DEEP-DISH TACO SQUARES

- Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 8-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix until blended.
- In medium bowl, stir Bisquick mix and water until soft dough forms. Using fingers dipped in Bisquick mix, pat dough in bottom and 1/2 inch up sides of baking dish.
- In same bowl, mix sour cream, mayonnaise and cheese until blended. Layer beef mixture, tomato and chiles over dough; spoon sour cream mixture over top.
- Bake 25 to 30 minutes or until edges of dough are light golden brown.

TACO SQUARES CASSEROLE
This taco squares casserole dish is like a Southwestern version of lasagna. Layers of beef, tortillas, and cheese come together to form cheesy goodness. Plus, it's a pretty quick meal to put together, which makes it perfect for a weeknight meal!

- Preheat oven to 350°F. Grease a 9x13 baking dish and set aside.
- Add the ground beef to a 12-inch skillet over medium heat. Break into small pieces, then add the onion and salt. Cook until the meat is browned and the onion is soft, 8-10 minutes.
- Once the meat is cooked, with the skillet still over medium heat add the chili powder, cumin, garlic powder, and oregano. Stir and cook for 1 minute and add the tomatoes. Bring to a simmer and cook for 5 minutes on low. After 5 minutes, sprinkle in the flour and cook for 1 minute. Remove from the heat and set aside.
- If a gas stove is available, char the tortillas. Turn a burner on low and set a tortilla on for 30 seconds until slightly blackened. Then flip, repeat, and then remove from the flame. Charing is simply an optional step. If not available, move on to the assembly.
- In the prepared baking dish, add ½ cup of the meat mixture and spread it over the dish. Add 6 tortilla shells, slightly overlapping and covering the bottom of the baking dish. Add half of the meat mixture and spread evenly. Then sprinkle with half of the shredded cheese. Repeat one time with the remaining tortilla shells, meat mixture, and cheese. At this point, the casserole can be covered with plastic wrap and stored in the refrigerator for one day before baking.
- Bake in the preheated oven until warmed through, 30-40 minutes. Once baked, remove from the oven, cut into squares, and serve with favorite taco toppings!

- In a small bowl, stir together taco seasoning ingredients. Set aside.
- In a large skillet, heat the oil over medium-high heat. Saute the diced onion, stirring frequently, until softened, 4 to 5 minutes. Stir in 3-4 minced garlic cloves and cook for 30 to 60 seconds more.
- Add the ground beef and cook for 5-7 minutes, or until no longer pink, breaking up the meat with a wooden spoon or spatula as it browns. Drain off excess grease.
- Sprinkle 3-4 tablespoons of taco seasoning over the meat and stir until coated. Add in 1 cup of chicken/beef/vegetable broth and bring to a simmer. Reduce the heat to medium-low and simmer, uncovered, until the mixture has reduced some, about 5 minutes.
- Transfer cooked ground meat to a serving bowl and set out with other Mexican toppings in an assembly line to make your homemade taco bar!

CRUSTY CRESCENT TACO SQUARES

- 1. Brown meat and onion, drain. Stir in taco seasoning mix, beans, and tomato paste. Simmer 5 minutes.
- 2. Unroll dough into 4 rectangles. Place in ungreased 15 x 10 inch jelly roll pan, press over bottom and 1 inch up sides to form crust
- 3. Brush dough with oil and sprinkle with cornmeal. Spoon hot meat mixture over crust.
- 4. Bake at 375 for 25-30 minutes or until crust is golden brown. Sprinkle with cheese. Return to oven for 1-2 minutes until cheese melts.
- 5. Cut into squares and add toppings of lettuce, tomatoes, salsa, sour cream etc...

Created this recipe one day to serve for lunch with a friend, and also shared them with a neighbor. It was a big hit. These squares are easy to make and delicious!

- Preheat oven to 350 degrees. Coat a 9x12 inch oblong pan with non-stick cooking spray.
- Brown ground beef, then place in a colander to drain fat.
- In the same pan, cook onions, then add cooked ground beef, taco seasoning mix, garlic powder, tomato paste and water (half of the empty tomato paste can filled with water). Cook on medium heat, stirring occasionally until well combined and sauce is thickened, about 10 minutes. Season with salt and pepper to taste. Place taco beef in a colander to allow any excess sauce to drain (this will keep crust from getting soggy).
- Place crescent roll dough in prepared pan, and spread out with fingers to touch the sides. Press down on perforated edges to close them.
- Place drained taco beef on top of dough, then cover with shredded cheese.
- Bake for 20 to 25 minutes until cheese is melted and dough is lightly browned.
- Cut into squares and top each serving with diced tomatoes and a dollop of sour cream.
- Makes 6 generous servings.
- VARIATIONS: If desired, you can use light or fat free sour cream for the garnish. You can also substitute cheese with a package of shredded Mexican or Taco flavored cheese if you want.

- Press mixture in bottom of a lightly greased 12x8x2" baking dish.
- Bake at 375 degrees for 9 minutes.
- Cook ground beef, green pepper, and onion in a large skillet until meat is browned, stirring to crumble meat; drain well.
- Stir in tomato sauce; spoon over crust.

This is not my recipe. I found this in my recipe manager on my computer. I think it came with the program but it sounds good.

- Brown ground beef in skillet over medium heat until no pink remains.
- Drain fat and rinse, if desired.
- Add taco seasoning and prepare according to package directions (use 1/2 amount of water if using 1/2 pkg. seasoning).
- Unroll one tube of crescent rolls and place on bottom of 9" x 13" cake pan.
- Press seams together and spread out to cover bottom of pan.
- Bake in 375 degrees F oven until rolls just start to brown.
- Cover dough with hot beef mixture; then spread sour cream over beef using a teaspoon.
- Sprinkle with cheese and drizzle with salsa.
- Unroll second tube of crescent rolls and carefully spread out over top, pinching together seams where possible.
- Bake for 20 to 25 minutes or until top is golden brown.
- Let set 10 to 15 minutes, then cut into squares.
