- Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.

Steps:
- Wash, peel and cut up potatoes into fries or cubes.
- Toss with oil then with taco seasonings.
- Add to slightly greased pan and bake in 425°F oven 10 minutes, turn, 10 more minutes.
- These will likely come out better (and not need to be turned) if you place a cooling rack on/in the cookie sheet and then place the fries on the rack. The air gets right around the fries. (Tip learned from Rachael Ray).

- Preheat the oven to 425 degrees F (220 degrees C).
- In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
- Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

- Preheat oven to 450°F With aluminum foil or parchment paper, line a cookie sheet.
- In a medium bowl, combine sweet potatoes with olive oil and seasonings. Mix well to evenly coat potatoes. Place potato strips on the foil or parchment lined cookie sheet and leave space between strips for even baking.
- Bake for approximately 15 minutes or until potatoes become crispy. Turn strips every 5 to 7 minutes as needed. Serve immediately.

- SWEET POTATO FRIES: Prepare the fries according to package directions. Make sure not to overcrowd the fries on the pan, or they will steam instead of roast. While fries are baking, assemble the spices, prep the toppings and, finally, make the turkey taco meat.
- TURKEY TACO MEAT: When the fries are almost done baking (10-15 mins left), prepare the taco meat. Dice the onion and mince the garlic. Heat a large skillet on medium high heat. Add 1 tablespoon olive oil and once the oil is hot, add in the diced onion. Cook for 3-5 minutes or until soft and translucent. Add in the garlic and cook for 20-30 seconds. Add in all of the seasonings: 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and 1/2 tablespoon beef bouillon powder. Stir the spices until fragrant, about 30 seconds. Nothing should be burning; reduce the heat if needed.
- TACO MEAT CONT.: Increase the heat to high and add in the ground turkey. Crumble the meat into small pieces and cook until no longer pink (but not cooked through all the way), about 5 minutes. Add in the tomato sauce and scrape the bottom of the pan to release any browned bits. Let simmer for 3-4 minutes and then remove from heat.
- ASSEMBLY: Divide the fries evenly between 4 plates (See Note 1 if serving this as an appetizer). Add equal amounts of the turkey taco meat and then sprinkle cheese on top. The taco meat and fries should be hot enough to melt the cheese. Immediately add toppings of choice. Our favorites are a big scoop of sour cream, ripe sliced avocado (or guacamole), a little pico, fresh cilantro, and lots of fresh lime juice. If you like some spice add in some jalapeños or hot sauce. Enjoy while hot and melty. We use forks since the meat and toppings do tend to fall off the fries.
