MICHELADA CHICKEN TACOS

Drinks and dinner all in one! These michelada-infused tacos bring happy hour to you-in less than an hour.

1/4 cup sour cream
2 tablespoons mayonnaise
2 tablespoons finely chopped fresh cilantro leaves
2 cloves garlic, finely chopped
1 tablespoon lime juice
2 cups shredded green cabbage
1/2 cup Mexican beer
1 tablespoon hot sauce
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon Muir Glen™ organic tomato paste (from 8-oz can)
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
2 tablespoons vegetable oil
1 package (20 oz) boneless skinless chicken thighs, cut in 1-inch pieces
8 Old El Paso™ Soft Tortilla Bowls, heated as directed on box
1/2 cup diced tomato
1/4 cup crumbled queso fresco cheese
1/4 cup thinly sliced green onions

Steps:

  • In medium bowl, mix sour cream, mayonnaise, cilantro, garlic and lime juice. Add cabbage; toss to coat.
  • In medium bowl, beat beer, hot sauce, soy sauce, honey, tomato paste and taco seasoning mix with whisk.
  • In 12-inch skillet, heat oil over medium-high heat. Add chicken; cook 4 to 6 minutes on first side, without moving, until chicken is browned on bottom and releases easily from pan. Stir chicken; stir in beer mixture. Heat to boiling. Reduce heat to low; cook 6 to 9 minutes, stirring occasionally, until sauce thickens and chicken is no longer pink in center.
  • Divide Creamy Cabbage Slaw among bowls. Spoon chicken mixture into bowls; top with remaining ingredients.

MICHELADA FLANK STEAK TACOS

The flavors of Mexican michelada-the refreshing spiced beer drink-go perfectly with chile-rubbed flank steak and tangy pilsner-spiked pico de gallo in these crave-worthy tacos. For maximum flavor, be sure to marinate the steak for at least 1 hour.

1 cup (8 ounces) pilsner beer
One 8-ounce can tomato sauce
1/4 cup vegetable oil
1 lime, quartered
One 2-pound flank steak
Kosher salt and freshly ground black pepper
1 pint cherry tomatoes, halved or quartered, depending on size
1/4 cup (2 ounces) pilsner beer
1/4 cup finely chopped fresh cilantro
1/4 cup finely chopped red onion
1 tablespoon lime juice
1 tablespoon hot sauce
6 to 8 radishes, cut into small wedges (about same size as the halved cherry tomatoes)
2 jalapenos, seeded and finely chopped
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
3 tablespoons chile-lime seasoning (I like Tajin)
1 tablespoon ancho chile powder
Zest of 2 limes
12 to 18 warmed corn or flour tortillas

Steps:

  • For the marinade: Add the beer, tomato sauce and oil to a large resealable bag. Squeeze the limes in, then drop them in the bag. Add the steak, sprinkle with salt and pepper and seal. Marinate at room temperature for 1 to 2 hours. Remove the steak from the bag and discard the contents. Pat the steak dry on both sides and sprinkle lightly with more salt and pepper.
  • For the pico de gallo: Add the tomatoes, beer, cilantro, onion, lime juice, hot sauce, radishes, jalapenos and a pinch of salt and pepper to a large bowl. Drizzle with some olive oil, then toss and let rest at room temperature until ready to use.
  • For the rub: Preheat the grill of a smart countertop grill to high heat. Combine the chile-lime seasoning, chile powder and zest in a small bowl. Sprinkle the seasoning all over the steak and rub into both sides. Place the steak on the grill, cover and cook until the internal temperature reaches 120 degrees F for medium-rare, flipping halfway through, about 8 minutes total. Remove the steak to a plate, cover loosely with aluminum foil and let rest for 10 minutes.
  • Thinly slice the steak against the grain. Make tacos with warmed tortillas and the prepared pico de gallo.

Kosher salt, for rimming the glass
Mexican fruit seasoning powder, such as Tajin, for rimming the glass
Juice of 1/2 lime
3 dashes Worcestershire sauce
1 dash liquid seasoning, such as Maggi, optional
1/2 tablespoon hot sauce, such as Valentina
1 to 2 turns fresh cracked black pepper
1 Mexican beer, ice cold, such as Tecate or Negra Modelo

Steps:

  • Combine equal parts of the kosher salt and Mexican seasoning powder mix on a flat plate. Rim the edge of the glass with a little bit of the lime juice, and then dip in the seasoning to coat the edge of the glass. Combine the remaining lime juice, Worcestershire, liquid seasoning if using, hot sauce and black pepper in a tall glass. Stir and top off with the ice cold Mexican beer.
