.

2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda

1 cup old-fashioned or quick-cooking oats
1/2 cup coconut
1/2 cup coarsely chopped macadamia nuts

Steps:

  • Heat oven to 375°F. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until well blended. On low speed, beat in flour, baking soda, cinnamon and salt until well blended. Stir in oats, coconut and nuts.
  • On ungreased cookie sheets, drop dough by rounded teaspoonfuls 2 inches apart.
  • Bake 8 to 10 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks.

  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar on medium-high speed for 3 to 5 minutes, until light yellow and fluffy.
