1 bag Success Garden and Grains™ White Rice, Black Beans, Corn, & Bell Peppers
1 tablespoon vegetable oil
½ cup chopped onion
1 tablespoon taco seasoning mix
1 cup cooked shredded chicken
6 large (10-inch) flour tortillas
1 cup shredded cheddar cheese
1 cup pico de gallo
Guacamole
Lime wedges

Steps:

  • Learn how to make the perfect simple burrito in just 20 minutes using chicken and a convenient blend of our Success Garden and Grains™ White Rice, Black Beans, Corn, & Bell Peppers. Step 1
  • Prepare rice according to package directions. Step 2
  • Heat oil in a medium skillet over medium heat. Add onions and taco seasoning and sauté 2 minutes. Add chicken and rice and sauté 2 more minutes, until mixture is hot and well combined. Step 3
  • Wrap tortillas in damp paper towels and microwave 1 minute, or until warm and pliable. Step 4
  • Divide hot rice mixture in center of warm tortillas. Top each with cheese and pico de gallo. Step 5
  • Roll into burrito shape. Serve with guacamole and lime wedges. Recipe Tip Substitute chicken with cooked ground beef. Use salsa instead of pico de gallo. Omit tortillas and serve in bowls with tortilla chips.

2 (6 inch) flour tortillas
1/2 cup shredded sharp cheddar cheese, divided
3/4 cup mexican chicken, and
cooked Mexican rice, divided (I used leftovers from Tex-Mex Chicken and Rice )

Steps:

  • Warm Mexican chicken and rice mixture in microwave for 2 minutes.
  • Then warm tortillas in microwave for 15 seconds or until soft enough to fold.
  • Place half of chicken/rice mixture into center of each tortilla,top each with cheese.
  • Fold bottom third over mixture,making sure filling is snug.
  • Take the right side of tortilla and fold over.
  • Then take the top third and fold over making sure everything is as snug as a bug in a rug. :).
  • Return to microwave and heat for about 35 to 40 seconds,or until cheese is slightly melted.

1 lb lean ground beef
1 1/4 cups finely chopped peeled potatoes
1/2 cup chopped onion
2 cloves garlic, minced
2 fresh jalapeno peppers or 2 canned jalapeno peppers, seeded and finely chopped
1 (15 ounce) can spicy chili beans, undrained
1/4 teaspoon salt (or to taste)
1/8 teaspoon pepper (or to taste)
1/4-1/2 teaspoon ground cumin (optional)
10 spinach tortillas or 10 plain flour tortillas (10-inch)
1 -2 cup shredded monterey jack cheese or 1 -2 cup cheddar cheese
salsa
sour cream

Steps:

  • In a non-stick skillet, add ground beef, potatoes, onion, garlic, and jalapeno peppers.
  • Cook over medium-high heat for 5-7 minutes or until beef is browned and vegetables are tender; stir often; drain well.
  • Add in beans, salt, pepper, and ground cumin (if desired) to the skillet; stir to mix.
  • Bring to a boil; lower heat, and simmer for 5 minutes, stir often.
  • Spoon 1/2 cup mixture onto the center of each tortilla.
  • Sprinkle with 2 generous tablespoons of cheese.
  • Roll up burrito-style, enclosing filling and folding ends under.
  • Place burritos seam side down in a greased 13x9 inch baking dish; cover with foil.
  • Bake at 350° for 10-12 minutes or until thoroughly heated.
  • Serve with salsa and sour cream.

  • Pat dry chicken breasts. Sprinkle both sides with a generous pinch of kosher salt and pepper. Grill on a greased grill pan over medium-high, 2-3 min per side or until just cooked through. Remove from heat for at least 5 minutes and dice the chicken.
  • In a large skillet, combine cooked rice, salsa, taco seasoning, corn, black beans, cilantro, onion/lime mixture, and chicken. Cook on medium-high to heat through, stirring frequently.
  • Serve with plenty of cheese sprinkled on top. Sprinkle extra cilantro on top if desired. Serve with remaining lime wedges.
