2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
3 teaspoons baking powder
¾ cup sour cream
1 ½ tablespoons water

Steps:

  • Mix together flour, salt, baking soda, and baking powder. Add sour cream and mix to a soft dough. Add additional water if necessary.
  • With well floured hands shape dough into round biscuit shapes. Bake at 450 degrees F (230 degrees C) for 12 minutes.

2 teaspoons baking powder
¾ teaspoon salt
⅛ teaspoon baking soda
3 tablespoons shortening
⅓ cup milk
⅓ cup sour cream

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine flour, baking powder, salt, and baking soda in a bowl; cut in shortening until mixture is crumbly. Add milk and sour cream until dough comes together.
  • Turn dough onto a floured work surface; knead 10 times. Roll out dough and cut into biscuits. Place biscuits on a baking sheet.
  • Bake in the preheated oven until biscuits are lightly browned, about 10 minutes.

Tender Sour Cream Sweet Dough image

This dough is extremely versatile. You can use it the same day or refrigerate for up to 3 days.It is rich, sweet, tender and easy to work with. I get compliments on it no matter what I use it for - cinnamon buns, filled braids, yeasted coffee cakes, whatever you can imagine. I sometimes use maple extract or orange extract instead of vanilla to match the filling.

4 tablespoons sugar
1/4 cup warm water (110 F-115 F)
1 (2 1/4 teaspoon) envelope active dry yeast
3 cups all-purpose flour
1 teaspoon salt
3/4 cup butter, cut into 1/2-inch cubes
2 large eggs
1/2 cup sour cream
1 teaspoon vanilla extract

Steps:

  • Dissolve 1 tbsp sugar in the warm water in a small bowl. Sprinkle the yeast over the water. Do not stir. Cover and let stand for 5 minutes. Stir briefly with a fork, cover and let stand for 2 to 3 minutes or until bubbly.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the 3 cups of flour, remaining 3 tablespoons of sugar, and the salt. Add the slightly firm butter and continue to mix until meal-size crumbs form, about 2 to 4 minutes depending upon the temperature of the butter.
  • Mix together the eggs, sour cream, and vanilla in a separate bowl. Add the sour cream mixture to the flour along with the dissolved yeast, and mix on low until a rough dough is formed. Dough will be soft and sticky. You may need to add a little flour to make it handle-able but add as little as possible or else the dough will become tough.
  • Lightly butter a medium bowl. Turn the dough into the prepared bowl, smoothing the top with lightly floured hands. Brush the top lightly with a small amount of softened butter. Cover and let rise for 45-60 minutes at room temperature. ***For later use: cover with plastic wrap and refrigerate for up to 3 days. When ready to use, let it come to room temperature and finish rising.

  • Place flour in a mixing bowl and add in sour cream. Stir with a spatula / wooden spoon first then finish by hand until the mixture comes together to form a dough. Don't over-mix.
  • Scrape dough onto a lightly floured counter and dust the top lightly with flour. Roll or simply pat into a disc of approximately 1-inch thickness. Cut into 4 or 6 pieces using a bench scraper (or a knife). Slide the bench scraper underneath each piece to transfer the biscuits onto the baking sheet. Space the biscuits at least 1.5 inches apart as they will rise during baking. Do work quickly otherwise the dough will start to get sticky.
  • Bake for 20 to 25 minutes until the top is golden-brown. Let cool on a wire rack. Serve warm or at room temperature.
