Here's what you need: oil, chicken breast, salt, pepper, taco seasoning, water, egg roll wrappers, tomato, onion, cheese, egg wash, vegetable oil, salsa

Number Of Ingredients 13

2 teaspoons oil
1 lb chicken breast
1 teaspoon salt
1 teaspoon pepper
2 tablespoons taco seasoning, may be more or less depending on what you are using
½ cup water
6 egg roll wrappers
tomato, diced
onion, diced
cheese, shredded/crumbled
egg wash
vegetable oil, for frying
salsa, for dipping

Steps:

  • Heat oil, add chicken, 1 tsp salt, and 1 tsp pepper. Cook until 60% done.
  • Add the taco seasoning, stir to incorporate. Add water and cook until chicken is done.
  • Fill egg roll wrapper with cooked chicken, tomatoes, onions and cheese or whatever ingredients you like.
  • Roll and seal with egg wash.
  • Fry until golden brown.
  • Serve with salsa.
  • Enjoy!

2 large eggs
1 teaspoon olive oil
¼ teaspoon kosher salt
⅛ teaspoon black pepper
2 small corn tortillas
2 tablespoons canned black bean, drained and rinsed
¼ cup pico de gallo
2 tablespoons fresh cilantro, chopped

Steps:

  • Crack the eggs into a small bowl and whisk to combine.
  • Heat the olive oil in a medium nonstick pan over medium heat until shimmering and add the beaten eggs, salt, and pepper. Using a rubber spatula, stir the eggs often until firm, roughly 3 minutes.
  • Divide the eggs between the tortillas.
  • Top each taco with pico de gallo, black beans, and cilantro.
  • Enjoy!

They have a yummy taco flavor. The dipping sauce is cool and creamy. Do not skip the dipping sauce! It's so good you might find yourself...

1 pkg egg roll wrappers
1 lb ground beef
1 pkg taco seasoning
1 c shredded cheddar cheese
1 small onion, chopped
pico de gallo (recipe following)
egg wash (I used 1 egg plus 1 Tbsp water)
sour cream or cilantro dip (recipe following)
CILANTRO DIP
2 fresh jalapenos, deseeded
1/3 c fresh cilantro
1/2 c mayonaise
1/2 c sour cream
1/2 c buttermilk
1/3 c green tomatilla salsa
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
couple shakes of black pepper
PICO DE GALLO
3/4 lb tomatoes, deseeded, chopped
1/3 c chopped fresh cilantro
1/4 c finely chopped onion
1 small jalapeno, finely chopped
1 Tbsp fresh lime juice
1/2 tsp salt

Steps:

  • 1. Brown hamburger and onion until brown. Add taco seasoning and follow directions on package.
  • 2. Lay out egg roll wrapper in a diamond shape. Add a spoonful of meat mixture, a little bit of pico de gallo, and then cheese. Use egg mixture with fingers around edge of egg roll wrap. Roll up like a closed burrito. There are detailed directions on how to roll these on the back of the package of egg rolls.
  • 3. Heat an inch or two of oil in a pan. Add a few rolls and brown. Turn over and brown the other side. Drain on paper towels.
  • 4. To make cilantro dip, add the jalapeno in blender or food processor. Pulse until chopped well. Add cilantro and pulse again until chopped. Then add remaining ingredients.
  • 5. To make the pico, mix everything together in a bowl. Don't make this the night before, it gets too wet.

3.5 oz glass noodle, 1 package
hot water, for soaking
2 cups shredded cabbage
1 cup shredded carrot
½ cup scallions, chopped
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
1 teaspoon black pepper
3 tablespoons soy sauce
1 tablespoon sesame oil
12 wheat egg roll wrappers
1 tablespoon water, for sealing
vegetable oil, for frying

Steps:

  • Place the glass noodles in a large bowl and add enough hot water to cover. Let sit for 10 minutes, until softened. Drain the noodles and chop into ½-inch (1-cm) pieces.
  • In a large bowl, mix together the chopped glass noodles, cabbage, carrots, scallions, onion powder, garlic powder, salt, pepper, soy sauce, and sesame oil. Toss until well combined.
  • Place a spring roll wrapper on a clean work surface and add 3 tablespoons of filling to the center. Fold the bottom of the wrapper over the filling, then fold in the sides and roll. Lightly wet the exposed with your fingertip and continue rolling to seal the egg roll. Repeat with the remaining wrappers and filling.
  • Fill a deep skillet with ½ inch (1 cm) of vegetable oil and heat over medium-high heat until the oil reaches 325˚F(160˚C). Fry the egg rolls in batches of 1-2 at a time for 2½- 3 minutes on each side, until crispy and golden brown. Remove from oil and drain on a wire rack or plate lined with paper towels to absorb any extra oil.
  • Enjoy!

  • Pre-heat the oven to 400 degrees F. Prepare a baking sheet with a silicon baking mat or parchment paper lining.
  • Cook the ground beef and onion in a skillet over medium-high heat. Crumble the beef with a spatula as it cooks. When done, drain any excess oil. Add the taco seasoning and water and stir well to combine. Remove from heat.
  • Work with one wrapper at a time. Add approximately 1 tbsp of refried beans, meat mixture, then shredded cheese to the edge of the wrapper nearest to you, leaving about an inch of wrapper exposed.
  • Fold the left and right sides into the center. Then roll away from you to form a tight roll. Brush the loose ends with a bit of water to stick it down.
