TAILGATE SAUSAGES
You'll need just a handful of ingredients to fix these tasty sandwiches. Fully cooked sausages are placed in buns with cheese and topped with giardiniera, then wrapped in foil so they're easy to transport and a breeze to grill. -Matthew Hass, Ellison Bay, Wisconsin

- In a bowl, combine giardiniera and sugar; set aside., Place cheese in buns; top with sausages and giardiniera mixture. Wrap individually in a double thickness of heavy-duty foil (about 12x10 in.). Grill, uncovered, over medium-hot heat for 8-10 minutes or until heated through and cheese is melted. Open foil carefully to allow steam to escape. If desired, serve with additional giardiniera.

TAILGATING SAUSAGES
This recipe is for tailgating....taking great food to the game, preferably eaten in the parking lot of the stadium, or under duress, eaten in a living room in front of a big screen tv. This was written for transporting to the game, so make adjustments as necessary for your presentation! Yummy good food! Cooking and prep time does not include time for cooking the sausages.

Steps:
- In a small food processor, combine the sugar and giardiniera; cover and process until blended.
- Make a slit lengthwise 3/4 of the way through the sausage, starting and stopping 1/2 inch from the end. Fill with the giardiniera mixture and to with the provolone cheese.
- Place sausages in the buns; wrap individually in a double thickness of heavy-duty foil. Place on a medium-hot grill in the parking lot of the stadium, and heat through until the cheese is melted, about 8 minutes.
- Top with mustard, ketchup, and mayo if desired.
AIR-FRYER TAILGATE SAUSAGES
Steps:
- Preheat air fryer to 350°. Place cheese in buns; top with sausages and giardiniera. Wrap individually in heavy-duty foil (about 12x10 in.). Place in a single layer in air fryer. Cook until heated through and cheese is melted, 8-10 minutes. Open foil carefully to allow steam to escape. If desired, serve with additional giardiniera.

Steps:
- In a large nonstick skillet, heat 1 tablespoon of the olive oil over medium heat.
- Slice the sausages in half lengthwise and add them to the skillet. Brown on each side for 5 to 7 minutes. Remove from the pan and keep warm.
- Heat the remaining olive oil in the same skillet.
- Add the peppers and cook for 2 minutes.
- Add the onion and continue cooking for 10 minutes, turning occasionally.
- Return the sausage to the pan, add the beer and cook for 5 minutes or until the sausages are completely done.
- Meanwhile, toast the rolls.
- Place 2 sausage halves on each toasted roll and top with the peppers and onions.
- Serve with Dijon mustard, if desired.
