Vegetable Tagine With Olives and Prunes image

This is a flavorful dish that can be adapted to whatever vegetables you have on hand It always gets rave reviews from my dinner guests. You can substitute or add parsnips, zucchini, rutabaga - whatever is handy. It was passed on to me from a vegan friend.

2 tablespoons olive oil
4 shallots, coarsely chopped
1 stalk celery, diced
2 garlic cloves, slivered
1 cinnamon stick
1 1/4 teaspoons paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon ground cardamom
1 teaspoon salt
1 teaspoon ground black pepper
1/8 teaspoon cayenne (or more to taste)
1 (32 ounce) can crushed tomatoes or 1 (32 ounce) can diced tomatoes
1/3 lb string bean
1 small butternut squash, peeled and cut into 1 inch cubes (or sweet potato)
1/2 head cauliflower, cut into florets
1/2 fennel bulb, trimmed and cut into 1/2 inch chunks
1 large carrot, peeled and sliced into 1/4 inch thick rounds
vegetable broth or water, as needed
1/4 teaspoon crushed saffron
1 cup canned chick-peas
1/2 cup whole kalamata olive
1/2 cup pitted prunes, diced
3 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350°F.
  • In a Dutch oven heat the olive oil over medium-low heat. Add the shallots, celery, garlic and cinnamon stick and cook, stirring, untill the shallots and celery are soft (about 7 minutes).
  • Add the paprika, cumin, coriander, cardamom, salt, black papper and cayenne. Continue cooking until the spices are fragrant, about 1 minute.
  • Stir in the tomatoes, string beans, squash or sweet potato, cauliflower, fennel and carrot. Add additional vegetable broth or water as needed to cover the vegetables. Addf the saffron and stir well.
  • Cover the pot and bake until the vegetables are tender, 40 to 45 minutes. About 5 minutes before the stew is done add the chickpeas, olives and prunes. Garnish with parsley just before serving.
  • Note: The type of tomatoes used will determine the amount of broth or water that will be needed. Crushed tomatoes require the addition of about 1 cup water. Stovetop cooking may require slightly more water.
  • The dish should be on the dry side, not soupy and the vegetables should be tender and not soggy.

Spicy Potato Tagine with Preserved Lemon and Olives image

2 pounds red potatoes
1 small onion, grated and squeezed dry (see Note), plus 1 medium onion, thinly sliced
3 tablespoons extra virgin olive oil
1/3 cup grated tomato (see Tips, below)
1/4 teaspoon ground ginger
1/4 teaspoon hot Hungarian paprika
Pinch of ground cumin
1 teaspoon crushed garlic
1 bay leaf
1/4 fresh lemon
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped fresh cilantro
Salt
4 to 5 dry saffron threads, crumbled
24 juicy purple or tan olives
1/2 preserved lemon

Steps:

  • 1. Peel the potatoes and thickly slice into a bowl of cold water.
  • 2. In heavy saucepan set over moderate heat, cook the grated onion in olive oil until melting, 3 to 4 minutes. Add the tomato, ginger, paprika, cumin, and garlic. Cook, stirring, for 2 more minutes.
  • 3. Drain the potatoes and add to the pan with the thinly sliced onion, the bay leaf, and the fresh lemon quarter. Toss to coat the potatoes, onion, and lemon quarter with the parsley, cilantro, and salt to taste. Add the saffron and 1 1/2 cups hot water and bring to a boil. Reduce the heat to very low and simmer until the potatoes are tender, about 40 minutes.
  • 4. Use a slotted spatula to transfer to a covered serving dish to keep warm. Discard the lemon. Add the olives to the liquid and boil until the pan juices are reduced to a thick sauce. Correct the seasoning, pour over the potatoes, and garnish with the preserved lemon.
  • Paula Wolfert shares her tips with Epicurious:
  • • To grate tomatoes: Halve and gently squeeze to remove the seeds. Grate the tomato halves, cut side facing the coarsest side of a box grater or flat shredder. You will be left with just the tomato skin on your hand; discard.
  • • Wolfert recommends cooking this dish the way Moroccans traditionally do: in a clay pot such as a Mexican cazuela or Moroccan tagine. The porous clay absorbs liquid from the dish, then slowly releases steam as it heats, which results in a more flavorful, juicy dish. Moroccan tagines are available at www.tagines.com. A note of warning: Clay pots are sensitive to rapid temperature changes, which can cause cracking. Don't put anything hot in a cold tagine or anything cold in a hot tagine. Consider investing in a flame-tamer or heat-diffuser (a metal plate that's placed over the burner) to distribute heat evenly.

1 tablespoon olive oil
2 skinless, boneless chicken breast halves - cut into chunks
½ onion, chopped
3 cloves garlic, minced
1 (15.5 ounce) can garbanzo beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes with juice
1 (14 ounce) can vegetable broth
1 (14 ounce) can quartered artichoke hearts, drained
1 carrot, peeled and chopped
½ cup sliced Mediterranean black olives
1 tablespoon white sugar
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon ground coriander
1 pinch cayenne pepper

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir chicken, onion, and garlic in hot oil until the chicken is no longer pink in the center, about 15 minutes.
  • Stir garbanzo beans, diced tomatoes with juice, vegetable broth, artichoke hearts, carrot, olives, sugar, lemon juice, salt, coriander, and cayenne pepper into the chicken mixture; bring to a boil, reduce heat to low, and simmer until vegetables are tender, about 30 minutes.

2 artichoke hearts, cut into quarters
1 cup olive oil
3 carrots, peeled and quartered
1 red bell pepper, seeded and quartered
1 onion, peeled and sliced
2 garlic cloves, sliced thinly
1 zucchini, halved and quartered
3 potatoes, peeled, cut to 1/4 in. slice
4 tomatoes, diced
1 1/2 C cooked chickpeas
1 T ground cumin
1 T coriander
1 T kosher salt
1 1/2 C vegetable broth
1/2 lb. green olives, pitted
juice of one lemon, or one preserved
1 bunch cilantro or mint, chopped
1/2 C golden raisins
(optional: cauliflower)

Steps:

  • Layer vegetables in tagine: lay down onions, garlic, artichoke, potatoes and chick peas in an even layer, then fan out carrots, bell peppers and zucchini in a pyramid. Sprinkle spices and tomatoes on top and then add vegetable stock. Drizzle olive oil all over. Slowly bring to simmer on low heat, cover and braise for approx 30 min. Add olives and raisins pushing them in between the veg. Sprinkle with lemon juice, cover and cook for approximately 10 min or until vegetables are tender. Sprinkle herbs on top.

  • Start by making the ras el hanout spice mix. Toast fennel, cumin and coriander seeds in a dry frying pan until fragrant. Cool, then grind in a mortar and pestle or spice grinder. Combine with remaining spices and store in a small jar. This makes enough spice mix for two tagines.
  • Preheat oven to 200°C fanbake. Cut eggplant, potatoes, carrot, tomato and cauliflower into even sized chunks, roughly 2-3cm.
  • Heat olive oil in a frying pan and cook shallots until golden and tender. Remove shallots from the pan, then use the remaining oil in the pan to cook the eggplant until beginning to brown on all sides.
  • While the shallots and eggplant are cooking, combine all cooking liquid ingredients in a saucepan and gently heat until just simmering and honey has dissolved.
